DOUGLAS STEAMSHIP COMPANY,

LIMITED.

I clip this pathetis sentence from an account of the St. Etienne coal mine disaster which occurred in FOR SWATOW, AMOY AND FOOCHOW. France, in December, 1851. The fire had been mouldering for years in a remote part of the mine,THE Company's Steamship but its further advance had bem stopped by barriers. Yet they proved insufficient at last, and the terrible re-damp exploded, scattering death throughout the mine. Such incidents are too well-known in England to need farther explanation or comment.

An Ideal food contalus five elements: altro coolds to supply the muscks, brale and nerves, ilme and other mineral elements for the bones and teeth, hydrocarbons, such as starch and sugar, to supply heat and power, oll for various purposes and water forall Borts of uses, In milk and eggs, Nature shows us two formalas after which the fine constituents may be advantageously combined. Bread and meat in the West, and rice and fish in the East, are fair' examples of a proper combination.

The Chinese vegetarian seems never to lose sight of these principles. He divides rice fato Two classes; one poor in gluten and one rich in gloten; and, realising vaguely the value of the last-named compeand, is will log to pay forty per cent more for the second than for the first class. In addition to tl ils; he grinds the rice to flour and reparates the si arch from the gluten. The latter is rolled into th reads and cakes, est into lengths dried or des- sitated. It is used in many styles. Mixed with

and filed in fat, it makes a very palatable cojection. Added to vegetables poor in altro

ious elements, it increases their nutritive valua gel twoand three times over. Cooked with vermicelli, peas, mushrooms, and bamboo-tips, with a sauce similar to a salad dressing, it makes a dish unsor- passed in other delicacy or wholesomeness. Nor is rice the only substance from which the Heathen Chinese extracts gluten for all mentary purposes. Willet, wheat," buckwheat beant, peas, potatoes and even res-nots, sea-kale and Bea-weed are, thas used. One kind made frem sex-weed differs from ordinary gluten in the fact that when finely divided and brown Into boiling. fat it a sume in snowy, crystalline form, pleasant alike to the eye and the plate,

In addition to this, he rcfices and clarifies the crude all nulitis almost colorist, adorlers and tast-less. It is lo the latter form that these ella are used for crok Ing. The favorite is peanut of, which in every shape is sweet, bland and more or less agreeab1à. Much of it is extracted from the wasted pea-sut and retains the well-known flavor of that favorhe nat, The semi-vegetarians prepare a curious off from raw eggs, and another similar to the ghee of Hindustan from milik and cream.. Of all these solls, the pleasantest to the civilised palate are those from pea-nate and from cream. When fresh they are on a par with virgin olive oil.
