A wholesome dish, very simple to prepare and delicious to eat, is made by cooking half a pint of pens with n Spanish onion and a small lettuce in a gill of milk in a double sauce- pan.
Pour the milk, boiling, into the inner section of the saucepan, add the onion, chopped, and the peas, and cover closely.
Bring the water In the tower acc- tion of the pan to the boil, then turn down the gas and leave for half an hour. Add the shredded lettuce to the other ingredients, and cook for a further half hour. Then pour the whole contents of the pan into a steve over a basin.
Turn the quid from the basin into a gill measure and add water or milk to make it up to a gill again some will have been absorbed by the vegetables.
Blend half an ounce of flour with a little water, stir it into the liquid. and boil up, adding a small piece of butter. Pour over
