Apricot Pie. Required: 1lb. of apricots, sugar, gill of water, short crust or flaky pastry.

Method: Peel, stone and halve the apricots. Put them into a pie dish and cover with granulated Laugar. Crack some of the stones and add the kernels and the water. Cover with a lid of pastry and bake in a moderate oven for about thres-duartors of an hour, or until the apricots feel soft when tested with a skewer or hat pin. Serve hot or cold, with or without cream.
