AFTER THE DAY OUT.

YOMING home from an out- ing it is pleasant to find there's a salad for supper. Not merely a salad to take the place of a vegetable, but one that la a meal in itself.

You can make 'salads several hours before they are required. If kept in a cold, länder they will be ready to serve when wanted.

First, some hints on making salads: Never uso a steel knife when deal- ing with salad ingredients. Shred them with your fingers or use a aliver knife and fork.

Ingredients: Allow portion of cheese for each person. A few chopped spring onions or chives, salt, pepper and a little mustard, 1 small lettuce, 1 chopped hard-boiled egg.

Mash cach portion of cheese with a tablespoonful of salad cream, add the chopped onions or chives, salt, pepper and the made mustard,

Form into balls and arrange on crisp lettuce. Top with mayonnaise, and sprinkle with chopped cgg.

Cooked Vegetable

Use up the left-overs this way, Ingredients: 1 cupful of cooked french beans (scarlet runners or dwarf beans) a breakfastcupful of cold sliced potato, 3 teaspoonfuls of chopped parsley, 4 chopped spring oniona chives to add flavour, salad dressing.

Cut the beans into diamond shopes, lee the potatoes. Beason the vege- tables separately with salad dressing. Put the beans in the centre of a dish, surround with potatoes. Sprinkle with chives and parsley, finish.with a border of sliced carrols.
