The American Consul-General, George E. Anderson, of Hong- kong, writes in a recent report:
The manner in which most portions of the Far East are com ing to the use of ice is one of the notable facts of social change in the past few years, and it is having some material effect upon trade. The American ice-cream freezer has long been a favourite ia Hongkong, and as a matter of fact the Amorien article controls the local market This season has been notable for the tremen- dous inorense in the lossl use of thess freezers. It is only quite recently that the Chinese have

cream. This season there areseveral stores owned and controlled by Chinese, where ice cream is daily served to Chinese customers during the summer months. The European population is growing more keen as to such refreshment, and there are several large establishments

ow whero excellent creams are served to immensely increasing patronage. Fusopeats here are. rather slow is equipping their houses with modern refrigerators, and the great majority are still deing a small and uneconomical ics bor, which in some ways ser- ves the purpose, although in the long run it is certainly more ex- pensive than those generally in use in America.
The fireless cookor is practically unknown in Hongkong and South China, but it is probable that this field could be educated to their ase, and by proper exploitation and instruction as to the economi- cal use of the cooker, considerable trade would resalt. The situation in Hongkong in regard to kitchen appliances is perhaps somewhat different from that in many parts of the world, where the question of household servants is serious", for in Hongkong, although the increased cost of living is an item of great moment, the price of house labour has not increased in the same proportion.
Modern economical household appliances must have regard to the saving of material rather than the saving of labour. Coal is not at all cheap-ranging from about $5 gold in the business sections of the city to $6 and $7 gold per ton on the upper levels and the Peak, and with wasteful servants it is a serious item in household economy in Hongkong. A year or two ago one of these cookers was on show in one of the shops of the city, but no real at- tempt was made to demonstrate in s practical way its various uses, and since then none of, the dealers have considered it worth while to introduce this appliance.

Formerly the only purchasers were the Europeans, and the demand was limited; but since the Chinese have taken up. Westa ra fashions, especially in footwear, there has been a notable iourease in the sales of shoe polishes of all kinds and grades.
The Chinese are, of course, ex- tremely conservative, but at the Bame time they are not at all adverse to the employing of new ideas whenever the utilitarian features are demonstrated. Once they are convinced there would bo no question about the develop- ment of this trade in the Far East. The prices must be as low as pos- sible, and it is doubtful if "the Chinese, or the Europeane for that matter, would be willing to experiment on the higher priced cookere.
