Reconstituted Milk
To the Editor.

Sir, With reference to the report in your issue of the 30th. March, dealing with the meeting of the Urban Council, wherein views and opimons besides By-lawa pertaining to Reconstituted Milk were given con- siderable publicity. In order to cor- reet wrong Impressions which may be gathered by the public as a result of the statements made at that meet- ing by the Chairman of the Urban Council, wo shall be pleased if you will kindly give this letter the same full publicity.
1. In reply to the Chairman's re- mark that "Reconstituted Milk is not Milk'," we say that Reconstituted is "Milk." Milk undergoes Mlik physical changes by the separation of Into the milk fat which is turned butter and by a system of evapora- tion the solids-not-fat are turned into skinned milk 05 powder known powder. The water content of fresh cow's milk or raw milk is ordinary water having no features which are different.

The butter, milk powder and water in their correct proportions are re- combined by a process of emulsifying und homogenising whereby the milk In order regains its original form. to differentiate between milk formed and fresh cow's milk or raw milk it is generally referred to as Reconstituted Milk. This is rightly 200 so, in order that the publie may know what they are buying as it is distinguish impossible for them to between the two milks except by name. At this point we should like to emphasise that our company have endeavoured to inter at no time either by advertisement or otherwise than that our product was other Reconstituted Milk. We are
