It ever we are tempted to suppose that any department of [knowledge has at last beon ther oughly explored, let us remind [ourselves that, only a generation jago, the chemistry of the atóni and the principles of dietetics were both looked upon, by most students, as in effect complete. But all over the world to-day these branches of learning are being studied anew, and we are only at the beginning of them. writes the medical correspondent of the server.

read before the British Medical As- sociation at Glasgow last year was the subject of a note in this place, and with whom I have lately had the privilege of much conversation. He is the suppos ed "fanatic" who, when Denmark was threatened with starvation during the war, gave the advice which not Enly averted that cut- astrophe but also lowered th death-rate. notably. [adults. and most notably jamong adult men. In a fashio. which later analysed, proves this to have been the most important experiment in human dietetics ever undertaken. The substantial abolition of alcohid, the reductio... of meat-eating to almost equal degree and reliance upon bread made of whole cereals and uron [potatoes, were the chief features of life "a le lindhede," as people say in Denmark. Without goiar further into that seemingly rigor- ous regimen fast now, we may note the provisional conclusions implied in the results as to the best form of dier for adult men and women.
MILK AND VEGETABLES, The term "lacto-vegetarianism" is probably the most suitable to indicate our Endings. This is not Įto say that on scientité arands, the eating of ment is to be con- Idemned. Aesthetic OT humanitarian consideration-may | arise, but, so far as dietetic science is concerned, we cannot wholly Lan the use of roeat. But we cer- tainly must deny that it is neccs- sary, or that it offers any advant- ages as compared with a diet which consists of milk and its products, eme and vegetable foods, including cereals, potatoes, green leaves of various kinds and the incomparable and irreplace Jable food of foods for early life is not indispensable for the adult: nor are exze, though egg-yolk is, as it evidently must be, so rich in everything required for growth.
In discussing his work with this creat student, I begin to see. more clearly than before, the aifference that necessarily exists between the dietetic requirements of the period of growth and these of the period of mere mainten- ance. So far as the adult is con- cerned, food requirements are relatively very simple, and his danger is not defect but excet.. Is this untry we have initiateri the study of the vitamins, and in tail of the called "growth- vitamins," known as A and B. Evident y we must see to it benre- forth that all intent- and children. and also all expectant and nurs ing mothers, obtain enough of these precious agents in their diet; but we must also isk, as Dr. Monckton Copeman has shown in his recent paper before the British Association, whether the adult. no longer growing, may not suffer from excess of these very agents.
Most of my readers would regard as monstrous the sugges tion that they should live "a la Hindbede," and some might think life. not worth living on those terms. Certainly I see no prospect of an early conversion of modern mankind to bis views. The Danes are back to their old fare, and very evidently an overfed people, as anyone can see for himself. Also {the death-rate forthe middle aged bas risen again since the war accordingly. The butchers need not worry. But a word of warn-
