Cooking is at present a necessity evil. Our AMERICAN ASIATIC STEAMSHIP CO.
systems are inured to cooked food, as the cater of opiates is to his drug; it would be as painful a habit to break off. Unt!! some genius arises to head the procession our "return to nature" is indefinitely delayed. There are those who drink tea without sugar or milk; barbarians who like their meat red-raw; otliers who make their bread of nut-flour; but all are agreed that the "smell of fire" must first pass on what they eat. In accordance with this principle we notice that the first requisites for setting up an independent establishment are a frying pan and a kettle,
But there is many a young wife whose rose-petally comple: lon has been withered in the fierce heat of the cooking-range. And the husband? He will do his best not to mind; but the run-wax face and his own dyspepsia will tend to gloon of soul that is by no means lightened by a martyrdom that he knows to be unnecessary.
The time may come when there will be no sacrifice of beauty to the hearth-god, when there will be not clinging Savour of mutton-chops, to furnish gratuitous information to the afternoon visitor; when too, with the self-sacrifice of reformers, we renounce the dear delights of roast pig-sce Charles lamb-and adopt a simpler, saner diet of we can't say, what at present.
This time will not be yet, for we live in China, where a man is a coolie one day and a chef the next. That the Chinaman is a cook by nature is a commonplace to us, but the jaded interest common to those who have been for more than six months in China is arnased when we find that our coolie is taking the cook's plac for a day or two.
