DEQUIRED: One
Rcelery, one oz. butter, two
ozs. flour, one pint of white stock, one pint of milit
Method: Clean celery and cut into two-inch pieces, using stalks nearly up to the loaves, olmmer slowly in white stock with added salt and pepper for 30 minutes, Melt butter in saucepan and stir in the dour, then very slowly add milk Stir until Bour has thickened smooth- ly. When celery is quite soft rub through coarse wire nieve and mix with stock and thickened milk.
Potato and Cheese Pie
(Irish Recipe)
ПEQUIRED: Half-pint milk, one pound potatoes, two ozs. four, four ozs. grated cheese, two or three rashers of bacon.
Method: Cut some peeled pata- toca In half-inch thick alleen and three-quarters fill a greased pie dish with them. Make a simple white sauce with half pint milk, two table- spoonfuls of flour, pepper, salt and small knob of butter, then add four ozs, grated cheese to sauce and pour it over the potatoes.
Top with two or three thin slices of bacon and bake in a moderate oven for three-quarters of an hour.

DEQUIRED: One pound self- raising flour, two ozs. but- ter, one oz. castor sugar, pinch of calt.
Method: Rub butter into flour, mix in sugar and salt, very slowly atir in milk and work into a smooth dough. Form into small shapes and bake quickly for 30 minutes. When half done brush milk over scones to glaze.
