ELEGANT HEELS.

THIS WEEK'S RECIPE.

Chocolate Flan

Required: Good short crust or flaky pastry. 2 oz. of grated chocolate. I tablespoonful of cornflour, I pint of milk, 2 eggo, Zaz. of granulated sugar, cadilla essence, pinch of salt, I teaspoon- ful of butter, Line an open tart tin with the pastry. Put the milk into a saucepan, bring to the boil. Mix the cornflour, salt, and grated chocolate together, and blend with a little cold milk, pour on the boiling milk, stirring well. Add the sugar and butter return to the pan, stir until boil- ing, then cool for a minute or two. Beat up the yolks of the egge, and stir into the mixture, favour with vanilla and pour into the pastry lined tio. Bake in a fairly hos oven until the pastry is coal a little, then cover with a meringue of the whites of the egge, flavoured with vanilla and sweetened to taste. Return to the oven to brown lightly, and serva bot or cold.
