On every side just now one sees a sombre" regiment of black felt hats. When the quality of the felt is good, they are nice enough, but nothing on earth can look as de moralised as a cheap black felt, or satin, or velvet hat. It attracts every speck of dust within miles.

LEMON DELIGHT,

One round of sandwich cake, 1 tin peaches and the following mix- ture:-Put in a saucepan 1⁄2 pint water, oz. gelatine, 2 oz. castor sugar, and the rind of 2 lemons. Use an iron spoon to stir until the gelatine is dissolved. In a basin put the whites of 2 eggs, un- beatan, add to these the strained juice of 2 lemons, and atraln the contents of the saucepan into the bowl. Give a slight whisk, leave for a little, whisk again, and leave. Continue doing this until none of the mixture remains clear. Colour It with shrimp colouring matter, and pour into a welled border mould. When set, turn out on to the round of sandwich cake which has previously been soaked with peach syrup. Fill the centre with sliced. penches: Decorate: with whipped cream and angelica.
