and their essence is not wasted, as when they are boiled in water. Put about 2 pints of shelled peas in casserole with the heart of a large lettuce, a few small pickling onions, It tab
tablespoonful of sugar and 2 water, 4 lb. of butter, and season with salt and pepper. Cover and bring to the boil the lettuce will supply most of the liquid. Slimer for 5 minutes. Serve on a hot dish with the lettuce divided in pieces, and garnish with the little.onions.
