Green Peas Bonne Femme
Cut a quarter of a pound of streaky bacon or pickled pork (frat blanched in bolling water) into small dice and fry them in butter with dozen button onions. Take out tho! onions and bacon and make a raux; with the butter and half an ounce of flour.
Cook the roux for a minute
or two, moisten it with half a pint of stock and let it boll. Into this put a quart of freshly-shelled green peas, the onions and the bacon, with a small bunch of parsley, and cook Kairly fast so that by the time the peas are done the sauce is reduced by nearly half
Green Peas Flamande
Cool half a pound of nice young carrots as if you were going to glaze them, and when they are half-done add two-thirds of a pint of freshly- shelled green peng. Finish cooking them together, and just before you dish them up take the pan from the fire and shake In a little butter.
Green Peas a la Poulette
Cook a pint of shelled peas in the usual way, and when they are done strain them well and put them into a saucepan with salt, pepper, a pinch: of sugar and a couple of tablespoon- fuls of butter. Take two tablespoon- fuls of thick cream and mix the yolk of egg with it; pour this through a fine strainer into the peas, put the pon containing them over another pan of boiling water, and stir gently until the snuce thickens. Then serve at once, You can do the same with a mixture of peas and new carrota,
