OT for dinner, cold for supper. Aren't ples popu- lar-especially in winter? They're substantial, tasty, and full of good nourishment.
I serve so many different ples that there are probably soveral of these recipes of mine which you have not tried yet.
I get lots of practice at making this raised pio for my tolk.
Ingredients: 1. flour, Goz. lard,
I pint water, teaspoonful anit.
Put the tard and water into a sauce. pan and bring to the boil, then stir it into the flour and salt, and knend to a light dough. Place the dough on a floured board, allow it to stand for five minutes, then knead until a light dough is formed.
Blape the greater portion of the dough with the bands into a hollow ple. The pastry must be kept warm- or it will crack. When sufficiently rained, fill with acasone meat.
Wet the edges with cold water and cover with a lid made from the remain. ing plece at crust. Brush over with beaten egg, decorate with leaves and diamonde, and brush the decorations with beaten egg.

Steak & Kidney
A FAMILY favourite in winter. Ingredi ents; box plain flour, 20%, cornflour, 60%. fal (Jos, margaring and Joz, lard), à teaspoonful salt, water, a squeeze of lemon juice.
Sieve the flour, corn- four and walk into a bowl and chop the fat into pieces the size of a - walnut. Mix to a fairly soft dough with cold water and lemon juice. then roll into a strip about three times as long as it is broad.
Fold in three, turn so that the folded edges are to the alde, and roll again. Fold in three, turn and roll. Allow the pastry to stand for an hour before using.
For the Alling use: id, steak, b. kidney, jos patent cornflour. Cut the meat into neat strips and the kidney into small pieces. Season the cornflour and with it coat each strip of steak. Put ou coch a piece of kidney and roll up. Arrange the meat rolls in a pic dish and sprinkic over the rest of the seasoned cornßour. Add water or stock and cover with pastry.
Brush over with a little milk, make a vent in the crust, bake about 1 to 11⁄2 hours, reducing the heat after the Arat 15 minutes so that pastry is not over-cooked.

Half fit the pies, moisten the edges and place on the tops. Pinch the edica well together, then bake in a fairly hat oven for half an hour. •
Cheese Turnovers
Tasty hot supper wack. Ingredients: 4oz grated cheese, Goz. daky pastry, or pelato pastry. 1oz butter, salt, pepper, a beaten egg.
Melt the butter in a pun, nut the grated cheese and slir till melted, then add most of the beaten CER. Season to taste, and cook and stir over a gentle beat until the mixture thickens, then allow to cool.
Roll out the pastry, cut into rounds with a large cutter or saucer, place two teaspoonful of the mixture on each. wet the edges, fold over and press the edges together.
Hrush over with beaten egn. and bake for 16 to 20 minutes in a hot oven. Before serving sprinkle with inely chopped parsley.
