With French gourmets the snail is a popular tidbil. The markets of Paris alons are called upon to supply about tan tons a year in order to meet the demand,

At one restaurant in that city 5,000 sualla are prepared and exten daily lawson. Of late the demand has been so great in Paris and has to increased elsewhere that the sup«. ply har been loadequate.

This demand has led to the development of anall farming. In Italy, Germany and Switzer- land, as well as in France, "small farms" are now becoming commen.

Thousands of the slimy creatures, amounting to tons in weight, are fattened annually for consumption in the big cities of the Continent. This occupation furnishes work and revenue to a large number of person's,

Looking upon a "snail farm" for the first time, the uninitiated observer would declare it nothing more nor less than a big cabbage patch.

Cabbages are raised to provide green pro- vender for the snails. The plants are growa in rows and planted in boxes, which are used to restrain the wandering propensities of the little captives.

On one farm, which may be taken at a speci men, there are grown annually 68,000 cabbage plants to sustain nearly 3,000,000 snails.

The boxes in which the plants are set extend as far down the field as the sight carries clearly. Each won six feet long, three feet wide, and a few inches high, and eich box is the prison house of many snails.

Cabbage plants grow about the sides. After dozing comfortably all day in their beds of moss in the centre, protected thus from the lient of the sun the snails wake up in the cool of the night and feed upon the cabbage leaves, So great is hiero gluttony that they consums

this farm, each containing during the height of the fattening season about 1,000 snails. About forty cabbage plants are grown in a box.

During the summer there is little market demand for snaila, na they form especially cold weather dish, but they require constant care during that time.

Before sunrise every morning men pars along' the rows of boxes, collecting the gastropode and putting them back in the shelter of the mass beds. The blazing heat of the sun is faint to them,

It is in the summar, too, that the supply is replenished. As the snails are kept on the farm solely for stock purposes, new crops must. be gathered annually from the hedgerows and other places where they are to be found.

This work furnisher employment for thous ands of men, women and children in the agricultural communities, who go out with baskets early in the morning and pick up the slimy creatures by the hundred.

Owners of the fattening establishment pay from two to four cents a pound; and some pickers manage to gather twenty or thirty pounds a morning.

That there is profit in snail fattening la shown by the market quotations. Two kinds are raised for sale, the larger, or "gros blancı," And the smaller and inferior "petits grin.”

WIDE RANGE OF PRICES.

Late in the spring the "gros blance" sell for from $1.75 to $2.25 a thousand, and the smaller, variety at 40 to 60 cents. In the fall prices rise to $2.50 or 53 a thousand for the larger and 85 cents for the smaller suails. During the height of the winter demand these prices advance

The farmer begins early in October to select the first of his crop for market, · He goes care. fully along the boxes, picking out the full-grown and fat snails and placing them together in a shady place where uniform temperature is mairtained.

From time to time he raids this pile of fat. tened snails, sending so many thousand to this restaurant and so many to that, as may be ordered.

At the city restaurants they are kept in baskets outside the door or in the window, As one of the oldest and most famous snail cafes in Paris, at almost any time, one may find noted epicures, high livers among the Parisinos ad of the English and American colonies, rubbing shoulders as they discuss the steaming delicacies.

Washed down with a battle of wine, they are said to constitute a dish fit for a king-after ons overcomes the first repugnance,

The customer buys them by the dozen, payi obtained from the Godown Company withining a franc or more for the better variety, ten days after the steamer's arrival.

Not only is the snail considered wholesome, but it has much more taste than an oyster, say

In order to be prepared for the table the anails, are first boiled for five minutes. This kills them, of course; at the same time it opens' and parily cleans them, Further cleaning is given by removing them from their shells and subjecting them to thorough washing.

ARE THOROUGHLY BOILED The next process in order is to thoroughly bail them for two hours by which they are rendered exceedingly tender. During this time the shells are boiled, dried and scoured, so that when the cooked saall is returned to its former habitation it goes into a clean and sweet re- ceptacle.

When the sail is put back into its shell, tha opening is taked up with a specially prepared yellow and green paste. Upon the correct composition of this much of the flavour of the dish depands.

Butter is the principal ingredient. Into this are mixed finely chopped parsley, a generous quantity of garlic and grated eschalots, As much of this paste is used as can be pressed into the shell with the body of the snail

Thus prepared, the experienced cook grills

the nails. shell and all, over a bot fire for about five minutes. The melting paste reaches nook of the shell and imparte its flavour to the contents. The dish is placed upon the table piping hot, and there are many who de clare that it cannot be beaten for delicacy and [arloks favour.,
