Hot Savory Souffles

Fish Souffle

Ingredients: 1 gill white sauce, 2 exke, salt and cayenne, squeeze of lemon juice, some white cooked fish, about 1 cupful.

Method: Remove bones and skin from the flsh and break it up finely. Make a thick sauce by melting dessertspoon butter in saucepan, add 1 dessertspoon of Hour, mix well, then add 1 gill milk, Cook well for 3 minutes then add beaten egg yolks slowly, heating well all the time: Stir over fire for 1 minute without bolling, add the fish, and when fairly cool, fold in the stiffy-benten whites, Pour into prepared mould cover and steam, according to instructions for about 30 minutes. Turn on to n hot dish, and send to dable immediately with a suitable fish sauce such ร oyster or anchovy sauce.

Cheese Souffle

Ingredients: 214 tablespoons flour, dry 3 CRAS. 114 pints milk, 4oza. grated cheese, sal! and cayenne.

Method: Beat yolks of eggs well, add a very little of the milk, and add the cheese to this. Mix the flour to a smooth paste with a litle of He milk, then heat the remainder of the milk, Sür the flour moistened into the hot milk, and cook until the mixture is smooth and creamy and the four quite cooked." Gradually add the egg and cheese mixture, slir- ring all the time. Cook without boil- ing until the cheese is fully melted. Remove from the fire and allow to cool. Fold the stiffly beaten whites of eggs into the mixture. Pound into la prepared mould and stand in a dish of hot water. Blake in a fairly Serve immediately it is hol oven. cooked.

Allow to cool, then fold in the stiffly beaten whites. Pour into individual moulds, half filling them, Stand in a dish of water and bake in a fairly quick oven 10 minutes. Serve at once.
