WINTER SALADS

TN winter, when the ordinary salad vegetables are expensivo and scarce, the housewife la apt to omit salads from her menu, not reallsing that many tasty dishes miny be made with the help of rold cooked vege- inbica.

These are not only delightful in themselves, but health-giving and economical, да many small left- overs which would otherwise be thrown out may be utilised for the salad. Here are a few suggestions:-

Boiled rice, chopped celery (un- coolted), mixed with a little mayon- naise, garnished with small balls of cream cheese, flavoured and coloured with tomato sauce, and the whole lightly sprinkled with chopped pars- ley: haricot beans, finely chopped onions, and beetroot, sprinkled with French dressing: pocetroot, all chopped parsley, and served with a bolled carrot turn
