For stance, if each person, on coming to tablo, finds before him a covor- ed casserole of coup (placed on a meat plate) he is assured of hot bouillion and the hostess has effect- ed a considerable saving in service. For no ladling of soup passing of plates need be done in the dinning! room, and when the casserole is removed the meat plate is ready in place. Again, should the meal be- gin with an entree, the same pro- cedure may be adopted, the cae- serole being placed on the plate to be used for the next course.
