SOME GREEN PEA RECIPES
Recently I promised some more green pea reelpes. Here are some I have found particularly popular,
Green Peas Bonne Femme
Cut a quarter of a pound of atrenky bacon or pickled pork (frat blanched in bolling water) into small! dice and fry them in butter with u dozen button onions. Take out the allops and bacon and make a roux with the butter und half an ounce of Bour. Cook the roux for a minuto or two, moisten it with half a pint of stock and let it boil. Into this put a quart of freshly-shelled green peas, the onions and the bucon, with a small bunch of parsley, and cook fairly fast so that by the time the peas are done the sauce is reduced! by nearly half,
Green Peas Flamande
Cook half a pound of nice young carrots as if you were going to glaze them, and when they are half-done add two-thirds of a pint of freshly- sholled green peus. Finish cooking them together, and just before you dish them up take the pan from the Are and shake in a title butter.
Green Peas a la Poulette
Cook a pint of shelled peas in the usual way, and when they are done strain them well and put them into A яpucepan with salt, pepper, a pinch of sugar and a couple of tablespoon- fuls of butter, Take two tablespoon- fuls of thicit cream and mix the yolk of eng with it; pour this through a fine strainer into the pean, put the .pan containing them over another pan of boiling water, and stir gently until the sauce thickens. Then serve at once. You can do the same with a mixture of pens and new carrots,
Croquettes of Green Peas
