POTATOES roasted slowly in their

ckins are most easily digested. Rub the dirt off with a saucepan scourer, sluice them under the tap, prick them here and there with a skewer to allow the steam to escape and put them into a cool oven wet. They will then be deliciously mealy.

If they are cut in half longways and sprinkled with grated cheese, which can be toasted golden brown under the grill, they make a tasty dish for lunch or supper.

When potatoes are bolled in the ordinary way use as little water as possible and after straining them shake them vigorously in an open doorway. Then put the pan, with the lid off, at the side of the stove for a few minutes and shake occa- sionally. The potatoes will be white and mealy.

Fried and roasted potatoes are not necessarily as Indigestible as many people suppose. Use as little fat as possible, dredge them in flour and toke care to have them well cooked through, without being too hard on the outside.

Raw potatoes, thinly peeled, have a natural under-skin that prevents fat from soaking in. It is best, therefore, when cooking for people with defiente digestions to fry or roast potatoes in their raw state rather than to boil them first.
