HERE are a few sugges

tions for small savouries for an informal supper party.

To make fish shapes you ro quire one pound of cooked fish, half a pint of thick white sauce, four tablespoonfuls of salad ercam, two teaspoonfuls of an- chovy essence, half a pint of aspic felly.

Flake the fish, mix it with the sauce, salad cream and anchovy essence and stir in the aspic jelly when cold, but not setting.

Season to taste, All small wet moulds with the mixture and leave in a cool place until quite firm. Turn out and garnish with water- cress.

White fish, smoked fish, fresh or

tinned salmon, lobster, crab, &c., can

all be used for these shapes.

SAVOURY HORNS

Have ready some long strips of puff

pastry, about one inch wide and an eight of an inch thick,

Grease some cone-shaped moulds and wind the pastry round them, starting at the point and letting each plece overlap alightly. If moulds are not available, short pieces of amooth round stick, about one inch in diameter, can be used.

Brush the pastry with beaten egg and bake in a hot oven until brown (about twenty minuico.) When done, allow them to stand a few min- utes before removing the moulds. When cold, all with a savoury fish or meat mixture, made as follows:-

Chopped parsley, piquant sauce,*: herbs, hard bolled can, chopped onlon, capers. &c., are good flavour- ings for this,

STUFFED EGGS

Boil the required number of eggs Ull they are hard, and cut them in two. Remove the yolks and pound them with one of the following:- Anchovy essence, minced hom or tongue, uavoury paste, pounded sur- dines, cooked sh, tinned salmon, lobster, crab, &c., cheese (lavoured with a little made mustard.)

Allow one small dessertspoonful of meat or fish to one egg. When the two ingredients are thoroughly mix- ed, season to taste and molsten with

melted butter or salad cream.
