Chocolate Custard.
For two
This is served hot. Dissolve. Two ounces chocolate in a very little of the three breakfastcupfuls mill required and when julle smooth pour on the remainder of the milk and bring to the boil. Meanwhile mix together eggs, yolks, and sugar as directed in the previous recipe, and pour over them the hot milk. Pour into a I double saucepan, and when sufli- |ciently thick, but not over-cooked, pour into a reproof dish. Cover with meringue, prepared as above, and bake in a slow oven till the meringue is lightly browned- I probably about 15 minutes.
Coffee Custard.
This is made by the method given in the first recipe above, but- inly half the quantity of milk should be used with an equal total of strong black coffee, The meringue may be placed un the top of the gold custard in spoonfuls, uncooker, but in this eine it must be added just before serving.
