Milk puddings remind one nursery days, and unfortunately it is not often a pleasant memory. But milk puldings can be delicious and are excellent for children, especially when they are empting to them, for the food we do not like does us very little good.

First both eggs and milk must. be quite fresh and all utensils used spotlessly clean. A raucepan ould be kept for milk only as it is very apt to absorb favours left from other cooking.

Two ounces of most cereals, rice, tapioca, semolina or sago, should be allowed to a pint or milk and they should be put to soak in the milk for some time before being put into the oven..
