SPINACH SOUFFLE

POIL a pound and a half of

carefully washed spinach for twenty minutes. Then put it into cold water, and afterwards aquecze out all the moisture possible and pass the spinach through a sieve.

Melt a walnut of butter in a saucepan, put in the spinach, season with pepper, and heat through.

Stir in gradually the yolks of two eggs, and finally the whip. ped whites which have been mized with a pill of whipped cream.

Allow the mixture to cool, tie some paper round the top of a soufle dish, put in the mixture, and bake for half an hour.

Spinach As An Ice

Cooks have in their turn pressed their appreciation of this enterprise in kitchen gardening by concentrating so much on spinach cookery that this has now become a most Important branch of that cookery which adds dictinction catering. One discovery that has been made by scores of women, who each thinks it is her own iden, is the practical ald of the mincer in the preparation of spinach. A specially selected re- cipe denling with this aspect, given below lins been chosen because of its concise and clear directions.

TAKE 1 pint of cooked and steved

spinach, make a jelly in the or- dinary way (lemon flavour would be suitable), using pint of spinach, stir well, season to taste with salt and capenne pepper. Mould and set.

This makes art excellent supper dish. Serve the jelly whole or cut up in chunks on a bed of crisp let- tuce, decorate with tomatoes, cu- cumber, the grated yolk of cap. The Jelly also make a good luncheon dish served with a macedoine of young vegetables.

An unsweetened jelly is, of course, required for this dish.

Creamed spinach sufficient for four persons can be prepared in a few minutes. Simply wash the spinach und pass R unstalked through the mincer. The stalks and veins are cjected at the back of the mincer and the pulp and juice emerge from the front, and can be poured straight in- to the saucepan. Bring this to the boll, summer for a few minutes to drive off superfluous liquid, and then add crearn to tuste,

Stir in three yolks of egg, one at a time; put the pan over the fire and stir briskly til the sauce thickens, Remove und whisk till nearly cold. Add the sleved spinuch and, lastly, Lour whites of egg beaten stiff. Season well,

1 large fresh mackerel, 1 pickled onion (coar- sely grated), butter, salt, pepper and paprika.

Wash spinach well, strip from con- tre stalks and boil with one tea- spoonful salt for about 20 minutes in saucepan with only sufficient wa- ter to

GOOD LUNCHEON DISH TAKE one pound of whole leaf spinach. Cook it in the usual way, with very little water; drain and chop. Best four eggs, add four dessertspoonfuls of water, and the chopped spinach. Mix thoroughly,
