have bero made public during the controversy | Charterhouse, Bi. 19., 1,278, Clifton, 11th July, now raging as to "What is Whisky?" With the introduction of the "Coffey" and other con- tinuoge stills, an alcoholic liquor can now be extracted from numerus starch and sugar. yielding substances. As whisky was originally 22. 1 Abhis, it is decidedly

misleading to designate under the same title fluid derived from other substances, but, to a certain extent, the practice has become legalis- ad by custom.

Such a ples can form no excuse for notorious abuses, but if purchasers would restrict their dealings to reputable establish. ments, and insist upon being supplied with a 1561 liquor that they know to be beyond suspicion, the machinations of unscrupulous merchanis would be rendered impotent.

Should patrons, find any Meat supplied not to be freak, full price will be refunded on the return of the Meat to the Stull,

AN IMPORTANT FEATURE. An important feature of a high-class whisky the absence of deleterious after-effects. This immunity is obtained by the combination of age and quality, and it is doubtlarn the ponies sion of these characteristics which accounts for the immense popularity of Cadzow" whisky, blended by Messrs. ticularly in Naval and Military messes. It is a pure mait product, and the tess of a sample must convey to the mind of even the most in- experienced layman why physicians, when prescribing whisky as the safest of liquors, emphasise the importance of selecting the best quality.

restricted to medicinal purposes: When Henry 11. Savaled and conquered Irefanil in the twelfth century, the production and consump tina of alcohol were already prevalent amongst | the natives, but in Scotland the spirit only made its appearance as an intoxicating bever- ave about the middle of the seventeenth cen tury.

The term whisky is an abbreviation of the Celtic "Uisge-béátha," and as the English translation is "water of life" it is consequently synonymous with the classical "Aqua Vira." Although the excise duty was imposed in 1660, it was not until twenty-four years later that any records were kept of the quantities of aqua-virre on which this duty was paid. The consumption increased with incredible rapidity, but the attempt of the excise authorities to derive-revenue from whisky and control the distillations was re- garded with open hostility.

THE LAW EVADED. Smuggling became rife, and as the officials delegated by the Crown in enforce the regula tions were frequently in league with the smugglers, the law was continuously evaded. With the lapse of time supervision became much more » ringent, and this naturally con duced to sinister results when the law-breakers were intercepted by the constguard. The sympathies of the population were almost invariably with the former, and innumerable ruses were invented whereby the initer were decayed on a fals scent. while contraband cargoes were landed or embarked, Even at the present day the practice of smuggling is far from being obsolete, and, in spite of the energetic supervision now in vogue, illicit distillation of spirits is much more extensively practised than is commonly supposed.

The popular favour with which Scotch whisky is universally regarded has been largely contributed to by the persistent advocacy of the medical profession, but a precise definition of the present-day product presents a problem so complicated that it is well-nigh insoluble.
