Properly cooked, spring greens are delicious. So here my recipe for Misa Greens' sake! Allo:0 21b. greens for d or 6 persons. Wash them well, cut off the thick stalks and any decayed or blemished leaves.
As they are washed throw them into u pan of cold water, toith a little winegar in it, and let them remain in this about half an hour.
Rinse 10ell, and put into a saucepan of fast- boiling water, salted with one dessertspoonful of
salt to every quart
of water.
Keep the lid on the pan until the water bolls apain, then re- move it and let the greens boil rapidly with the lid of, until they are tender.

Squah Pics
Squab ples are quickly made as well as making a pleasant charge. They can be served hot or cold.
The ingredients are: 1)b. neck af mution. 2 onions, b. apples, seasoning, two tablespoonfuls of
nushroom ketchup.
Divide the mutton into cutlets and arrange on a buttered dish, aprinkle with pepper and suit and a little chopped mint, then cover with sliced onions and apples.
Pour over pint brown gravy. then cook gently for 14 hours.
Remove the dish from the oven. take out the bones and mix well. Line some small patty tins with the short crust, balt All with the meat mixture, then bake in a hot oven for 16 minutes. mark 8.
Cornish Pasties

Cornish pastles can be made the day before, and reheated or served cold with chutney or pickles Cornish renders will have their own recipe. 1 expect. but here is one given to me whille on holidny last year. Ingredients:
shortcrust, jib, minced steak (cold mbat could be used up for these), three medium-sized raw potatoes, -tea- spoonful of inely chopped onton, sait, pepper and a MUe cold water.
Method: Dice the peeled potatoes, and mix with the minced meat, olon and seasoning, adding a Httle water to bind.
Roll the shorterust out thinly, and cut into rounds with a too plate. Put a tablespoonfal of the mixture in the centre, dump the edges, fold over and pinch together.
Brush the tops with egg yolk, pince on a baking streel, and bake in a fairly hot oven for one hour. Regulo mark 0.
Sardine Eggs
Here quick savoury that most members of the family will enjoy.
Hard boil as many cugs as required. cover with cold water and remove the shells, and cut the eggs lengthwise.
Remove the yolka nd pound each separately with a boned sardine, a nut of butter, pepper and snit, and a pinch of chopped parsley.
Fill the eggs with the mixture and serve on a lettuce leaf, garnished with rings of skinned tomatoes and clipped parsley. Serve with rolla and butter.
Salmon Surprise
A tin of salmon is a good stand-by for off days, and makes a popular dish.
Remove the skin and bones from the animon and flake the fsh. Add a little chopped parsley, a few drops of lemon juice, salt and pepper, the yolks of iwo eggs and a cupful of white muce,
Pour into a greased dish, fold in the stiffly whisked egg whites, then bake $ Alow oven for half an hour. Regulo mark 3.

WE are supposed to learn
how to wield an effec- tive toothbrush in nursery days, but I doubt if many of us learn to do so really ade- quately. For perfectly clean teeth are generally healthy teeth, and how many of us can flatter ourselves that the condition of our teeth leaves nothing to be de- sired?
Anyway, we all seem to lose them, sooner or later, and our dentists tell us that if we cleaned them properly and gave them the thoughtful care which -heaven knows they deserve, we could put off the evil day for many, many years.
Even apparently perfect teeth, however, are not always all they seem, and should be looked over by a professional eye at regular and fairly fre- quent intervals. Maybe the dentist will find that it is un- necessary to do anything to them except to give them a treatment with his magic little circular brush, thereby scaling off all the tartar deposits, and making them look pearly white.

Semolina makes a delicious change. and is most suitable for invalids and delicate children,
Ingredients: 2oz. sugar, 202, nemo- na pint mik, 1 tablespoonful of shredded suet,
Method: Put the milk into a sauce- pan und bring to the bull, sift in the semolina, stirring with the other hand, add the sugar, såll, and flavouring and the suct. Pour into a well-grensed ple dish and bake half an hour in a moderate oven. Bay leaf or lemon peel can be added to the milk for flavouring.
