URING close and sultry weather, it's nice to come home after a hot day at work to a cool house. But real cool- ness inside is a big problem, especially in those bouses which have no gardens and which may be shut in by high walls or buildings,

Clear Jelly

Ingredients, fib, gooseberries, water

Wash the gueberries but do not top and tail. Put them into a preserving jan, cover with water and simmer Hently until tender and mashed; if the water boils away, add a little more.

Strain through a jelly bag, allowing to drip for several hours, put the pulp from the jelly bag into a pan with a pint of water, bring to the boil and almmer for 20 minutes, atirring all the time, then bring to the boll again. The reason for the second bolling in to in- crease the extract, and make a more economical preserve.

Put the two extracts together and welgh. put into the pan and bring to the boil, continue to boil for 10 minules, add an equal weight of sugar, and boll and stir for 10 minutes..

Test a little on a cold plate for jelly- ing. As soon as it sets, skim and turn into dry, clean fars and cover im- mediately.
