Cover with a pineapple jelly dis- solved in the pineapple syrup made up to pint with hot water. Pour half this over the sponge cakes and leave to tet. Place on top the shredded pine- apple and a few blanched almonds. then pour over the remaining jelly.

When set, turn out and decorate with withi shredded pineapple, sprinkle chopped platachio nuts and serve 'with whipped cream.

Cherry Cream

Örnamental fruit jelly for the party. Ingredients: 1 packet of greengage or limo jelly, one tin of cherries, 4oz. sugar, los gelatino, the juice of a lemon and pint cream of custard. Blake the lime Jelly, leave to sel Then cut the cherries futo halves: Dissolve the sugar and gelatino. In a

2oz, chocolate, 11oz patent eðrnítour, a few drops of, vanilla cesenez.

Break up the chocciate and dissolve it in a little warm milk. Mix the com- flour to a smooth phate wh ittle cold milk, then bring the rest of the milk to the boil and pour on the blended cornflour. Return to the pan, add the dissolved chocolate, then stir and boll for six minutes.

Add the sugar and vanilla essence, then pour the mixture into the wet rabbit, mould. Stand the montd up- right by the help of the two pieces of aluminium, then stand to a very fold place until set.

Turn out on a dish and serve with whipped cream.

With Greengages

Fill a wet hollow centre mould with a pint of cornflour, and lenye to set. Turn out into a glass dish and Alf the centre with bottled greengageɔ.
