L'in warm weather, but it is some

times dimcult to think of new, and sultable dishes which are tasty and nourishing as well.

An economical and delicious dish is fellled tinned salmon. First dis- solve half an ounce of leat gelatine of water. in three tablespoonfuls Keep the gas low, and stir continu- ally until the gelatine has melted. Add a pinch of powdered mace, three cayenne pepper, salt, and, desert spoonfuls of vinegar,
