Special Advantago.

A special advantage possessed by milk is that, despite its great nutritious value, it does not exeito

organs in general. It differs very much in this respect from minst other foodstuffs, such as meat and moat extracts, and, of course, from auch stimulants as alcohol. Numerous people suffering from an incurable chronic hamma- tion of the kidneys caused by too. good living would be in much better health if they had been cantont with simpler moals and ifi they had drunk more milk.

Why, then, it might be asked, why is it that a certain discredit attaches sometimes to the drink- ing of milk? The explanation is that a certain type of children-. i.e., those who, owing to their bodily constitution,' aro already suffering from an excess of fluid) matter In their tissues-da not benefit from drinking milk. More- over, infants after reaching a certain age-may be positively In- jured by being fed on too much milk. These, however, are excep- tional cases, and do not detract from the value of milk to the ma- jority of peoplo. A mattor which deserves very great attention, however, is the fact that a num ber of microcosms, such as the germs to whose presence typhoid fever, cholera, dysentery, etc., are due, thrive exceedingly wall in milk if the slightest traces of them have been introduced into a quantity of milk by accident or in- advertency. It has, for instance, been repeatedly observed that ser ous epidemics of typhoid fever originated in dairies. It fa, how- ever, easy to counteract this dan ger. Remedies.

A number of people object to boiled milk on the ground that it! is a "denatured" article of food. This objection is not without sta justification; but in this case, too, It is simple to provide a remedy. This consists in adding lactic-acid bacilli, or kefyr, or the extremely useful yoghurt substance to the boiled milk, which turns the latter into an exceedingly tasty berorago abounding in vitamines,
