Creamed Sweetbread

Fish Souffle
A strengthening but light dish fish and milk soufflé.
Ingredients: One cupful of flaked fish, one egg, one dessertspoonful flour, small knob of butter, one tablespoon- ful of milk bread crumbs, a fittio milk, seasoning, a little chopped parsley.
Melt the butter in a saucepan, sifr In the flour and seasoning. then add the milk gradually, stirring until thick and smooth. Add the breadcrumbs, Bsh, parsley and egg yolk.
Remove from the heat, stir in. the whisked egg white, pour into a grensed soumo dish, and bake slowly for 20 minutes. Regulo oven mark 2.
Chicken for Invalids
