Oysters rich in glycogen and with flesh thick and creamy are called \"fat\", (Bromhall, 1958).\n\nOyster beds in some localities are appropriate for spat collection only. The coastal area of Fuyong Huangtian was a traditional spat-collecting ground but is not used nowadays. The re-location to the bay north of the Nantou area was carried out to make better and more economic use of human and other resources. The aquatic environment of Fuyong is suitable only for spat-collecting; it is neither saline enough to suit normal oyster growth nor fertile enough to be used for oyster fattening. The current practice is to use Nantou Bay both as a spat-collecting and oyster-growing area. During autumn, marketable-size oysters are shipped by barge north to Shajing for fattening. Information provided by the Baoan Aquaproduct Bureau show that in 1971 the areas of the oyster beds at Nantou were 958 ha and the fattening grounds at Shajing were 638 ha.\n\nDeep Bay is regarded as a good environment for all three stages (spawning, spatfall, growth).
