Caramel Mousse With Chocolate

Put into a casserole Tozs, chocolate, 1⁄41⁄2lb. castor sugar, and a breakfastcupful of milk. When the mixture begins “to boil;add-a-piece of butter the size of a nut and stir con-

stantly. Let it cook for twenty minutes.

Put a few drops of the mixture into a glass of cold water. If the drops set in a carumel, the sweet is cooked. Grease a mould and pour the mixture in. Let it get quite cold before turning it out.

Orange Cakes

Ingredients: 12028. of flour, Voz, of sugar, 31⁄2028. of powdered almonds, Loz. of butter, 3 whites of egg, 3 rinds of preserved oranges, finely chopped.

Melt the butter and stir all the ingredients together for five or six minutes. Pour out the mixture on to a buttered tin, in blobs a bit bigger than a five-shilling picce, leaving plenty of space between them.

Leave in a medium oven for about ten minutes; take them off the tin as soon as they are cooked.
