The books had suffered a good deal in being constantly moved about, the number was now 3800, all of them dilapidated and 3000 were considered worth rebinding. This would cost about $3,000 but the Society had no money for this work. A despatch dated 29 December, 1863 from the acting Governor, W. T. Mercer to the Colonial Secretary quoted the Morrison Education Society's circular and asked for action.1 \n\nA City Hall containing a Library and a Museum was eventually built on the site now occupied by the Bank of China and the Hong Kong & Shanghai Banking Corporation in Queen's Road Central and adjoining Statue Square. It was opened by the Duke of Edinburgh on the 2 November, 1869 and during his tour of the building His Grace visited both the Library and the Museum. \n\nA printed catalogue of the Morrison Library was issued in 1873 by the City Hall Committee. It contains 1666 entries arranged in alphabetical order of authors or titles, editor, translator, etc., where the author is not known, only eight of which I have been able to identify as belonging formerly to the Royal Asiatic Society. The books are classified, single letters indicating the following groups :- \n\nA History. Peerages, &c. B Biographies and memoirs. C Geography including works on various countries. Travels, Voyages and Adventures, \n\nD Natural History: Ornithology. E Botany. \n\nF Atlas Gazetteers, Meteorology, Guidebooks, Geology, Metallurgy and Mineralogy. Topography. \n\nG Mechanics. \n\nH Encyclopaedias, \n\nI Commercial Statistics. International Law, Jurisprudence, \n\nJ Complete Works. K Astronomy. \n\nL Chemistry. Optics. \n\nM Mathematics. \n\nN Painting, Music. Science and Art, \n\nO Medicine and Surgery. \n\nP Biblical works. \n\nQ Oriental Societies. Journals. R Classics. Dictionaries. \n\nS Novels. \n\nT Drama and poetry. \n\nU Periodical works. Directories. V Divinity. Law, Treaties and Conventions. W Miscellaneous works. \n\nA stocktaking was made in 1956 and of the 1666 titles there are now 1233 remaining (2748 volumes out of 3583). Some volumes were removed during the Japanese occupation of Hong Kong and were not subsequently recovered. The condition of the books is poor. Just before the hole is filled, it is customary for each member of the family present to throw in a handful of earth. After filling, two candles are usually lit and placed near the head of the grave and three incense-sticks nearer the foot. Sometimes, absent members of the family may depute other relatives to set out candles and incense-sticks on their behalf, in which case the proportions are still observed. An offering of oranges may be peeled and placed on the grave, together with paper money. Finally, crackers are let off.\n\nOccasionally, after the coffin has been lowered and before the earth is thrown in, a male descendant present will make a cut in a live cock so that blood flows out. The cock will then be held over the grave to allow its blood to drop on the coffin and sides of the hole, in the traditional hope that the breeding properties of the cock will be transmitted to the deceased. Provided that the deceased is over middle age, sex normally makes no difference. A more modern version of this practice omits the incision on the cock, which is simply swung over the hole on the end of a piece of string.\n\nThe last rites sometimes involve the assistance of Taoist or Buddhist monks, even though neither the relatives nor the deceased may necessarily profess complete belief in either of those religions. The monks normally appear in a team of five: the leader with the other four ranged in pairs. Their form of service usually follows the pattern of Taoist and Buddhist chanting, accompanied by music, the striking of bells, small brass ringing bowls and wooden sound-boxes (muk ue). In major funerals, where the body is held elsewhere than in a funeral parlour, the last rites may continue for seven full days before burial, with further services every 7th day for a total of forty-nine days. If expense proves too much, some of the weekly services may be omitted but it is customary to include the 5th one, when married daughters and granddaughters are expected to contribute either wholly or in part; the final service is also required. At these weekly rites, the next-of-kin may sometimes cook rice and beans (red or green) which are then eaten by relatives in the hope of attaining long life (chuc shaû faân).\n\nAnother custom still often encountered is the placing of several pairs of trousers on the deceased, whether male or female. Half a dozen pairs of trousers is not uncommon.\n\nBased on a pun between the Cantonese foò (\"trousers\") and foò (“riches\"), the object is to provide wealth for the spirit of the deceased. This was the first stage of their career as monks.\n\nLife in the Meditation Hall was strict. One slept only five hours a night and meditated about ten hours a day. Rising was at 3.00 a.m. followed by an hour of morning prayers, then an hour's rest; breakfast was eaten before dawn; after it came four and a half hours of meditation. This meant sitting in the lotus position for forty minutes, then having a drink of tea, then twenty minutes circumambulating the altar, then going back to sit, then some more tea, more circumambulation, and so on. Circumambulation prevented the joints from getting stiff, but one had to keep on with mental exercises while doing it. It was not just a matter of walking about. Lunch came before noon and was followed by an hour's rest, two hours' meditation, an hour of afternoon prayers, supper at 5.30, and three and a half hours of meditation in the evening. At ten o'clock the monks went to bed. If one of them dozed during meditation the next morning, the monk on patrol, or hsün-hsiang w†, would tap him on the back. If he talked during meals, quarreled, or broke any of the other rules, he was beaten severely.\n\nThe daily schedule varied from monastery to monastery. Rising in the winter was later and retiring earlier (except during the so-called Meditation Weeks in autumn, when for up to forty-nine days one slept only two hours a night). But the schedule I have given is typical.\n\nSometimes I have asked monks whether they did not get bored meditating ten hours every day. They deny it vigorously. They say there was a programme, a method. For instance, one might be trying to find an answer to a standard question like \"What was my original face before I was born?\" The Instructor would come over and say: \"What are you looking at?\" If one replied, \"At the buddhas and bodhisattvas,\" he would say \"Where are the buddhas and bodhisattvas?\" One could not answer and was beaten. Then the Instructor would ask: \"Who is being beaten?\"\n\nI am afraid that the subject of methods of meditation is too large to embark on here. It is true, however, that many monks found themselves unable to master it, particularly Ch'an (Zen)",

        "content_text": "50\n\nBEK-TO CHIU\n\nBAUHINIA VARIEGATA, LINN * # Family: Caesalpiniaceae #4# 鳳科\n\nCommon names: Camel's Foot Tree\n\nOrchid Tree\n\nMountain Ebony\n\nThis Bauhinia was introduced from India and is cultivated in the different parts of the Colony for its profusion of blooms in early spring from mid-January to the end of April with its \"peak\" often coinciding with Ching Ming Festival. The inflorescences of dense racemes, each shorter but more numerous than those of Bauhinia blakeana, arise from the axils of the leaves. The leaves are usually shed just before blooming time. Thus the bluish-grey bare branches become heavily laden with tufts of blooms, which, at a distance, appear like cherry or apple blossoms, with a magnificent display of colours, ranging from purple-red, rose-pink to white. It is most decorative and colourful to the roadsides and the hillsides on which they grow and a welcome indication that spring is here.\n\nThe flowers are fragrant and resemble those of B. blakeana in structure and general appearance but are smaller in size and softer and daintier in texture, maturing readily into fruits which are flattened legumes (pea pods) about a foot long and 1/2 inch wide, green when young, becoming black on ripening. These legumes are dehiscent, splitting along both sutures explosively, dispersing the seeds to considerable distances. The seeds germinate readily and the young plants bloom in the second year. Many of the hillside trees are most likely self-sown.\n\nWhen the trees are in full foliage in the summer and autumn, they are difficult to distinguish from those of B. blakeana, except by observing the bilobed leaves which are completely glabrous, appearing thin and of a paler green colour. The leaf blades are traversed by eleven palmate main veins. In winter, the leaves start to deteriorate, in preparation for shedding but before the last blooms are over in spring, the new leaves unfold. This deciduous Bauhinia hardly ever has bare branches throughout the year.\n\nIt is said that in India the young leaves and the unopened flower buds are eaten and that nearly every part of the tree is used medicinally. The bark is used in tanning and dyeing.\n\nMore cultivation of Bauhinia variegata should be encouraged to add colour and beauty to the already beautiful Hong Kong.",

In conclusion, I stress that from start to finish this has been and is a Sarawak Government-based study. The main costs and all the conceptions have been derived from this Government, first as a Crown Colony and now as a State in Malaysia.\n\nAPPENDIX\n\n——\n\nSpecimen list of mammals so far identified from Niah Cave Stone Age food-bone deposits will illustrate the value of keeping everything in an excavation; in this case to build up a complete picture of prehistoric food habits. Similar studies on bird, fish, and reptile bone are in hand. The mammal work was organized and patiently carried on by Lord Medway and largely undertaken by him personally, with special help from Dr. Hooijer, in Holland, Lord Cranbrook in England, and Pat Marshall in Hong Kong. (For an introductory survey see Medway in Sarawak Museum Journal, VIII, 1958, 12:627-636). Pratt The Pilgrimage of Buddhism, New York, 1928, p. 311. A Buddhist monk once explained to me that although it was true that Jesus had risen after three days, no one should think he had done this \"just by becoming a Christian\". He had performed religious exercises (hsiu-hsing) and that was how he had achieved resurrection. There was no attempt on the part of this monk to deny the miracle of resurrection, only to fit it into the Buddhist scheme.\n\n39 Rev. Joseph Edkins, The Religious Condition of China, London, 1859, p. 75. In 1875 Timothy Richard, when he was baptising converts in Shantung, found that there was no building convenient to the river where they could change their clothes before and after. He explained his problem to the monk in charge of the Buddhist temple there who \"readily consented\" to lend some of its rooms for this purpose. See Richard, Forty-five Years in China, New York, 1916, p. 95. In 1879 the largest lama temple in Peking allowed a colporteur of the National Bible Society of Scotland to run a bookstore within the temple, where on several days a week Christian books were sold. See C. F. Gordon Cumming, Wanderings in China, London, 1888, pp. 4-9.\n\n40 Harry A. Franck, Roving Through Southern China, New York, 1925, pp. 575-576.\n\n41 In the early 1890's De Groot reported: \"It has often happened to the author of these lines that when he was taking his meal in one of the monasteries where he was staying, he was visited by monks who were curious to see how he ate and what he ate: but it was enough for them to smell the odour of his roast of pork or his leg of mutton and they would be forced to make a hasty exit from the room: they felt overcome by nausea. Such strict vegetarianism, it goes without saying that when non-vegetarian lay people came to stay sometimes in a monastery they are not allowed to have their food prepared in the monks' kitchen. There are small separate kitchens for them, where their own servants can stew things up for them.\" (Le Code du Mahayana en Chine, Amsterdam, 1893, p. 103). In 1908, when Boerschmann stayed on P'u-to Shan, he grew tired of the vegetarian fare and sent his cook to smuggle in some chickens (Pu-t'o Shan, Berlin, 1911, p. 166). In these and other instances the monks are portrayed as tacitly or even gleefully cooperating in getting meat onto the foreigner's bill of fare. It seems more likely that their cooperation, when it was forthcoming (and often it was refused), was reluctant and indignant. There was a compelling practical reason for this. If Chinese pilgrims saw meat being eaten on the premises of a monastery, many of them would take their patronage elsewhere. This was understood by early Western travellers like A. J. Little (Mount Omi and Beyond, London, 1901, pp. 75, 81, and 83). Little also provides an example of the Westerner's tendency to haggle (pp. 68, 83). The meanest bit of haggling was probably perpetrated by Mrs. C. F. Gordon Cumming. In 1879 she visited the Tien-t'ung Ssu, one of the model monasteries of China. After she and her party had enjoyed an \"excellent dinner,\" they were asked to give the equivalent of English tenpence, Mrs. Cumming offered eight pence. When the offer was accepted, she tipped the waiter tuppence halfpenny, and noted that he \"grinned with delight. Can I give you a better proof that we have reached a spot where foreigners are almost unknown?\" (Wanderings in China, London, 1888, p. 291). Mrs. Cumming was quite mistaken, of course, about foreigners being unknown: probably more had stayed at T'ien-t'ung than at any other monastery.\n\nEven today Westerners with plenty of dollars in their pocket take pride in doing the poor Chinese shopkeeper out of a few cents, partly to show their savoir faire and partly out of fear of being cheated themselves. It became almost immediately popular and spread up and down the coast; it made a substantial contribution not only to the Chinese diet but also to China's economy. When I sailed on a freighter from China to the Mediterranean in September 1925, I was astonished to find that we took on 2,000 tons of peanuts in Tsing-tao, and sold them in Marseilles.\n\nIn closing, it may be added that another early name for the peanut is Ch'ang-shêng kuo*, fruit of eternal life. One enthusiastic commentator, who called himself Yü-so-Wêng‡A (the old man in a grass coat), wrote: \"If the lo-hua-shêng is constantly eaten you will give birth to many sons.\" This may help to explain part of its popularity in the one-time land of filial piety.\n\nColumbia University\n\nL. CARRINGTON GOODRICH\n\nNOTES\n\n#\n\nIn all fairness it must be pointed out that Professor Hirosato Iwai of the Toyo Bunko holds that there are two earlier references to the peanut: one by Li Kao and another by Chia Ming (1180-1251) which he admits is dubious, and who flourished in the fourteenth century, dying at the age of 106 sui. Professor Ho informs me, however, that he considers neither text reliable.\n\n2 It is worth noting that Lin Hsi-yüan#, a native of T'ung-an, Fukien, who graduated as chin-shih in 1517 and who became one of the largest shipowners and overseas-merchants of his day, wrote in his Wên-chi4, or collected works, on the Portuguese traders who frequented the China coast in the years 1521-51: \"The Fo-lang-chi who came brought their local pepper, sapan-wood, ivory, thyme-oil, aloes, sandal-wood, and all kinds of incense in order to trade with our borderers.\" (C. Today local foxes face a greater peril; persistent hunting by illegal shooting and trapping. Each winter a number of young foxes, probably imported, are sold alive in the markets for food, despite Government's attempts to stop this trade.\n\nAnother mammal imported during the winter for food is the raccoon dog. It resembles the North American raccoon but in fact its nearest living relative is the domestic dog. It has never been recorded from Hong Kong but was common on the plains around Canton until at least 1914. In Russia it is encouraged and has been released in some areas to breed wild for fur. It is also useful as a destroyer of rats.\n\nIn Hong Kong this animal is often treated with extreme cruelty being confined in small cages, too small for it to stand or turn round, and may be kept for several days on food stalls before being killed and eaten. Until 1966 they were commonly seen in the markets of Hong Kong and Kowloon, particularly in Shanghai and Market streets. They now appear to be kept in backrooms and sold under the counter.\n\nA fairly abundant wild mammal in the Colony is the ferret-badger. It is a true badger, feeding on insects, earthworms, small rats and mice. Plate 4 shows the broken white markings on the head and back. Like the leopard cat, it is a retiring, nervous mammal prone to die of nervous shock in captivity, although it can be tamed if caught young.\n\nOtters were once common here but are now rare due to illegal hunting. Fishermen have always persecuted them, although the more informed are now realizing that otters in an area improve rather than harm the fishing. Research on the life history and feeding habits has shown that although otters eat fish, they eat only diseased fish. By controlling the numbers of the sick they prevent the spread of fish diseases and so are beneficial to the fish population.\n\nProtection by law of the otter (since 1938) has not been effective. If some otters were kept in a zoo or in the Botanical Gardens so that people may see how very charming and captivating they can be, a few of the poachers may be dissuaded from killing them.",

        "content_text": "46 \n\nL. G. AUMER \n\nAnimal husbandry is another traditional feature in the economic life of the villages. In an earlier period, every household used to raise two or three pigs. This was not only for immediate profit but also as a kind of saving economy. The animals were sold off when circumstances required activation of capital. Pork has always been a luxury in the villages and is eaten only on special occasions. Roast pigs for ceremonial display play an important part, and a status-bestowing one, on festive occasions. Stimulated by the increasing market demand for meat in the late 1940s and in the 1950s, villagers increased their stocks to three or four pigs per household. Around 1960, however, the market price was heavily affected by the steadily increasing import of relatively cheap pigs from China. Pig breeders now acutely experienced the chronic disadvantage of poor transport facilities to the markets. The saleable price does not exceed HK$100, and it is calculated that the breeding costs for about six months, together with labour and transport costs, do not make the venture worthwhile.\n\nCows are kept in the villages for a double purpose. Rice farming requires draught animals, and buffaloes are not suitable for mountain areas. A certain profit can also be made on selling. It is calculated that a cow-owner will get a new calf every two years. The feeding is not very expensive since the animals are grazed on the hill sides and on abandoned fields. They are used in agricultural work for about five years, after which period they are sold off. In this case, marketing offers no difficulties as brokers in the butcher trade turn up in the villages whenever they hear of a possible deal. They pay in cash and take the cows with them. Weak animals are sold as soon as possible. Together with pigs, cows fulfil another most important function. The manure is used for fertilizing the fields, and villagers depend greatly on this supply.\n\nSmall-scale chicken breeding has always been carried out in the villages. People from Plum Grove Village and Big Stream Village now sell their fowls in the new Sha Tin Market, where the presence of wholesale dealers from Kowloon improves the market situation; though there is heavy competition from specialized chicken farms run by immigrant peasants from China. In Grass Field Village, breeders wait for the main festivals to obtain a better price in their traditional market town, Sai Kung.",

KRONE\n\nseveral times taking a cruise in his Tea-cup, the mountain was named after it “Poi-tou.' \n\n\"Poi-tou.\" Among the common people, however, the mountain is known by the name \"Shing-shan\", or holy mountain. The rough, barren, mountainous country I have described, has given birth to many superstitions and legends. Some of the huge stones on the hill sides are supposed to represent the tiger, the dragon, and the phoenix. The stones on some hills are said to have locomotive powers, and to pursue any adventurous traveller who attempts to mount their sides; other stones are said, when touched, to have the power of producing pains in the stomach, and others to emit white vapours from their surface. But these matters are of but little importance to us; of more interest are the caves which are found in some of the mountains. The most remarkable of these caves is near the market-place of U-shek-ngam, &, at the base of the mountain. For some centuries this cave has been used as a temple, and its aspect is so changed by the architecture and furniture which have been introduced, that one cannot get a good idea of its natural size and appearance.\n\nNatural History. Quadrumana, A number of small monkeys inhabit the island of Lintin; but this animal is not found in any other part of the district, though Chinese books relate that in former times they were found on 'Ng-tung, and most of the high mountains of the district.\n\nQuadrupeds, — The Chinese tiger, which seems to be a true tiger, is found about 'Ng-tung, and in the neighbourhood of most of the high mountains. It sometimes reaches a considerable size, weighing 200 catties, or 266lb. It feeds generally upon pigs and dogs, and the country people say it occasionally carries off a grass-cutter, but this seems doubtful. It is taken in traps, and is a great prize to its captor, as it will bring him in a sum of $150 to $200; for the bones are in great repute as a tonic medicine, and the flesh is eaten with the idea that the courage of the devourer is improved by the meal.\n\nMore than one species of deer, a fox, and a badger, have also been seen, and a large ant-eater -- the flesh of which is considered a delicacy, and is also supposed to possess medicinal powers. They saw the usefulness of these weapons and set about casting some themselves. These proved effective in the conquest of the northern frontier (1643-44) and in the years to follow as their armies plunged on down across both the Yellow and Yangtze Rivers to Kwangtung and Kweichow.\n\nColumbia University\n\nL. CARRINGTON GOODRICH\n\nNOTES\n\n1 In this I have consulted Mr. C. N. Tay of the American Museum of Numismatics, New York City.\n\n2 The inscription on the cannon is given below. This cannon was found lying on open ground in the Tsiu Keng sub-district in the northern part of the New Territories. It was reported by Mr. R. E. dos Remedios, Senior Land Assistant in the District Office, Taipo in August 1966. The cannon was completely exposed and must have been in this condition for a long time. It is not clear how it came to be there.\n\n* This cannon, which was mentioned in passing in the note on the Tung Chung Fort, at p. 148 of Vol. 4 of the Journal (1964), was dredged from the sea in 1956, either from Kowloon Bay in the course of work on the extension to Hong Kong airport or from Fat Tong Mun (otherwise called Joss House Bay) in the approaches to Hong Kong Harbour—sources differ. It is now mounted with a plaque in Chinese and English outside the Central Government Offices (East Wing), Hong Kong. It was heavier than the one recently discovered; 300 catties as compared with 300 catties. The Chinese inscription, which is much the same, is also given below.\n\n4 An insight into the happenings of these troubled times is preserved in the family record of the Tsui (徐) clan formerly of Shek Pik on Lantau island, to which their ancestor had removed in the 16th Century. The family came from Mong Ngau Tun (望牛墩) in Tung Kwun district (東莞) where they had settled in the Sung dynasty from Kiangsi province. There was fighting in Tung Kwun against the Manchus after their success in the North. The record which gives no precise date for this occurrence, though it must have been within a few years of the change of dynasty in 1644 — reads\n\n—\n\nSau Yeung-kap, a civil officer, and Li Shing-tung, a general, instigated an uprising against the new dynasty in Tung Kwun. As the revolt gathered momentum, oxen and horses were killed for food, and rice and corn became as expensive as pearls. For miles, one could see nothing animate; the fields were covered with dead bodies. In some places, human flesh was eaten by the starving people, and piles of human bones filled the ruined houses.\n\nA detachment of the Manchu army was sent to besiege the district city, then occupied by the rebels. In the conflict that ensued, human beings were massacred as though they were ants, and law-abiding people and bad characters alike were destroyed.\n\nFortunately, our clansmen, then living at Mong Ngau Tun, escaped this calamity. However, many of our former neighbours and fellow-natives in Ming Ka Lane lost their lives and [as the record says in another place] all the dispensations of the previous dynasty were regarded as scrap paper.\n\n(I am grateful to Mr. Gilbert Louie for this translation. Did they ever include members of the local gentry or enjoy support of a whole village? The Nien is said to have recruited whole communities when getting ready to rebel.43 De Groot notes that when all villagers were members of a sect a piece of white cloth was used by the village as a mark of distinction.44\n\nRebellions and local disturbances initiated by sects appear to have taken place when economic conditions in the countryside worsened and local officials were at their most oppressive. Some sects clearly aimed mainly at the poor. One I know provided charms which when eaten were supposed to have overcome hunger for several months. In times of extreme poverty and oppression the organization of villages might have been weakened. The interests of village leaders and ordinary peasants might draw closer to each other in such conditions and also to those of the dislocated peasantry.\n\nThe objects of most religious rebellions was not to change the social order but purge the government of unvirtuous elements and sometimes change the ruling dynasty. Local village leaders in times of stress might also have desired this object. It seems that some organizations even attracted leaders of large mono-lineage villages. In times of disaster it must have been difficult to maintain a strong lineage organization to support the ancestral hall association with wealth. And other villages seeing their powerful landlords weakened might have taken advantage of the situation to resist their control. The Nien and the Eight Diagrams Sect are both said to have aided villages in inter-village fights (ultimately increasing their dominance over the villages concerned).45 The Eight Diagrams sect is said in fact to have risen as a result of antagonisms among village communities. Leaders of large lineage villages were made leaders of some organizations.46\n\nOne Nien head is said to have been leader of a \"clan\" composed of a thousand families, allying his village with more than ten others (his exact \"leadership\" status in the kin-group is not very clear, however).47 But the Nien was careful to preserve village leaders in its organization and this brought its own problems of expansion. The interests of various communities and local village heads inhibited the build up of centralized control over large areas by the Nien.",

RYDINGS\n\nA note in the Hongkong Recorder of 2nd July, and repeated in that already mentioned of 9th July, advised \"Captains of Vessels and Strangers visiting the Colony\" that they might be \"admitted gratis to the privileges of the Reading Rooms, on being introduced by a Member.\" There is evidence that these privileges were in fact used by appreciative visitors, though in one instance with near-fatal results. In 1853 a party of officers from an American naval vessel visited the Victoria Library \"to enjoy an hour's quiet reading.\" It is not stated by whom they had been introduced. The report continues:\n\n\"We were soon stretched out on easy chairs and couches conning our books. Having finished my examination of one pamphlet, I got up from my sofa on the verandah looking toward the harbor, to return it to a table spread with others some ten feet distant, and was returning to my seat with another when I saw the marble paved verandah falling in and my poor messmate, Winder, precipitated to the basement below, a distance of fourteen feet. He was completely covered and surrounded by the broken beams and masonry. My own feet were arrested on the very door sill from which the verandah separated, and I saw the sofa on which, but a moment before, I had been sitting, slide down into the abyss but, fortunately, it struck against a side wall and thus providentially covered and protected the head of my messmate from being broken. Had I been sitting on it that end must have fallen on his head and destroyed his life, if not my own; as it happened, his arm was broken by the marble squares of the pavement, and he did not escape without other bruises and scratches. LL. Jones, feeling his chair slipping, succeeded in springing from it into the room, and escaped. Imagine the breathless feeling with which I saw the floor give way to my very feet, and poor Winder falling.\"\n\n—\n\nIt appears that the cause of the accident was that the beams of the verandah had been eaten away by termites. Whether these creatures had also attacked the books is not stated, but no doubt at some period of its existence the books in the Victoria Library must have suffered from the ravages of insects, and probably also from mould, the twin pests of tropical libraries.         "content_text": "CHINESE STREET-CRIES IN HONG KONG\n\n131\n\nAfter the sellers of vegetables come the hawkers of meat and fish. Fresh beef, pork and fish are generally bought in the market, but sometimes sold in the street. Dogs are not allowed to be slaughtered in Hongkong, either in the slaughter houses or in private dwellings. They are killed and eaten secretly, however, and although their meat is generally considered not very healthy, it is a treat to coolies. Hám' yü, salt fish forms a great portion of Chinese street commerce. Mr Overbeek's special Catalogue shows that he has exhibited in Vienna some 60 different kinds of salt fish. A little piece of it is in many cases the only meat on the table. There are sellers of fresh and dried oysters, of dried fish, shrimps, crabs, sharks' fins and a variety of marine delicacies.* Others go about with baskets of living fowl, ducks, geese; others sell these animals dried or cured with oil. In Canton, hawkers of mince-meat go about who have a show-box, called the \"Western mirror,\"† by which they attract customers. I have not seen them here; perhaps the Police do not allow them as the exhibited pictures are, for the most-part, of a licentious character.\n\nWe will now notice the hawkers of fruit. They are divided into two classes. The one class go about with baskets slung over their shoulders, and cry out their fruit, which generally consists of one kind only. They sell it by the catty. The other class are retail-dealers; they sell single fruits of different kinds and cut up pieces of fruit for one or more cash. They have a nicely spread transportable table before them and a basket with stock at their side. The price is marked by little bamboo slips. They will go about until they find a shady place and remain there as long as shade and trade are favourable.\n\nIn summer we are supplied with loquats, pine-apples, mangoes, melons, rose apples, guavas, peaches, lichees, whampees, apples, pears, plums, different plantains, carambola etc.; in autumn with persimmons, olives, walnuts, chestnuts, peanuts, lemons etc.; and in winter with different oranges, sugar-cane, Tientsin pears etc.\n\nOf Confucius it is said, that he did not eat anything which was not in season.         "content_text": "126\n\nARMANDO DA SILVA\n\nThe large leaves of this plant reputedly have healing qualities that arrest the growth of leprous sores.\n\nVillagers are very conscious of some plants that can, if necessary, be eaten without ill effects, the so-called famine foods. Wild plants are classified into shoh (#) covering edible plants in general, and sut (†) a term describing wild medicinal plants. The distinguishing line between these two is hard to define as many medicinal plants are suspected of being famine foods to which are attributed tonic qualities. Their leaves, stalks, or succulent sections are usually added to soup or congee to impart taste and body. An example of a famine food is the pulpy fruit of Rhodomyrtus tomentosa. In August and September this shrub yields a sweet purple fruit which is picked and eaten. The local name for the fruit is kong ním (¥) but its other name of pei kwan kong (¤) meaning \"the berry that one eats when fleeing from soldiers\" strongly suggests that it is indeed one of many famine foods of this area.3\n\nTo keep insects from ruining crops, village cultivators often use insecticides derived from plants. A rotenone extract, injurious to insects but not to man, is derived from the tuber roots of Derris trifoliata, called locally tuk yue tung (“fish poison vine\"). The insecticide extract is diluted in water and sprinkled on crops, particularly the leaves of the sweet potato.4\n\nThe castor oil plant, Ricinus communis, called pei ma (¦) is a plant that was formerly widely used by villagers. The seeds were crushed to make an illuminant oil, and the leaves are still used as poultice for foot sores. It is still a common plant about villages. Most non-economic medicinal plants associated with home remedy are usually regarded as communal property. While these plants are not specifically protected by the villagers, neither are they uprooted without cause. Thus the castor oil plant exists because some of the more conservative villagers still rely on it to supply leaf poultices for leg sores.\n\nMany older villagers still place a greater reliance on plant medicine than on patent medicine and pills. Again for this reason, many plants that to outsiders seem of no useful significance are tolerated, though not purposefully cultivated for their curative qualities. The Chinese names are in colloquial Cantonese:\n\nArtemisia vulgaris (ng yuet ngai AX) is a traditionally sacred medicinal plant. Sprigs of artemisia are hung on doorways on the festival day of tuen yeung (), that day associated with glutinous rice dumplings and dragon-boat races; hence the colloquial name \"fifth moon artemisia\". A powder is made from this and is used in moxa (ngai yung *). For medicinal use the sprigs are ground and sprinkled into warm rice wine to make a fragrant tonic drink, which allegedly relieves upset stomach.\n\nAmaranthus spinosus (lak yuen tsoi ). The roots and leaves of this plant are boiled in water and the infusion used in the treatment of piles. A soup is made by boiling the leaves and the shoots and the decoction is drunk as a yuet hei reliever. It is also considered a diuretic drink. Although this plant is not cultivated, it is often sold as a vegetable in vegetable stalls.\n\nHylocereus undatus (pa wong fa re£) is a seashore plant of the cactus family. The silk tassels from the flowers are dried and used to make a cough medicine. The tassels may also be boiled as a vegetable and cooked with pieces of pork to make soup. See Plate 10.\n\nVitex trifolia (pak fei muk yee ¶). This is another beach plant whose leaves and vines are boiled to make a poultice for bruises. The leaves are ground and drunk with warm rice wine. This is a favourite medicinal plant among the Tanka boat-people.\n\nBreynia fruticosa (hak min shun i) is a hillside plant whose leaves are boiled in water to make an infusion for the cleansing of sores. To complete the treatment a poultice of its leaves is applied to the sores.\n\nMelastoma sanguineum (long kau lei #Ƒ) is a styptic simple. Its leaves are both ground and drunk with warm rice wine, and are also used as a styptic poultice.\n\nPolygonum chinenses (fo tan mo ★★). The leaves are fried with honey and eaten as a treatment for dysentery. The leaves can also be made into a poultice to relieve rheumatic pain and for treating foot sores and arm boils,",

        "content_text": "NOTES ON ETHNO-BOTANY IN THE NEW TERRITORIES\n\n129\n\nGlochidion eriocarpum (tsat tai koo ✯✯★★) is a hillside plant. The leaves are first boiled and then applied to sores to relieve irritation.\n\nHydrocotyle asiatica (pang tai woon). A tonic drink is made from this plant as a yuet hei reliever. It is considered especially good for nursing mothers. The leaves and stalks may be eaten as a vegetable with rice, and an excellent soup can be made from it.\n\nHedyotis uncinella (po chau tsai). The plants are dried in the sun and used in making a tonic drink to relieve yuet hei and to offset general debility.\n\nThese are only ten of many economic simples with reputed curative or medicinal qualities. As already suggested, some of them may have been emergency famine food at one time or another, particularly those that also serve as vegetables or as soup stock.\n\nNOTES\n\n1 In 1962-63, most of the nets in small sampans appeared to have been made from commercial natural fibres (abaca, ramie or coconut coir fibers). However, Agave fiber was still used for making twine. Fishermen then were readily accepting synthetic nets. Some fishermen I talked to believed that synthetic nets were too expensive for small craft as snagged nets meant costly losses because it is harder to salvage nets of synthetic fiber than those of natural fiber, so I was told.\n\n2 I haven't seen cochineal insects used for dye myself and the information given me was essentially \"before the use of chemical dyes, in olden days, this kind of cactus (Opuntia) harboured yin chi insects that were used for a red dye.\" Whether the cochineal insect was used or not in the lifetime of the older villagers I talked with, I do not know. Personally I suspect it was used extensively in the past and the dyeing technique diffused through the Philippines to the China coast from Acapulco, Mexico in the days of the Manila Galleon (i.e., Acapulco to Manila to Macau and thence along the South Chinese coast).\n\n3 Kong Nim and Pei Kwan Kong terms for Rhodomyrtus tomentosa berry, are used interchangeably at Fan Lau. Fan Lau as well as most of the other Lantau villages were, I suspect, pirate hideouts and it may well be that Pei Kwan Kong may have been a term derived from the time of the Great Evacuation, 1662-1669. For details of the latter see Lo Hsiang-lin, Hong Kong and its Communications before 1842. (Hong Kong 1963, Chinese version 1960) chapter VI,\n\n4 Tuk yuc tung (\"fish poison vine\"). Many cultivators buy an insecticide powder called tuk yue fun (fish poison powder). This powder is usually first mixed with sawdust before application. It is the same powder used by gardeners to rid the lawn of white grubs! This powder too is dusted on the heads of children suspected of having lice in their hair.\n\nPage 135\n\nPage 136",

        "content_text": "CHINESE EMIGRATION AND THE DECK PASSENGER TRADE 85\n\nat the French settlement on New Caledonia, after which the French authorities sent a ship to rescue the survivors on Rossel Island. Only one small Chinese boy was found, whose story was that the rest of the passengers and crew had been eaten by the natives. This was accepted as gospel by the press in Sydney where the boy was taken, although there were some glaring inconsistencies in his story, and it was repeated in the British Admiralty Sailing Directions. Not until thirty years later was it seriously questioned, when its most important critic was Sir William MacGregor, the first Australian administrator of New Guinea. It is now generally believed that, rather than wait to be taken on to Australia and a life-time of labour to repay the inflated cost of their passages, the Chinese had preferred to take a chance in New Guinea. Food, including the highly prized luxury bêche-de-mer, was comparatively plentiful, and life in New Guinea with freedom must have appeared infinitely preferable to life in the Australian goldfields saddled with a heavy personal debt. When the first official census was taken in New Guinea, many Chinese were recorded, of whose origins there was no satisfactory explanation.\n\nAnother notable incident in the history of Chinese emigration, and which had a happy conclusion, concerned the Peruvian ship Maria Luz in 1872. The Maria Luz had left Macao with over 300 indentured labourers for the Peruvian guano islands, and was forced into Yokohama harbour in distress. One coolie jumped overboard and swam to H.M.S. Iron Duke, where he reported that the passengers on the Maria Luz had either been kidnapped or decoyed on board under false pretences. As a result of the publicity and outcry which this caused, all the passengers were sent back to China. Peru had then no treaty relations with Japan, but threatened war unless Japan apologised and indemnified her. The British government, however, warned Peru that any hostile act on her part would invite retaliatory action by the Royal Navy; and the whole question was referred to France, who gave her verdict in favour of Japan. This case focussed public attention on the many unsavoury aspects of the emigrant trade, and also led to the opening of diplomatic relations between China and Japan.\n\nIt is necessary to remind ourselves that conditions in many of the emigrant ships to South-east Asia during the 1850's and\n\nPage 90\n\nPage 91",

        "content_text": "DOGS AND HORSES IN ANCIENT CHINA \n\n61 \n\nof horses\" in Summer, sacrifice to the ma she (1) or earth god of horses in Autumn and the ma bu (✈) in Winter.19 (According to K'ang Ch'eng, a commentator of the Chou Li, the ma she was a spirit who sat in judgement on horses.) \n\nThe Chou Li also tells us that other officials were entrusted with the care of horses. It was, for instance, the duty of the mu shih (**) or Herdsman to supervise the imperial horse pastures and see to it that they were annually improved by burning off the top grass.20 The Herdsman was also required to perform a curious task which consisted of clamping bamboo pins on the ears of any restless two-year-old fillies, a treatment guaranteed to soothe the most restive animal.21 \n\nTo treat sick horses there was not only a veterinarian but also a horse sorcerer or wu ma (4) to assist him. It was the sorcerer's task to diagnose a sick animal's ailment by studying its gait, after which the veterinarian bathed the horse in a herbal decoction (which may have had mildly analgesic properties) before undertaking any other course of treatment.22 The sorcerer also had to be conversant with the sick horse's pedigree in order to sacrifice to its ancestors. If, despite these ministrations, the animal died, one of the two merchants attached to the sorcerer's office had to sell the carcass and return the money to the officer in charge of the corral.23 \n\nThat horses were used both as sacrificial victims and as cult objects may be due to the fact that traces of two completely different cultures survived into Chou times. According to Schindler horses were used as chthonic sacrifices because the Earth Goddess had originally been horse-shaped.24 The author bases his argument on a passage from the I Ching (Hexagram 1 and 2) which states that \"Earth is a mare.\" (This passage may have been responsible for a taboo, current in Han times, against riding mares.25) But in the Shuo Gua section of the I Ching we find a statement to the effect that \"Heaven is a horse and Earth is an ox.\" Obviously this is a relic from a different culture which identified horses with the virile qualities of heaven,26 \n\nDogs and Horses as Sources of Food \n\nIn ancient China it was customary to use as sacrificial victims only animals whose flesh was habitually eaten. Thus, the custom of eating both dogs and horses goes back to very ancient times.",

        "content_text": "62\n\nCAROLE MORGAN\n\nAlthough, as we have seen, horses were hunted as early as the third millennium, there is still some controversy among experts as to whether horses were eaten by the Shangs. Certainly by Chou times the practice of eating horse meat had become prevalent enough to warrant an injunction in the Chou Li against eating bad horse flesh27 and a warning in the Li Chi that the taste of a horse with black hair growing along its spine is no better than that of a burrowing animal.28\n\nIn a book from the latter part of the third century B.C. called the \"Travels of King Mu\" we are told that King Mu, while on a journey through Western China, was offered 300 edible horses by the Chu Tse (✯✯) tribe, 900 by Tsao Nu (✯ ✯) and 700 by the Chih ( ),29\n\nAs for dogs they, along with pigs, constituted the major source of animal protein in ancient China. The Shuo Wen even gives a special character for dog's meat (1) written with the radicals for dog and flesh, while the Chou Li divides dogs into three categories: the tien chuan (□) or watch dog, the fei chuan (ok†) or barking dog and the chih chuan (✯✯) or edible dog.30 With the exception of the liver every part of the animal was considered edible.31\n\nAt the banquets of feudal lords a dish of dog's broth and glutinous rice was considered a great delicacy;32 for Summer dried fish fried in pungent dog's fat was thought to be cooling33 and when dog's meat was prepared as sacrificial meat it had first to be marinated in a mixture of vinegar and pepper.34 (Animals whose meat was used for sacrificial purposes were never referred to by name. Thus an ox was known as i yuan da wu (~✰✰✰) a head一元大武) on large feet; cocks as han yin (4) birds whose cry reaches heaven and dogs as gao hsien ( ‡**) animals used to make ancestor soup.35\n\nThe Emperor was required to eat dog's meat during the first three Autumn months36 and much later dog's meat was credited with the power of reducing fatigue and was recommended for scholars sitting for their examinations.37\n\nBoth edible dogs and horses were considered fit presents for the Emperor and feudal lords, although a pure white horse was deemed unsuitable, possibly because white was the colour of mourning.38 (The writer is more inclined to believe that since white horses were",

        "content_text": "PACIFIC OYSTER INDUSTRY IN HONG KONG\n\n145\n\nrestaurants remained unshucked. This method of transportation is, however, wasteful since the shell has to be returned to Lau Fau Shan to be reused as shell cultch or taken to lime-kilns (†) for conversion into lime (✯). In addition, the stored oyster shells are unhygienic because they smell and attract flies. As a consequence, the oysters are normally now shucked in Lau Fau Shan before they are transported. The shucked oysters are kept alive and fresh in a small amount of sea water. All the fresh oysters sold are consumed in Hong Kong. Transportation from the area of production to the market is rapid; there is thus no storage problem.\n\nThe oysters are usually cooked before being eaten. However, they are normally only half-cooked to retain the flavour and the tenderness of the muscle. It has been reported that the oyster beds at Deep Bay are faecally polluted all year round and that the oysters themselves are grossly contaminated (Leung et al., 1975; Morton, 1975; Morton and Shortridge, 1976), particularly in summer. It is thus safer to cook the oysters thoroughly. A direct solution to this problem would seem to be the establishment of purification facilities within Lau Fau Shan so that all the harvested oysters could be cleansed prior to resale. In this context, the British or American ultra-violet methods of cleansing (Wood, 1969; Morton, 1975) might well be utilised.\n\nIn Hong Kong, the oyster industry, though small, is an important primary producer. It is one of the most productive sources of protein and, in addition, serves as a tourist attraction. The annual production is not sufficient to meet local demand, so that during times when the oysters are of poor quality, other oysters are imported from the beds across the bay, in China. Although there is a good demand for oysters and the bay itself is suitable for oyster culture, with comparatively few pests and predators and with no epidemic disease hitherto described, the oyster industry in Deep Bay is reported to be dying. Production figures appear to be declining (Fig. 2), whilst the value of the oysters remains stable.\n\nVarious factors are possibly responsible for this decline. Long-term fluctuations in the environment or the existence of unknown pests or predators may hamper the production of oysters. But from recent studies on the community associated with the oyster (Wong, 1975), this seems to be unlikely. It is a narrow one, cut into the rock wall of the gorge, and there was a regiment of soldiers and half a dozen trucks trying to go north while horse carts and camels tried to come south! We got through and then the road went on up the river valley (the Pao Ho). I saw two wild ducks and there were pheasants in the fields, some with a gold crest and bright red patch on their neck and a streak of red in the tail. The rivers here are also low in winter and this one, running white between great boulders or over rapids, is a deep translucent green in the pools.\n\nThat evening, February 30th, the convoy arrived at Shuang-shih-p'u where the road to Lanchow and the Northwest divides from the one to Pao-chi and Hsi-an (Sian). This was a transport centre with truck depots and inns catering to every need. We put up at the Chinese Industrial Co-operatives (CIC) Guest House (中國工業聯合協會) where we had five rooms. Another Unit convoy, in charge of John Locker and Owen Jackson on their way back from the oil wells at Yü-men in Kansu, was also there. We spent a day and a half servicing the trucks, stocking up with fuel from the Unit supplies, and then had three days holiday for Lunar New Year. Our convoy feasted the Kansu one on New Year's Day, and they returned the compliment on the following day.\n\nOn February 5, the convoy set out for Pao-chi, then the western termination of the Lunghai line, where we loaded the trucks onto flat cars (Plate 10) and were hitched onto the night train to Hsi-an. Behind these a band of native musicians, youths dressed in gaudy clothes, provide the melody and rhythm. The dragon shakes his head and stamps his feet to the rhythm, the bearers grunt and sweat, the musicians fiddle and bang and blow, the spectators spit and chew, laugh and talk, admire and applaud. The last player disappears round a bend in the street and another procession begins to form itself with much good-natured chaff and chatter. Meantime the dragon processions which have already been sent off wander through the distant fields, and the curious rhythm of the dance rises and falls in every corner of the glens.\n\nSo much we have seen for ourselves, but our kind host, who has lived on the island for many years, tells us that on the great day of the feast, all the small processions meet at the special matshed, where are assembled also some of the local gods, as well as visiting deities who have been brought by the folk from other towns and villages. All these gods are then carried in procession to the Pak Tai Temple to make their how to the occupant. Following this they are carried about a mile to the temple of the Queen of Heaven, the Lady of the fisherfolk, through the streets densely packed with fishermen and townsfolk, and thousands of visitors. At this temple the processions stand aside, and the gods in their chairs of state are raced back to the special matshed. The first god to arrive, even if he arrives in several pieces, brings to his devoted supporters the best of luck during the year.\n\nIn the afternoon the cones are overturned and there is a scramble for the cakes, which are then eaten with the happiest consequences for all concerned. It would be interesting to hear more exactly what these benefits are, for the whole feast looks like an ancient fertility cult.\n\nWe are much indebted in this account to notes jotted down by Mr. A. C. Franklin, and kindly put at our disposal. The opportunity to witness the Moon-cake festival was also due to his kindness. If we have not reproduced all the interesting and suggestive comments which those notes contain, it is because we hope that he will find time to throw them into literary form and publish them. If the family consisted of only five members, all five had to be mobilized: first of all, to grind the beans and then boil the paste. After the paste was hot enough, one member had still to keep heating it to produce the layers of bean skim. Another member carried the products prepared the day before to Kowloon where he sold them to the shops and bought more beans. The remaining members, after finishing their breakfast, had to climb the hills to look for dry grass which they fetched home for fuel. This was the hard way by which our ancestors managed to make a hand-to-mouth living and rear us.\n\nNowadays, we have electricity, motor and transport facilities and the manufacturing process has mostly been mechanized. The kind of hard life that our ancestors once led will never be repeated.\n\nADDENDUM\n\nThe brief account that follows is taken from Peng-chun Chang's China at the Crossroads (London, Evans Brothers, 1936) p.145.\n\nAn example of a type of manufacturing common in the villages is the preparation of tofu, or bean curd. A tofu shop may be seen in nearly every village. In this shop is the mill used for crushing the beans. This mill is run by human or animal power. The beans are ground in the mill and then mixed with water. The liquid, called bean milk, is squeezed from the mass and boiled in a boiler which is part of the shop's equipment. This boiled milk is frequently eaten. If, however, certain chemicals are added to the boiled liquid, it solidifies and is known as bean curd, or tofu. The tofu manufacture represents a rough, everyday type of manufacture common in the villages. It exhibits the skill of accumulated experience, for this food has been common in the diet of the Chinese people for centuries.\n\nTofu is high in protein and takes the place of dairy products and meat in the diet of the people. Recent scientific experimentation in China is endeavouring to find a commercially profitable way of reducing the bean milk to a powder to take the place of imported powdered milk.\n\nChang was a native of Tientsin and presumably is referring mainly to North China. For a recent detailed account from Hong Kong based on field work in 1961 and 1963 see Vol. One, Part III, 27, \"The Bean Curd Maker\" of Cornelius Osgood's The Chinese.         "content_text": "GÖRAN AIJMER\n\nfor wine are used, jiu H, and it's 'sweet wine'. It is hard to tell from the data whether different kinds of wine were used on different occasions. More generally, we may remember that wine is manufactured from rice; in fact, it is rice transmuted into liquid form.\n\n7. Food\n\nFood was sacrificed and eaten on the graves after they had been swept. Again, the lack of detailed data makes it difficult to interpret the presenting of food as a ritual act. Some notes could be observed here. In Yiyang people ate 'stalks and grass', which, being unusual food, probably signified 'non-rice' or 'non-food'.65 We are told that in Anxiang officials prepared 'cattle'. The term may have a more narrow sense of 'beef'. Meat seems to have been paired with rice wine in many sacrifices throughout the area: on the Lantern Festival (in the first moon) in Jiangling, on Earth God Day in Wuling and Zhongxiang,7 on the Dragon Boat Festival (in the fifth moon) in the Yozhou prefecture (around Baling), and Yunmeng #,68 on Zhongyuan (in the seventh moon) in Wuling,69 and on Churia, New Year Eve, in Jiangling, Hanzhou, Jingshan, Chongyang, and Yingshan.70\n\nAgain, in the temple dedicated to General Goan in Mienyang, mentioned above, the offerings on the 13th day of the fifth moon consisted of 'cattle' meat and sweet wine. A chronicler mentions that in Tauyuan, at mourning, there was an 'excess' of slaughtering.71\n\nIf we assume that the wide category of sheng-cattle-indicates that cows, oxen and buffalos, and such bovine animals were of primary interest as slaughtering animals on Qingming (although pigs may have been included in the category), it may be interesting to associate that circumstance not only with the excessive slaughtering which was part of the mourning practices in Tauyuan, but also with the display of a clay oxen at the Lichum 'Establishment of Spring' festival around the 5th of February in the solar calendar.72 In Chongyang the 5th day of the fifth moon was called niu ri ✈ a Ox Day. Then the buffalos or cows were fed, and it was not allowed to whip the beasts or swear at them on this day.73 These practices seem all to have a close link with agriculture.74\n\nThe fact that cattle was modelled in clay seems to indicate that the nature of cattle was earthly. But one thing is quite striking: Qingming is not mentioned, nor is grave worship. Instead we find a ritual period starting at the Equinox, concerned with sowing and marked by the absence of fire in the fields. Then the focus is on the Earth God who receives offerings. People move out of their houses and provide offerings for the ancestors - but how is unclear. At Cold Food the emphasis is shifted to the domestic sphere and to consumption. No fire was lit and cold food was eaten for three days. On the third day of the third moon, finally, people went to the river banks and set afloat small bowls. This may have been some sort of departure ceremony for the ancestors who had received offerings earlier on Earth God Day.\n\nIf grave worship was introduced in the area at a somewhat later stage, there was some option as to when the graves should be visited. If we assume that the sweeping and eating on the graves were linked to Qingming, then Cold Food, which falls on the same day, would be of importance; and, indeed, the latter name is frequently mentioned in the sources. But, on the other hand, the customs of Earth God Day were much more in consonance with the idea of grave visits, and in many places it seems as if the concern with the bones of the dead merged with that day of open air celebrations in the second moon. Thus some of the variation may be due to local adaptation to a superimposed standard Chinese system. Then we can accommodate for some variation within a system which has ritualized the sowing of rice and incorporated grave worship as part of this. But some further factors may have been of additional importance. In the first place I am thinking of the introduction of double cropping. This was not common, and it was late. In the seventeenth century only one crop of rice was grown, but in the late seventeenth and eighteenth centuries great efforts were made by officials to promote the planting of second crops. This meant two sowings, two transplantations, and two harvests in those places which had opted for agricultural innovation. But such new technical arrangements disarranged the traditional semantics of the rice cycle.\n\nAs was mentioned earlier in this essay, Baling is the only place from which we have found mention of the adoption of some sort of system with two crops. One day, when she was working with her husband in the field, her son was nearby as the emperor came riding on a horse. When he saw his nephew, he was surprised, and asked him, \"You know how to read. Can you count the number of paddy shoots your mother has transplanted?\" The nephew said, \"Uncle, can you count how many steps your horse has moved?\" The emperor could not answer, and took away the book that was in his hands. Later, when the child was older (he was about twelve or thirteen years old), he was angry with the emperor for having taken his book away. So he asked his parents to make him a bow and an arrow. The mother thought he wanted them only as a toy. At night, the child asked his mother if the cockerel had crowed. He asked this question several times, and so the mother went outside the door, flapped her arms several times in the way a cockerel might flap its wings, and pretended to crow. Thereupon, the child rose, picked up the bow and arrow, and shot the arrow in the direction of the emperor's residence. The arrow flew away and hit the emperor's bed. After that, the child rode on a horse to see the emperor, to ask him what he could do. The emperor, however, asked the child what he, the child, could do. The child said there were things that he could do. He asked for five bowls of food and five bowls of rice to be put on the table. He hit the table with his hand, and the food and rice jumped into his mouth. He asked the emperor to do the same, but when the emperor hit the table, he could force no more than two grains of rice into his mouth.         "content_text": "The Maryknoll Mission, Hong Kong 1941-46\n\n37\n\nSecretary, Procurator, and all his priests in the other parishes of the City were interned, he did not know where at that moment, but later on he was informed that they were at Stanley, in the prison. That evening our belated supper was eaten in more or less silence, as with guns booming in the distance and the suspense in the air, we did not have much heart for conversation. We retired early, but about eleven o'clock were awakened by the air raid siren, only to find that it was a false alarm. Incidentally, during the hostilities of Hong Kong there were no night air raids. However, after that false alarm, Father Downs in the city, at the Cathedral Rectory, could not get to sleep, and heard the clock strike every quarter of the hour until daybreak. And the next morning at about eight o'clock, the fun began! At that time planes appeared overhead, bombs were dropped at various points and wherever these bombs fell, anti-aircraft guns in the vicinity started barking. A couple of these anti-aircraft guns were set up in a small depression just below the Italian Sisters' Hospital on the hill to the east and south of the Cathedral, and when they began popping we thought they were in our backyard. During the day and those that followed, there were perhaps an average of four or five daily air raids, the targets being mainly gun emplacements, shipping and forts.\n\nHowever, on the very first day, as narrated by Fr. Downs a couple of bombs hit a portion of the Central Police Station, a block or two just west of the Cathedral. Guns were booming over on the Kowloon side and out in the New Territories along the Pearl River estuary where the Japanese landed, having come down the river from Canton. Whether these guns were land or naval batteries, of course we could not judge, but no doubt the shells came from both sources at times. On the night of the second day, after we had retired, the booming of guns seemed to be nearer, and finally we were awakened by a crash which seemed to be in the Rectory. As the booming kept up we were not desirous of making any personal investigation, and as we waited, another crash shook our building, and then another, a little farther away. The next morning we learned that the Japanese were evidently trying to get the range of the anti-aircraft guns just above us near the Sisters' Hospital, for the shells seemed to fall in a straight line; the first struck to the west of us, the second hit the edge of the roof of the house next door, the third crashed through the roof of the Cathedral, cutting a neat hole",

Some started immediately to go through the house, while one, apparently a petty officer of some sort, made signs that we were all to come downstairs. Father Meyer tried to explain to the leader, who knew a very little Cantonese, that this was a religious institution and that we belonged to the Catholic Church. This did not seem to make much of an impression and the Japanese insisted we all come down. We accordingly obeyed and were told or rather motioned to sit down on the tile floor in our front hall, we foreigners at the right and the Chinese, our servants, at the left. The Japanese soldiers looked pretty well tired out. Evidently they had been in the night's fighting, and were accustomed to rough fighting. Over their helmets they had a small net, into the meshes of which they had inserted small branches or shrubs, which certainly went far to make them indistinguishable on the mountains. Evidently they had not eaten much in the past few days, for they immediately began carrying out our food supplies, and eating them on the lawn outside.\n\nAs we squatted on the floor the soldiers, laden with the spoils, passed and repassed us. Some carried our personal effects, others cases of goods from our storeroom. A few carried out blankets and bedding evidently for their wounded comrades. But for the smokers, the straw that broke the camel's back was when they began carrying out carton after carton of cigarettes which many of the men had purchased and had in their rooms. As the Japanese soldiers carried out these cigarettes they would toss a pack or two to the Chinese sitting on the floor with us but nary a pack to the padres; this perhaps to show in what seat the foreigners were now sitting. From time to time packs of army hard-tack were also thrown to the hungry Chinese, and our own tins of milk, fruit and bottles of various things were being sampled right before our own eyes. Not one of us had had breakfast, and it was not until about eleven thirty that some kind-hearted soldier began to think of us and give us a can of cherries. This was passed around among the thirty-five of us, and with two or three cherries apiece the contents soon disappeared. Next a bottle of ginger ale came along, but how far it got I couldn't venture to say; however some of us got at least a swallow. And last but not least were the army biscuits which the British had brought in with them.\n\nWell, all that day we puttered around retrieving what we could, but the soldiers gave no signs of evacuating. Our dinner and supper were cooked outside on our makeshift stove, and we managed to pick up a few cups and dishes for our food. Anything tasted good these days. We slept again on the floor of the chapel, but having been given by the Japanese some British army blankets, we were not so cold that night.\n\nDuring the wee small hours of the morning of the thirtieth, we heard the soldiers moving about in the upper corridors, and when we arose at dawn the last of them had departed, leaving the wreck to us. Our first concern was for saying Mass, and it did not take us long to set up a few portable altars in the upstairs chapel to get ready the necessary requirements for the Holy Sacrifice. Personally I do not think I ever said Mass more fervently, or with greater gratitude to God for His protection and His divine Providence. After breakfast, cooked again in the open, we literally swarmed over the building and like busy bees began the task of cleaning up.\n\nThe office, as said before, had been used as a dining room, and there we found the remains of a seemingly hurried meal, eaten by the departing soldiery. On the table were plates (ours of course) of heaped up rice and other remnants of food. A chalice or two had been used for drinking cups. Stepping gingerly over the debris in the corridors, each one returned to his room to take stock of the situation, and to ascertain as far as possible how much and how many of his possessions had been looted. Generally speaking, only those things which a soldier could use were missing, such as shoes, some articles of clothing, money (although some gold currency was untouched), watches, small clocks, cameras, eye glasses, razors and toilet supplies.         "content_text": "202\n\nTo\n\nand\n\nsites were also rendered ineffective by the emperor's golden pen. My knowledge, the elders knew of four sites. One of them was on Tiu Chung Chau at Kau Sai in Saikung. The fungshui of this site was ‘a golden bell hanging on a silk thread'. Every year at the Double-ninth festival, nine buffaloes came to worship at the grave; there was also the sound of a bell being struck. A second site was at Yuen Chau Chai at Kei Leng Ha Village. The fungshui name was 'the general comes down from his horse to drink three cups of wine'. In the middle of the sea, there is Wu Chau (with the adjacent island of Sam Pui Tsau) that resembles a pig, three cups of wine and two cups of tea. Another site was at To Tau Tsui at Wu Kai Sha, which is opposite Nga Chau (usually nowadays called A Chau) in the Tai Po Hoi. The fungshui name was crows going into the ocean. Legend has it that in the old days a mud embankment connected Wu Kai Sha to Nga Chau which sank into the sea after the emperor put down the dragon. The embankment has not been seen again. One more site was on Ap Chau opposite Kat O. The fungshui name was 'precious duck going through the lotus'. The legend is that Ap Chau used to be able to swim between Sam Mun Kan and Mirs Bay. Later, it was blocked by a duck pole, that is, the place currently known as Hak Ngam Kok. After that, when paddy ripened in the Yim Tin Village area near Sha Tau Kok, there was no rice grain on the stalk, because it was all eaten by the duck. After the emperor put down the dragon with his golden pen, the head of the duck... and then there was grain again.\n\nI know about the fungshui of only these four grave sites.\n\nhe cut off\n\nPassage 2\n\nRecorded by Ho Kei Fook\n\n\"An extraordinary person saw that Huang Hsiao-yang [rebel in the Canton area in the early fifteenth century] had features fitting to make him emperor and gave him a bamboo shoot to plant at home. When the 'bamboo grew to the height of his brows', he was supposed to be able to make an arrow out of it which he could use to kill the emperor with and thereby take over the throne.         "content_text": "NOTES AND QUERIES \n\nA HAKKA WEDDING IN HONG KONG, MAY 1979 \n\nDuring our visits to the market in Sai Kung, we had made the acquaintance of a lady in charge of a haberdashery shop, a Mrs. Ho and her daughter Ling. Knowing of our interest in Chinese customs and culture, they invited Josephine, myself and my husband to attend the wedding of her nephew which was to take place in their village in the Sai Kung peninsula the following Saturday. We met that morning in the market to pick up Mrs. Ho and Ling and then drove out to Tong Ha Yeung, a small village past Pak Tam Au, at 10 a.m. \n\nWe arrived about 10:30 to find a feast already in progress. A row of five Hakka houses facing the main road had the area in front, which was in previous years used for drying rice, now occupied with square wooden tables with benches on four sides. Above the tables was a canvas awning supported on bamboo poles to keep off the sun, and as it turned out, the rain too. The relatives of the bride and groom, and the villagers from the surrounding 7 villages had already assembled and were in the middle of a sizeable meal of beef, pork, tripe, rice and soft drinks, eaten to the accompaniment of \"Grease\" played loudly on a cassette player. \n\nThe food was being cooked in two huge woks which had been built into a clay brick oven with a roaring wood fire going underneath. Several men were tending the fire and cooking the food. The woks, which had been built at the entrance of the village under the awning, had been prepared yesterday, and would be dismantled tonight after the celebrations were over. \n\nRichard and I had taken great care in the choice of our clothes, knowing that certain colours are considered unlucky, such as white, the colour of mourning, and blue. ... However, no one else there, at least of the younger generation, had taken notice of this custom as most were dressed in blue jeans, white shirts or tee-shirts, etc. Of the middle-aged women like Mrs. Ho, they were wearing their best clothes, Mrs. Ho in a brown silk jacquard sam fu which had a centre front opening fastening with frogs, and a set of jade earrings, ring and bracelets. The older women were in the customary black cotton sam fu, often with an apron, and a black cotton bau tow.\n\n¦\n\n!",

        "content_text": "FOLK MEDICINE IN BORNEO. DIAGNOSIS AND CURE\n\n17\n\nthe danger of illness; and both have techniques for diagnosing and for setting things right when they go wrong. For the Melanau the most important way of avoiding danger is to follow the adet; but if he fails to do so and gets into trouble, then there are experts who will guide and help him. If, in spite of the guidance of the adet and commonsense, combined warnings from omens and dreams, he does get into trouble and does not immediately die, then he can resort to mediators who are expert in diagnosing or guessing the cause of the trouble, and in prescribing the correct expiation and remedy for restoring the balance of nature and right relations among the different orders of being. On the whole the Melanau, unlike the western doctor, does not look for the cause of an upset in the economy of the body itself, though their first course of action may be to do just that. A man who feels unwell probably goes in the first place to a herbalist who can supply medicines that will, he says, cool or heat the body. He may attribute the illness to what we would call natural causes, and point out that the patient has eaten unwisely, or he may tell an anaemic woman after childbirth that she has lost her blood to the child and that the birth has therefore left her subject to 'coldness'. On the other hand, he may attribute the trouble to 'wind' which is always present in the air, and which through human folly or some accident weakens the proper relationship between the body, the soul, the emotions, and life.\n\nA visit to the herbal doctor is only the first step, and if he cures the condition, well and good. The most general cause of misfortune and illness is thought to be disrespect or disregard of proper behaviour in one or other of its many forms. To mock the natural order in any way, as, for example, by laughing at or by teasing animals, puts everybody in grave danger; for the angered spirits who act as guardians of order will certainly send down thunder, lightning, and hail and maybe even turn a whole village into stone. Or again, a man who unnecessarily spears a frog while his wife is pregnant puts his unborn child in danger of being born with deformed features and no control over its orifices. But punishment for disrespect in the form of misfortune or illness is more usually linked to a particular act of disrespect to another being rather than to the order of things as a whole. A man who goes into the forest and puts his foot into a hole may well have disturbed the home of a spirit; and he will not be surprised if some days later he develops sores on his leg. Or if he cuts down a tree without offering an apology to the spirit who may dwell in it, or if he ignores",

        "content_text": "320\n\nBOOK REVIEWS\n\nThose who had worked in the Party and government organisations, as well as in cultural, educational and scientific research institutions in the late 60s and early 70s will still remember that many of these organisations were either closed down or amalgamated when the country went in for cadre schools in a big way. Quite a large number of people working in organisations that were retained, indeed the greater part of them, were sent down to cadre schools for re-education. Trains were used to transport furniture, luggage and other goods and materials to places all over China where these people now had to make their homes. In the chapter entitled \"Going Down to Cadre Schools: A Chapter on Separation\", one can find vivid descriptions of this. In the process of moving, much damage was done. Take, for instance, the School of Philosophical and Social Studies where Mr. Qian and Mdm. Yang were staying. As the school was to be handed over to some other units, it could not but take to the Yanjing paper mill all the reference material amassed and compiled over the years, only for it to be turned into paper pulp. Books and other reference materials left behind were piled up in the corridors, bitten by rats and worm-eaten. What a pathetic sight, especially to those like us who have spent most of our time studying! How sorrowful we were as we could do nothing about it!\n\nYet it was even more distressing to see time being wasted and talent trampled on. In 1970, sometime around the Spring Festival, I went to a cadre school in Liyu Zhou near Poyang Lake, where I spent 19 days visiting friends and relatives. There I saw many highly-respected teachers from the famous Beijing University doing manual labour in a wasteland where snail fever was widespread. Grey-headed scholars slept in haystacks and ate in the open. After work, they still had to attend study classes. Very often they were wakened in the middle of the night or in a violent storm to undergo military manoeuvres. They had only chaff and wild herbs to eat on New Year's Eve and were told to chant quotations from Chairman Mao. While I considered myself lucky to belong to a cadre school where living and working conditions were much better, I was, nevertheless, greatly saddened to see people of such talent being wasted. I once wrote a couplet in doggerel style for myself and fellow workers:",

        "content_text": "222\n\nthousand years of continuous cultural development: it includes the present but only in the perspective of the past.\n\nTo explain the persistence and magnetism of Chinese traditional culture is too great a task for this note (and, I fear, for this writer too), but to find examples of its strength is not so difficult. The first Chinese migrants to the countries of mainland and island Southeast Asia arrived there centuries ago. Some assimilated, but many did not, with the result that there have been recognisable Chinese communities in all these countries up to the present. They have been discriminated against, massacred and evicted over the years, but they have tenaciously stuck to their Chineseness. In Britain the Chinese community has a much shorter history, but there is a great flourishing of special classes in Chinese language and writing which testifies to the eagerness of parents to pass on their cultural influences to the next generation. And the overseas Chinese maintain their links with the homeland in much the same way as the people there maintain their ties with the past.\n\nThe Chinese have shared their homes with the ancestors, eaten picnics on their ancestors' graves, lived with continuity of history to an extent that the West cannot match. While it is true that twentieth century international urban values have begun to intrude upon this sense of continuity, it also must be said that contemporary ways of thought and behaviour are still greatly informed by traditional culture. It is through studying these traditions that some kind of baseline for understanding the present can be established.\n\nOddly enough, it has mostly been the nineteenth and twentieth century foreign interest in China which has documented traditional culture best. Before Western-inspired educational reforms brought literacy within the reach of the majority of the population, China's literate few constituted an elite which not only occupied a separate social position but which also only wrote about itself and its elite activities. By this sort of practice most families got some manure, although the latrine owner would be able to manure his fields more heavily than his poorer neighbours.\n\nObviously also, a successful latrine demanded a heavy and regular supply of ash. Usually the latrine enclosure included incinerator grounds where those very few articles such as worm-eaten wood and rotten rope, no longer usable, nor able to be converted to pig food or dog food, were burnt by the latrine owner for the village. This provided one source of ash, as did the ash from the domestic stoves. Latrine owners were always short of ash, as household ash from domestic stoves was a valuable fertiliser in its raw state, and would be used as such by poorer families and not handed over to the latrine owner (it was used in much the same way as prepared powdered manure from the latrine). In some cases, the latrine owner would send his children out to cut down weeds and unprofitable wood to burn on the incinerator ground to increase the supply of ash. Ash was one reason why the mountains were burnt off each spring: while the wish to deny shelter to tigers was certainly present, burning off was always followed by the youngsters of the village going out to the mountains to sweep up the ash-rich dust into baskets for use either as fertiliser in its own right or for adding to the latrine store.\n\nLatrines usable for defecation could not be so simply provided in the fields as could simple urinals. In most cases, villagers would return to the latrine on the outskirts of the village. However, a few simple bamboo and matting sheds were provided in the fields. These were usually provided on stilts over water so that the feces would drop through gaps in the flooring into the water. This was most frequently done by owners of fishponds (the raw feces forming excellent fish food), or by owners of a whole series of fields, who would be certain to benefit from any latrine built over the canal that carried irrigation water to their fields, the movement of the water diluting and so removing the danger of the rawness of the manure.\n\nThe richest of all forms of fertiliser from human wastes, however, came from the fishing boats. The grazing food chain begins with microscopic floating algae (phytoplankton) and algae which are attached to surfaces. These plants are eaten by various animals which exploit part of the energy and nutrients they contain. By a sequence of “eating and being eaten” the energy and nutrients pass eventually to the animals that constitute the produce of the kei wai and support their growth and reproduction. Thus the grazing food chain exploits solar energy and the nutrients present in the water. It should be remembered that the waters of the estuary are comparatively rich in nutrients.\n\nA second basis for production is the detritus food chain. In this context, \"detritus\" is the dead material in the kei wai: the remains of plants and animals that lived there, and any organic materials that may enter the water. The origin and fate of these materials are described in Part II. Broadly, however, they are colonized by bacteria and fungi which decompose and change them. Fragments of detritus, including the bacteria and fungi, are eaten by small animals and the energy they contain eventually passes to the larger animals that are the produce of the kei wai. Thus, any organic material added to the kei wai is a \"supplement\" of energy and nutrients that is exploited via the detritus food chain. One such supplement is the leaves of mangroves and associated plants that fall into the water. Moreover, the importance of such materials was recognised in the traditional practice (described to us by an elderly kei wai operator from China) of depositing soft, easily decomposed leaves (eg. Solanum nigrum) into the kei wai.\n\nHarvesting\n\nThere are essentially two kinds of harvesting procedure, which may be called the \"shrimp harvest” and the \"fish harvest”; both depend on tidal movement. Shrimp harvests are carried out ten times per lunar month on days 1-5 and 16-20 (the days of the highest tides) from the third to eleventh month inclusive, so that there are 90 such harvests per year. One important result of this change was that most had also given up working in pairs. One mechanised junk and a sampan were now enough to shoot and haul the net. The quite far-reaching effects of this change on economic and family organisation are described in the following chapters. It almost certainly facilitated the move ashore. The 37 purse-seiners based upon Kau Sai in 1953 and working then in pairs (i.e. 18 pairs, one family owned an extra junk) had been reduced in 1970 to 12 single working boats.\n\nRhythms of living: the daily routine\n\nFor the purse-seiners the work of the day began a little before sunset. In 1970, just as twenty years before, the evening meal was eaten at about 5.30 p.m. in summer, earlier in winter. It was usually cooked by the most junior wife in the family and eaten en famille under cover of the forʼard shelter or in summer on the open fore-deck. Where in 1970 part of a family lived ashore, the meal might be cooked in either place, and eaten perhaps in two sittings. Immediately it was finished and cleared away, faces and bodies were washed, and with the minimum of fuss the fishing junk, with its partner if it had one, was off to sea. The further afield they planned to go the earlier they would start, but one noticeable result of mechanisation has been a generally later start in the evenings. Under sail all the purse-seiners would have left the anchorage by sunset, with engines they quite often stayed until it was already dark. Once they had left, the anchorage seemed very quiet.\n\nFor the dwellers on shore the evening meal used to be a little later, but by 1970 the later start to purse-seining meant that there was now little difference between mealtimes ashore and afloat. This is the working platform from which fishing operations are conducted, fish and nets both being stored just below. Usually this open deck is also used for storing things: lamps, sinkers, landing nets, fish tubs and baskets, coils of rope, often a sampan when not in use. The wooden partition immediately aft of the main mast has sliding doors on either side. At New Year these are decorated with new paper Door Gods, and often lucky couplets. The main function of the partition is to provide support for the forward end of the removable cover which can be spread between it and the roof of the wooden cabin further aft again. These covers are usually made of oiled cloth or canvas stretched over bamboo slats. They are easily rolled up or down on either side and can be removed altogether if necessary. Similar covers project beyond the cabin roof towards the poop. It is, of course, impossible to stand up under the covers, but the space is perfectly comfortable for sitting, with about a foot to spare overhead. To move from one part of the deck to another one must either step outside and walk along the gunwale or the catwalk, or crawl through the doors. The bamboo slats which are always on the inside of the covers are useful for hanging things from.\n\nThe small wooden cabins are peculiar to the purse-seiners. Though they are not unknown on some of the smaller craft in other places, no other Kau Sai junks had such cabins, and I was always told that this was because the purse-seiners carried more people aboard and were more likely to hire non-family members as additional crew. In such cases, and indeed usually, the cabin was the sleeping place for unmarried girls. The cabins had sliding doors fore and aft. Some of them were fitted also with sliding windows at the sides. Inside most cabins on the port side was a small cupboard with doors which opened to reveal the family's ancestral shrine. They boarded with Mr. and Mrs. Malcolm, with Mrs. Malcolm handling the housekeeping. The confusion has been compounded by the Fukienese themselves when over the years they unconsciously accepted all deities bearing the honorific Wang Yeh as protectors from epidemics.\n\nNOTES\n\nThe term Wang Yeh is best translated perhaps as 'The Excellencies'. It was a title given to imperial princes or lords, and interestingly it was also a term used by robbers for their brigand chief. See Plates 9-14 for illustrations to this article.\n\n2 There has long been controversy whether the Pestilence Wang Yeh are shen (Supernatural beings, spirits or deities) or kuei (shades of the human dead and pejoratively used for ghosts, spectres and demons). One god carver in Singapore explained that Pestilence Wang Yeh are \"half-deities\", (pan shen) that is half-shen and half-kuei. However, whilst a number of Pestilence Wang Yeh have ferocious faces, the great majority are portrayed as standard deities with no indication of demonic characteristics. An elderly and authoritative Fukienese god carver in Singapore explained in hushed tones that the Pestilence Wang Yeh are neither gods nor demons, are feared but not revered, and not only protect against plague but also cause it. They are, he repeated, semi-deities from the lower echelons of the bureaucracy of the Afterworld who do not like the human world and therefore cause trouble and bring calamity and misfortune. However, if prayed to they are quite prepared to care for devotees who seek protection. For this reason, more often than not the scale of devotion and offerings to the Pestilence Wang Yeh is greater than that provided to more powerful but orthodox gods.\n\nE\n\nDoolittle J. Social Life of the Chinese 2 Vols: New York: (1865).\n\nA god carver in Singapore suggested that Pestilence Wang Yeh have been given surnames so that no particular surname group is left without a specific deity to worship.\n\nThe only time that all images can be guaranteed to be on their altar in their temple is during the temple's annual festival.\n\nThe altar of Chu Wang Yeh in a temple in Lukang, Taiwan was destroyed by a flood some fifteen years ago. Of the three Wang Yeh images in the temple at that time (Chu, Ting and Nieh) only one image, that of Chu, was recovered. Although a new temple has been built for the three but only containing one image, the one of Chu recovered from the flood, devotees have largely stopped away. They seem to have lost confidence in deities who were unable to protect themselves against disaster.\n\n7\n\n**At Cheung Chau Island in Hong Kong in the afternoon of the third day (of the chiao festival of ritual purification held every ten years) a ('paper boat') ritual to chase away the Demon of Pestilence is performed. A Taoist issues orders to a Heavenly Envoy to carry off the boat and puts the Demon of Plague on a boat and leaves it in the outer seas. The Heavenly Envoy, like the King of Ghosts (Yenlo Wang), has a fierce-looking face. It is an image of about one metre high and the boat is a small one of about one and a half metres long. A Taoist lifts the Heavenly Envoy to a stage in the matshed theatre and chants a question-and-answer song which instructs the Heavenly Envoy. Having finished that, the villagers then put the Heavenly Envoy into the boat loaded with offerings.         "content_text": "79\n\nCommandant of the near-by Gendarmerie post promised us protection, he took no steps to implement his promise, and we had a number of invasions from parties of Japanese soldiers, on and off duty, sometimes searching for arms, sometimes frankly looting watches, jewellery and other small valuables. My wife had a polite but firm way of dealing with these intruders, and in the end they got nothing from us but some cigarettes.\n\nOn January 3rd Mr. Gimson (the Colonial Secretary) and Mr. Alabaster (the Attorney-General) came up the hill to find out what had happened to us. They told me that they had spoken to Mr. Yano (who had come back to Hongkong temporarily as Consul-General) and the Gendarmerie people about us and the other Embassy and Consular personnel who were in Hongkong (Mr. and Mrs. Martin, Mr. and Mrs. Rich, Evans, Herrett and Miss Howkins) and we were to be given special consideration. This was comforting but in the event did not mean very much as there was the usual confusion between the different Japanese authorities, none of whom seemed to pay the slightest attention to the others.\n\nThen on January 5th notices were posted up in different places instructing all enemy aliens to report at the Murray Parade Ground between 10 a.m. and noon for internment. The notice said they could take what luggage they could carry in their hands and that they must leave the rest of their property in charge of some responsible person. This notice only came to our knowledge on the Peak at 9 a.m. People didn't know what on earth to do. If they started off immediately, walking down the Peak, they could get to the Murray Parade Ground in time. But there were old people, babies and invalids. Most people thought it would be dangerous to disobey a peremptory order like that, and they struggled down the hill as best they could, taking a suitcase or pushing a pram and abandoning everything else to the looters.\n\nFor my wife and myself there was no problem as we couldn't walk, so we decided to stay and hope for the best, and a good number of others followed our example. As it happened, things turned out all right, as Sir Arthur Macgregor called later in the day to say that he had arranged with the Gendarmerie that the people still on the Peak might remain temporarily but must be ready to move at a minute's notice. He had an image of her carved and placed on the altar. This was transferred some time during the mid 1960s to another small shrine within the same temple and again her image stood alone but this time she had under her shrine a cardboard box which contained, according to the temple keeper, an embalmed parrot. The elderly nun claimed that it was Miss Liu's pet. The image and parrot remained until 1983 when the temple was refurbished and the image disappeared for a while. In 1986 it reappeared on the family altar in the rear of the large Buddhist temple next door, dedicated to the Liu family. Her image was now draped in red silken robes and somewhat strangely was labelled Miss Lin. She still held the miniature handbags but the parrot was nowhere to be seen, and the temple staff denied ever having seen or heard of a stuffed parrot. They confirmed that her name was Lin and not Liu but were unable to say why she was now on the Liu family altar in the Buddhist temple. And there she remains, last noted in 1989 still on the Liu family altar.\n\nA cult, that of 'the Prince descended from the Dragon', Lung-shih T'ai-tzu, was established in the mid-1960s in the northern suburbs of Kowloon before being transferred to Lo Wai above Tsuen Wan in the New Territories. It is a piggy-back cult dependent upon the local Cantonese major cult of the Dragon Mother, Lung Mu. The story begins with a boy, Huang Hsin-tsai, born in Shamshuipo, Kowloon, in 1949, the son of refugees from Canton. His parents died soon after they arrived in the Colony leaving him in the hands of the lady who now runs the new cult temple. In 1960 the youth, now 11 and still living with the lady in Shamshuipo, fell ill with swollen legs and abdomen. She nursed him carefully back to health but in 1962 he was thought to have eaten something which did not agree with him and, despite a visit to the Wong Tai Sin Temple, he died. Accused by her neighbours of neglecting the youth she was exonerated by him when he appeared to her in a dream to explain that he was now the stepson of the major deity, Lung Mu, and had the power to cure on her behalf. Once a year thereafter he provided the lady with a large basin of very tiny pills for her to distribute to cure people's ills; he also appeared to her in dreams to help solve difficult problems put to her by devotees. The lady, now the temple keeper, has a number of elderly ladies to help run the corrugated iron and brick temple which she has had built near his grave.",

        "content_text": "236\n\nThe Dairy Farm Ice and Cold Storage Company Limited\n\nThe supply of ice for the preservation of food is obviously important in the tropics. George Wingrove Cooke, correspondent for The Times, in 1857 provided a vivid picture:\n\nIn Hong Kong and Shanghai, a dinner table in the summer season is a melancholy spectacle of spoiled food. The creatures to be eaten were necessarily killed the same day, and the tough tissues are as hard as death stiffened them.”\n\nIn the 1850s, large expatriate households often owned at least one cow, and a block of ice bought from George Duddell prevented the milk from going sour. The selling of ice was one of the earliest trades in Hong Kong, and the first consignment of ice was imported by Jardine's in 1843. The Ice House Company was established in 1845. The price fluctuated depending upon the season and the demand and varied, in 1849, from three to six cents a pound. The ice was stored in a specially constructed building at the corner of Ice House Street at the southern side of Queen's Road. Importers often lost money. Although the Tudor Company imported ice from North America in the early days, by the 1870s ice manufacturing apparatus was shipped into Hong Kong, and, in 1874, the Hong Kong Times reported the ice making establishment at East Point was completed. In 1881, the Hong Kong Ice Company was founded with its headquarters at East Point.\n\nLater the Hong Kong Ice Company was taken over by Jardine's, although Butterfield and Swire was the first company to diversify into selling Australian butter, and, later still, frozen foods including poultry, pigs, and the provisioning of ships. B&S was also the first to sign a contract to supply the armed forces. The frozen food business was taken over from Butterfield and Swire, by Dairy Farm, in 1904.\n\nDairy produce\n\nIn those early days milk was obtained from native buffaloes and a few sickly cows. Then, John Kennedy, a veterinary surgeon who died in 1902, imported cows from Britain, and, in 1880, the dairy (established 1856) stood next to the Horse Repository close to where the Peak Tram is now situated in Garden Road.         "content_text": "239\n\nBoswell (1815 to 1860), a graduate of Edinburgh University, who set up in private practice (previously owned by Doctor Anderson) in Macau in 1845. He was a physician and his wife, Elizabeth (née Stedman), joined him the following year. Watson was also an amateur artist and a friendship with the famous George Chinnery lasted from 1845 to Chinnery's death in 1852.\n\nWatson wrote to his sister in Scotland, in 1848, about Macau:\n\n“Counting ourselves, there are just four families and one or two Americans and French. There are Portuguese of course, but I do not class them as foreigners as it is a Portuguese settlement.”\n\nLife out East for Watson meant 14 years of hard work, ill health, and a constant struggle to make enough money for him and his family to go home. Nevertheless, in Macau he was surrounded by a happy family; he lived (as he phrased it) in a “sweet abode the prettiest spot on earth with a spacious open terrace and a wonderful view.”\n\nWatson sold his practice to a Doctor B. Kane (it took time to dispose of it as Macau was on the decline), and he moved to Hong Kong in 1856 where he became part owner of the Hong Kong Dispensary. His rent for a house on Queen's Road then was $1,200 a year. Watson was also involved with the Victoria Dispensary but this closed in 1857 because of lack of business. It appears there were too many British doctors competing for custom. Watson was said to operate the most successful practice in the Colony.\n\nIn 1857, he was closely involved when patriots of China attempted to poison Europeans by putting arsenic in the bread at the Ah Lum Bakery. He managed to rush home to warn his family before they had eaten breakfast. Fortunately, because the amount of arsenic was excessive, it induced vomiting and nobody died. To the intense annoyance of the European community Ah Lum was acquitted for lack of evidence.\n\nWatson sent his family back to Britain in 1857, and he himself returned to Scotland by the overland route (by ship to Port Suez,",

Korai Kitao) of the European influences in the portrait of Confucius standing with a temple of learning in the background is very interesting, the suggestion that Confucius is holding his own spirit tablet (pp. 271, 274, and 276) may be worth further investigation. The author's running criticism of the translations of the Ta-hsüeh and Chung-yung gets in the way of his presentation of Jesuit views and interpretation. One wonders why he did not include the Lun-yü in his discussion, particularly since Leibniz was particularly fond of this work (pp. 287-88).\n\nChapter 9 is devoted to the writings of Fr. Bouvet who arrived in China in 1688 and significantly revised the content of accommodation by discarding Ricci's Confucian-Christian synthesis in favor of a 'Chinese-Christian synthesis' focusing on the pre-Confucius portions of the I-ching. The author gives a clear picture of the different social and political circumstances under which Ricci and Bouvet laboured and how this influenced their approaches to accommodation. He shows the impact of Hermetism on Bouvet's fascination with and interpretation of the hexagrams of the I-ching as hieroglyphs which encoded the ancient and pristine religion of man. The discussion of the dissemination of Bouvet's views to Europe through his correspondence with Leibniz is most interesting, though the reading is somewhat tedious.\n\nChapter 10 brings down the curtain on the 17th century and the Jesuits with an examination of the extremist views found in the new accommodative compositions of Le Comte and Le Gobien which brought the Rites Controversy to a head and provoked the impeachment of their works in Paris at the Sorbonne in 1700. Indeed he belonged to that world.\n\nBeaton was an extremely talented man - a man of the theatre (as stage designer); and of films (as artistic designer). He was also an extremely brilliant portrait photographer of celebrities - politicians, film and stage stars, beautiful aristocrats - and a sharp autobiographer.\n\n―\n\nOxford University Press have, indeed, performed a public service in re-printing these two books, products of the propaganda arm of the Allied War effort in World War II. They capture in words and pictures the exotic and heroic backdrop of places and people - the military, of course, but also the peasant men, women and children of the two main theatres of war in the Far East, South East Asia and China. The words of Beaton's travel diaries and pencil sketches provide marginal observations to the photographs which, in most cases, \"speak for themselves\" in usually the direct language of propaganda. (However, it must be admitted that exposures of the manly heroic breasts of the soldiery record as well Beaton's sexual ambivalence, which doubtless lies at the heart of his creative genius).\n\nIt is interesting to note that at the time, in 1942, when these War Correspondent's despatches were being executed, Beaton was anguishing over the artistic dilemma of whether to carry out the assignment, principally as a photographer war-artist, or whether to pursue his more artistic endeavours.\n\nIn conclusion, it is perhaps unfair to Oxford, when they have done a very good job with an introduction by the Keeper of Photographs at the Imperial War Museum, London, illuminating the context of these now exceptional picture archives of the war - for this reviewer to feel a slight pang of disappointment with the reprints when compared with the originals.         "content_text": "86\n\nLike the visit of the Philadelphia Orchestra in 1973, the significance of the BSO's tour lay more in political consequences than in artistic accomplishment. Though the quality of the BSO's first Beijing concert was controversial to some Americans, due to some flaws in performance, all of its four concerts in China were fully attended and two of the three in Beijing were transmitted by China Central Television (CCTV). The media, musicians, music critics and journalists all offered praise. The atmosphere around the BSO's visit was so warm that the U.S. ambassador claimed the event pushed U.S.-China relations 20 years ahead.\n\nWhat made the BSO's trip different from that of the Philadelphia Orchestra in 1973 was that, though overshadowed by political significance, this tour did bring a chance for Chinese artists to exchange artistically with their American guests, due to the improvement in China's political and cultural environments. By 1979, many artists in China had returned to their former posts. Artistic activities were normalized to a significant extent. Artistically, the BSO's visit generated several concrete results: the Central Philharmonic Orchestra performed with the BSO under the baton of Seiji Ozawa; two of China's most prominent musicians, Liu Dehai and Liu Shikun, toured the United States along with the BSO when it went home in March 1979 and performed with the BSO in the United States; in December, Seiji Ozawa came to China again and conducted the CPO. This event was thus successful both politically and artistically.\n\nThe impetus of Sino-American cultural exchanges resulting from the BSO's tour to China was reinforced in August 1979 when Vice President Mondale visited China and signed the first implementing accord under the cultural agreement. In his visit, Mondale praised Deng Xiaoping's visit to the United States in January for resparking the friendship of the American towards the Chinese people. This atmosphere of Sino-American cultural intimacy created by top political leaders received a new impulse in 1980 when the two governments exchanged high-level cultural delegations. In July, Chinese Vice Minister of Culture Liu Fuzhi visited the United States and the USICA director John E. Reinhardt returned his visit in October. In the latter's visit to China, both parties expressed hopes for more high-level exchanges, and confirmed the policy, agreed upon in Liu's earlier visit to the United States, to encourage and support private sector activities in cultural exchanges.\n\nTraditionally, China's cultural relations with Western countries have",

In China, therefore, organs are often obtained from executed criminals.\n\nIn this study the three sisters cried bitterly when informed an autopsy would be carried out on their mother's body. They were relieved when the authorities relented. The three blamed themselves because the mother was alone at the time of the heart attack. A soothsayer, however, said that nobody could have saved her. If she had been taken straight to hospital at the onset she would have died just the same. Because of her age and the hour of death it was prophesied the deceased would go to heaven.\n\nThat the dead person had not eaten that evening before death was construed as a good omen. Missing the meal signified she has left everything behind for her children. However, she was in the habit of drinking from a special mug. This had disappeared. It was assumed she had taken it with her. That three months before death she had given a friend a piece of jade and had told her: 'I may not be here for your next birthday,' was repeated frequently by mourners.\n\nIn her early thirties, influenced by eldest daughter, mother had been baptised a Catholic. But the attractions of a combination of native Taoism, Buddhism and folk religion were too great. By the 1960s, mother was no longer practising Christianity. She never expressly told relatives why she left the Church. It was probably because, to a very Chinese person who spoke no English, Catholicism was too western; in spite of the Church adopting a few Chinese customs, such as three bows to a deceased's photograph and the 'last glance' at a funeral. Many quote the saying: 'One Christian more is one Chinese less.'\n\nA few hours after death, the mother's spirit, which left the body as visible vapour, was in limbo wandering about'. Depending upon deeds performed on earth there are six possible 'destinations': hell, heaven, and becoming an animal, a ghost, a human again or a buddha. Everybody possesses a number of spirits, one of which first descends into hell (described as dark and yin) to await sentencing by 10 judges. There the spirit is tried, punished and purged. Those who have committed excessive evil spend longer in purgatory before going to heaven (seen as bright and yang). People can later be reborn as children, or, if sinful, as animals.",

A short ceremony was held at 'Pine Shade Hall' with two Buddhist nuns in attendance. Pine is an emblem of longevity.\" It frightens away evil, such as ghouls that prey on corpses.\n\nLater, a meal with three tables (about 12 people to a standard Chinese round table) was provided at a nearby restaurant. A place was filled at intervals. It was the first time relatives had eaten meat for two days.\n\nIt is bad luck to return to the funeral parlour on the same day (to retrieve something left behind, say) and it is not propitious to go straight home. One should 'leave' the bad luck elsewhere. All close relatives, however, were given a piece of bright red cloth, about eight inches square, cut from the shroud. This they still keep as souvenirs.\n\n28\n\nBecause of congestion long funeral corteges with pedestrians, some in good spirits, and close relatives and professional mourners weeping unashamedly, are no longer allowed. Up to the late 1960s when these were still common, an elaborately carved, nine-foot high funeral chair with a portrait of the deceased would lead the procession followed by the hearse.29 Large bamboo and wicker frames covered with silver and blue papers and flowers, with characters reading, for example, ‘Funeral of Wong Family', and describing the dead person's outstanding characteristics, would also be shouldered by coolies or transported on tricycles. The names of the three genial Gods of Happiness, Wealth and Longevity, Fuk, Luk and Shau, would also sometimes be displayed as would names of donors. Chinese bands, some engaged by friends to proffer condolences, played western hymns: like Abide with Me, or pop tunes such as Polly-wolly Doodle all the Day. Paper scatterers left trails for souls to find their way back home.\n\n28\n\nThe cortege of Kwok Acheong, who died in 1880, was supposed to have taken one hour and 13 minutes to pass. The author recalls a quarter-mile long cortege in 1956, with 16 separate bands and musicians' uniforms ranging from white-waiter-style, to Salvation Army blue, to Confederate grey. The procession completed one circuit of Happy Valley before stopping at the then Colonial Cemetery gate. On such occasions newspapers recorded, \"The funeral passed the Monument at such a time.\"",

        "content_text": "118\n\nThis obelisk, now in the Government Cemetery, stood then at the junction of Queen's Road East and Leighton Road. It commemorates officers and men of HMS Vestal who, in 1847, were killed, drowned or died in Hong Kong.\n\nCremation\n\nIn this study cremation took place two days after the funeral service because the previous day was inauspicious. Only close family members sat in the hearse accompanying the body to Cape Collinson Crematorium. The ceremony was simple. All relations made three bows, each of the three sisters poured one cup of rice wine which was placed together with food on the altar. The dead person's 'spirit shrine', made of rattan and paper, was burned. The family then crossed back over the Harbour to the Buddhist Hall to pay respects. There a group of lay nuns, who addressed one another as 'brother' (兄弟), chanted mantras.\n\nAlthough until AD 1370 bodies of Buddhist laity were frequently cremated3, the Han Chinese have a long tradition of burial with human remains returning to nature and affecting feng shui. The body should remain in contact with earth, it is traditionally believed. The final resting place should have good soil, luxuriant trees and grass. This belief is still strong in some quarters. To beat an April 1st, 1993, deadline, after which all corpses in Jiangsu Province have been cremated, 40 old people committed mass suicide in March so that they could receive a traditional burial.\n\nBurial has been considered more desirable by Han Chinese than the custom of many Muslim Chinese minority groups with bodies being eaten by vultures.32 The Book of Changes (I Ching) records that in primitive society Han Chinese left their dead in the wilderness, covered with leaves. Later, when they came to believe souls went on to another world, they began to protect bodies by placing them in graves.\n\n34\n\n33\n\nHong Kong, like China, has for several years campaigned in favour of cremation. Feudal superstitions have had to be overcome. In 1958/59, only 1.65 per cent of corpses were cremated. In 1989/90, the figure stood at 70 per cent. Because of chronic land shortage there are few cemeteries in Hong Kong where the body can rest in perpetuity. The group meeting there was called the Deutsche Kirchen und Schulegemeinde (Rev. Smith, “The German Congregation in Hong Kong until 1914\", ibid, 1975. v. 15: 292-295).\n\nIn the 1896/97 the Hildesheim Mission opened the Ebenezer Home for the Blind. There were two homes, one on Hong Kong Island and one in Kowloon. During the First World War they were placed under the supervision of the Church Missionary Society, though the Sisters in charge were allowed to continue to care for the children. Among the first Germans to return to Hong Kong after the end of the war were several deaconesses of the Hildesheim Society. The Ebenezer Home and School for the Blind is now located on Pokfulam Road.\n\nTwo German missionaries became Inspectors of Schools in Hong Kong. Rev. Wilhelm Lobscheid was sent to China in 1848 by the Rhenish Missionary Society, but in 1857 he changed his allegiance to the British-based Chinese Evangelization Society, yet another of the groups inspired by Gutzlaff. He was Inspector of Schools in Hong Kong from 1855 to 1859. He published in 1859 a valuable historical account entitled A Few Notices on the Extent of Chinese Education, and the Government Schools of Hong Kong; with remarks on the history and religious notions of the inhabitants of this island. From 1861 to 1866 he acted as an emigration agent, recruiting labour for British colonies in the West Indies. His labours in this endeavour again produced a book which contains much of interest as its title suggests, Chinese Emigration to the West Indies: A Trip through British Guiana undertaken for the purpose of ascertaining the condition of the Chinese who have emigrated under Government Contract With Supplementary Papers Relating to Contract Labour and the Slave Trade.\n\nAnother German, Rev. Ernest J. Eitel was Inspector of Schools from 1878 to 1896. He was influential in setting policies for the development of education in Hong Kong. He was sent to China in 1862 by the Basel Missionary Society. Three years later he transferred to the London Missionary Society. Thus, many have water storage tissues in their leaves (Avicennia, Aegiceras, Lumnitzera (Fig 6), Kandelia). Many have a waxy thick cuticle and epidermis, and have stomata restricted to the lower leaf surface (Avicennia, Aegiceras, Kandelia, Excoecaria). In Avicennia the stomata are sunken and this species also has the undersurface of its leaves covered by blunt hairs (trichomes) to prevent water loss (Fig 7). Heritiera has its lower leaf surfaces covered with scales for the same purpose.\n\nIn summary, this plant community is one of the most remarkable aggregations of unrelated families of plants in the world, which have developed in common a number of special characteristics such as modified roots for support and gaseous exchange, water conservation mechanisms, 'salt balance' mechanisms and a viviparous seedling habit.\n\nWhy are mangrove plants important?\n\nBecause of their relatively high natural productivity which may be more than twenty times that of the plankton of open ocean waters and five times that of the plankton of rich coastal waters, mangrove plants are able to support a large number and a wide variety of consumer animals. The falling leaves and other plant debris from the mangroves may either be eaten directly or (and this refers to the greater part) it is colonized by bacteria and fungi and partially decomposed before it becomes available to most marine animals. The leaf particles with their associated rich colonies of microorganisms are then eaten by small fish. Much of the leaf material itself is not digested but is passed back into the water where recolonization by microorganisms begins the cycle again. Eventually the very smallest particles (detritus) will be consumed by detritus feeding animals such as molluscs and crustaceans. At the same time algae will be feeding on the dissolved nutrients released, and they in turn form the diet for more consumers.\n\nThus, fish, shrimps and oysters all depend on the mangroves for their basic food supply. Man has learned to exploit this fact and the commercial rearing of all three groups of animals is common in",

After being on deck for a while, I found the two cabins which 5 men were to occupy. Each cabin was about the size of a chest of drawers, and cockroaches and smaller vermin revelled among the dirt. However, there was no help for it. Lechler, who has lived as a Chinaman and previously worn a tail for 10 years, took it all as a matter of course, and seemed quite at his ease. These boats are about 50 feet long, with the stern very high out of the water, and the bow very low. There is one principal mast and sail, which does all the work. In a minute the sail can be hoisted, and in 10 seconds can be lowered. Clumsy as it all is, it is surprising what good sailors Chinamen are. There is no danger if they are left to themselves. They can tack in less than no time. The \"shut kung\" calls out \"chun shun\" and the great sail sweeps round across the deck in a trice. All who are on deck must instantly stoop very low, or they will find themselves lying sprawling on the lee side.\n\nThe arrangements being made we started off in company with 8 other boats belonging to the same firm. Our ship was the chief one, and was named the \"Shoon-lay\" or \"good profit\"; all of them had names meaning gain and profit (all the Chinamen ever think about). We got out of the harbour by the use of the two immense oars or sweeps at the stern, which move the ship along tolerably fast. Then when we were clear of the harbour, we made for \"pirates bay\". The weather was delightful; the sea was very clear; and we went on charmingly with a brisk breeze. Hong Kong at a distance is certainly a fine place. The immense Peak behind the town is a grand spectacle, and the fast increasing colony, with its fine houses on the hillside are beautiful to look at, especially on a clear day, in the sunshine. We had no end of fun among ourselves, and kept a continual fire of jokes at Stringer's dog, which was condemned to be eaten on the voyage. I gave it to a Chinaman and told him to kill it and eat it; much to Stringer's dislike and our amusement.\n\nWe were each armed with a revolver, and each had a stick or something else in case of need; we had, moreover, two double-barrelled guns, with which we now and then let fly at the wild ducks. I felt glad to get ashore again after so much of knocking about and want of sleep. Fortunately Stringer's dog neither got shot nor eaten, although it was threatened over and over again. I was glad enough to get into a sort of tub and get on shore the best way I could, with Irwin and Lechler, and reached home after 75 hours absence, in safety.\n\nAlthough I did not immediately feel the benefits of the voyage, I did so afterwards and hope to make another similar trip some day or other.         "content_text": "A Chinese woman with a good command of English, married to an Englishman for many years, said to the author, 'The English like to insult their friends.' She was really saying they sometimes pull each other's legs unmercifully. When the author asked for an example she said, 'When they meet they say \"Hello you cheeky devil.\"' She could have added they have to be really good friends to do that without bad feeling creeping in. The Chinese lady also admitted, however, that her 'old man' and his friends sometimes told jokes that she could not grasp properly.\n\nThe above brought recollections to the author, of British soldiers during World War Two addressing friends. Rather than use the word 'devil,' they would say, 'affectionally,' 'You cheeky bastard.' Although crude, it was by no means uncommon and intended, and taken by many, believe it or not, as good, clean fun.' This is an extreme case among a small section of society, one must admit, but more than one Englishman has run into trouble because a Chinese friend, with a different cultural background, has taken what was intended merely as a mild leg-pull as an insult. Europeans have to be careful that the flippant remark is not taken seriously. A Chinese once said to a European, 'How did you know I was a teacher?' As quick as a flash came the reply: 'You can smell them!' \n\nEnglish humour includes, as related in this paper, wit, sarcasm, understatements and criticism. Self-mockery plays a part too, with Westerners calling themselves gwailo (ghost or devil person, in loose Chinese terminology) and laughing at themselves to get out of awkward situations. As a Hong Kong Cantonese, with a Master's degree in sociology from a university in Britain, said to the author, the Chinese tend not to laugh at themselves because of fear of losing face. If they learnt to laugh at themselves it would make life easier for them, he maintained. In a similar way, the friend continued, if Chinese have complaints or there is something wrong with them they do not relish telling others because it can portray weakness.\n\nThere is the tale of a Chinese who lost face by not being invited to a party. As a result, he recounted: If I had been invited I would not have gone; and even if I had gone I would not have eaten; and even if I had eaten I would not have eaten much; and even if I had eaten a bit more than intended, well never mind!",

Their mountain could not supply all the fuel the village needed, given its bareness, and the villagers had to buy fuel in Kowloon Market from the hillside villages in Sha Tin which brought it there for sale. When the British closed the hills to wood and grass-cutting after the Lease, in order to undertake a major programme of re-afforestation (several hundreds of thousands of new trees were planted in the Kowloon Hills), this caused major problems to the villagers, since they now had to buy all their fuel (each village was given a fuel reserve to cut fuel from, but these had to be left until the trees there had grown). Illegal fuel gathering was endemic, and led to brawls between villagers and Forest Warders. One villager, at Ngau Chi Wan, according to the Ngau Chi Wan elders, shot and killed a Forest Warder who interrupted him while he was illegally cutting wood - the village, with considerable trepidation, decided to fee an expensive European barrister, who, to the village's vast delight managed to get him off (the village is still speaking of this 80 years later).\n\nVillagers often went down sick (the average age of death in the New Territories in 1911 was about 20 years of age, and those who survived to 16 could expect to die by about 45-50). There were several dozen doctors in Kowloon City, but they were very expensive, and the villagers rarely used them. The Lok Sin Tong would give free medicine as a charitable act in certain circumstances, and the villagers would sometimes go there, but usually the villagers used their own village remedies, using herbs from the hills, which were boiled up to make medicinal teas or used to make medicinal washes or baths. Not all the village families knew which herbs to pick - village families with this knowledge kept it secret as it represented good income. Some village remedies were fearsome - a tea made from boiling up bat-dung scraped from the floor of the Ancestral Hall was used to cure certain childhood fevers, for instance, and a split pod of wild black pepper was bound round the wrist of children seriously ill with malaria, and left there until it had eaten its way deeply into the flesh. Witchcraft, involving secret prayers and incantations, and strange ritual acts, was often used as well - there were several village women who knew how to \"call the spirits\" in this way.",

        "content_text": "168\n\ntheir aid.12 Thus it was that although neither of the two deities had ever set foot in the Chaozhou area during their human existence, yet their divine spirits helped the native Chaozhou people and became their patrons. Chaozhou emigrants to Taiwan bore their cult from their local cult centre at Chaoyang, together with images, over to the new lands where at present there are some ten or so temples dedicated to the pair.\n\nSeveral versions of the tales of their heroism during the siege of Suiyang are related by temple keepers and devotees. Individual stories about Zhang and Xu are well known to Chaozhou devotees, describing how they dug holes to catch rats during the siege, and about Zhang slaughtering his beloved concubine, either to spare her being taken by the enemy or, more morbidly, to be eaten by the starving defenders. Each of the stories highlights their heroism in the face of starvation with no hope of relief from the siege, and their choice of death rather than surrender.\n\nThe two deities are revered together on the main altar in at least five temples in Taiwan. Zhang has some eight temples dedicated to him alone in Taiwan, whilst Xu has a further nine. A further fifteen temples contain one of these two deities under their other titles, with both deities, again under their true names of Xu and Zhang, being noted as the main deity on secondary altars.\n\nA Chuanzhou immigrant named Chen brought an incense pot with him from the cult centre of Baoyi Dafu [Zhang Xun] in Fujian and set it up as a branch temple in Shen Keng village near Taipei. According to temple lore, the deified Zhang Xun proved very efficacious in helping villagers with both good fortune and excellent harvests. Later, as the cult developed, it emerged from dream messages that Baoyi Dafu was also very effective in coping with the ravages of insect pests and, moreover, had won local renown by helping Chinese immigrants overcome the original hill tribesmen.\n\nHowever, in the centre and south of the Taipei Basin, Xu and Zhang together were known by Chuanzhou Fukienese by the single title of Wang Gong 尪公, Wang Yuanshuai 尪元帥 or Wang Wang 王王. During the journey Jeremy Reid, one of the guards belonging to the Royal Regiment of Artillery, died:\n\nHis disorder was occasioned by a surfeit of fruits, the man having eaten no less than forty apples at breakfast!\n\nOn reaching 'Pekin' Macartney received letters informing him that Lion and other ships were leaving Chusan and that only Hindostan was remaining (Chusan being an island in the bay between Shanghai and Hangzhou, which was preferred, over Hong Kong, as a base by the British Government). Hearing that the ships had left Chusan upset the Chinese officials who wished, now the visit was over, for the Embassy to leave the coast of China as soon as possible, the limit of forty days prescribed for visits from without the Kingdom having been reached. Because of this the Embassy was then more or less directed to start on their return journey and left 'Pekin' on 7th October 1793 for Chusan travelling down the Grand Canal from Tientsin to Hangzhou. In Tientsin they were treated to a sumptuous banquet:\n\n...excellent mutton, pork, venison and poultry of all kinds, fruits in great variety - peaches, plums, apples, pears, grapes, chestnuts and walnuts and several others new to them.\n\nThe journal describes in some detail the construction and working of the system of sluices on the Grand Canal. These were unlike the locks on British canals but consisted of a single sluice which was raised by windlass, in fairly flat country, through which the boats were hauled when the sluice was raised.\n\nAt Hangzhou it was confirmed that Lion and the other ships had left for Canton being urgently in need of medicine for the men on board. Hindostan was quite incapable of accommodating the entourage and all its heavy baggage and it was agreed, as though it was simply a matter of course, that the party would continue the long journey by river and with some trekking overland on ponies between the north and south flowing rivers, and so to make their way to Canton. Long Night's Journey into Day: Prisoners of War in Hong Kong and Japan, 1941-1945, Wilfrid Laurier University Press, Canada, 421 pages.\n\n'We live not as we would but as we can.'\n\nMemoir\n\nLike most Britons of my generation, I fought in World War Two, and for me, that included over four years on active service, much of the time in and out of action. But I have always wondered how I would have faced up to being a prisoner of war. Consequently, I found this book of considerable interest.\n\nOf the many books I have read about Hong Kong and the Japanese War, I know of none where the research was more thorough or the contents of the book more detailed. With the project spanning over 20 years and numerous persons and institutions having been consulted, this is not surprising. Chapter One deals with the run-up to the Japanese attack on 8 December 1941, and Chapter Two deals with the 'Eighteen-Day War' during which the Crown Colony was overrun. As many as 10,000 women were estimated to have been raped, although this figure, arrived at by a Chinese physician, can have been little more than an educated guess. Nor would the Japanese tolerate interference in their \"right to loot.\" The remaining eight chapters of the book deal with prisoners of war and life in the camps. There are copious notes, a long bibliography, and an adequate index.\n\nGenerally, internees, for example civilians in Stanley, were treated less badly than prisoners of war, for instance other-ranks incarcerated in Shum Shui Po Camp. But whoever they were and wherever they were incarcerated, too little food plagued prisoners constantly. Pet dogs and regimental mascots that followed men into camps were eaten, although a few would rather starve than partake of culturally forbidden foods. A few persons fattened maggots to eat in order to obtain much-needed protein, while others trapped birds and snakes. The event, place and time, would of course be stated, together with the names of the principal officiating guests (government officials, prominent persons and local dignitaries); and if an association was the host, the cards might list the names of members of the organizing or current committees.\n\nLet me describe one of these productions, the invitation card received for the Ta Chiu held at Kam Tin in the Yuen Long District of the New Territories in 1975. Typical of the genre, the card consists of a double sheet of glossy red paper, printed in gold characters on all four sides, but with the recipient's name and office on Sheet 1, the front face, brushed in black ink. Sheet 1 also provided the sender's details, and the address of the invitee, since invitations were usually sent by post. Sheet 2 was the formal notification of the event, Sheet 3 contained the details of the opening ceremony, and Sheet 4, the back face, gave details of the organizing committee and elders. The wording followed the polite literary phraseology long in use for such occasions. The separate items of the opening ceremony, which would all be announced in sequence by a 'master of ceremonies' on the day, ran as follows:\n\n1. Congregate (at the ceremonial site)\n\n2. Invited guests to take their seats\n\n3. Ribbon cutting by the presiding official guest\n\n4. Chairman's speech\n\n5. Speech by presiding official\n\n6. Presentation of commemorative banners etc.\n\n7. Speech of thanks (to individuals and organizations)\n\n8. Photographs\n\n9. Ceremony declared over\n\n10. Lion and unicorn dances\n\n11. Accordingly, whenever an English thug gets into a scrape he claims to be American. He then described a case in point 'the Captain of an American boat came to me bringing with him a Chinese who had been badly cut on the arm. He said that the wound had been inflicted by an Englishman, a passenger on his boat and that the Briton was a desperate character. I accordingly applied to Franklin, the Commander of the [British] gunboat lying here for assistance. He very soon had an armed boat alongside the Yankee craft and the swordsman was speedily hauled out and brought before me. I read the Chinaman's complaint to him and he in reply said he wanted to see the American Consul, I told him that as an American had handed him over to me as an Englishman I should deal with him unless he could prove his right to American protection. He defied me so I sent him a prisoner aboard the Banterer gunboat. On the day following I had no less than three witnesses that the scoundrel was an Englishman. At length when he saw his impudence would carry him no further he acknowledged himself to be a Britisher, He was tried accordingly and got six months in Hong Kong jail with hard labour, at the end of which, he is to be conveyed under arrest to England as being too dangerous a character for a quiet country like China'.\n\nIn another letter Adkins explained that 'I am making myself obnoxious and disagreeable to certain of my countrymen who think that Treaties are made that they might have the pleasure of breaking them. I have seized and confiscated three vessels for smuggling and have given a rascal three months hard labour for trading in salt. Really the Chinese have good reason for distrusting us. We sell arms to the Rebels and teach them how to build forts after making treaties of peace and friendship with the reigning power'.\n\nWhen E.H. I go into crazy spirals opposite an American gunboat and climb in seconds, or so it seems, to 2,000 feet. There I decide to stop and wander about. I am worried about the Japanese who no doubt would come and bomb us and could well send a reconnaissance aircraft, which could easily come and shoot me down ... I am flying in Chinese military colours so I would be in the wrong.\n\nTowards 4:00 pm, I feel very tired. I have eaten my lunch, great nervous tension, since I have not flown for more than a year. I amuse myself for five or six minutes in doing turns right above the British Embassy and over the airfield, where I see thousands of Chinese. Early last century, the meals in most village families were basic for most of the year: consisting of rice with salt fish or preserved vegetables, with meat once or twice a month. During my initial researches into Hong Kong's rural history, a local leader impressed upon me how people so looked forward to the major festivals of the year, for it was only then, most notably at the lunar new year, that they could have a greater variety of food, and more of it. Major family events, like the marriages of sons and the celebration of old age, were welcomed for the same reason. Anticipation was heightened by the confident expectation that even if they could not afford the expense and had to borrow cash or mortgage land, families would provide the proper feasts on these occasions, or else \"lose face\" in the community.\n\nLike much else in Chinese culture, the dishes prepared at such times were named so as to have auspicious meanings. For instance, at the lunar New Year, oysters, in Cantonese pronunciation named ho si conveyed the sense of good luck, whilst a dish of green vegetables, faat choi, expressed the wish that all those attending the feast would get rich. There were, and are, many such examples - see, pp.46-7 of T. C. Lai's book, At the Chinese Table (Hong Kong, Oxford University Press, 1984), also in the Images of Asia series. Even more focused on this topic is another interesting book, recently reprinted (2001) from the original edition of 1991 by Graham Brash, Singapore: namely Koh-Hwang I-Ling's Symbolism in Chinese Food. This is recommended reading, albeit it relates to Singapore Chinese of Hokkien descent, rather than the Cantonese and Hakka who are the subject of my book.\n\n-\n\nA certain type of food eaten at village feasts had (and still has) a distinct social function. This was the \"basin food\" provided for, and often by, the whole village on celebratory occasions. Consisting of very fat pork, with bits of turnip, dried mushrooms, beancurd and the like, cooked and mixed together, it was meant to indicate the equality and solidarity or brother-hood of participants. It was and is not confined to men but includes women and children. It is communal in every sense of the word, and is intended to be such. Its preparation involved persons from each family in one or other of the many tasks involved, from providing or marketing for the ingredients, the building of an outdoor stove and its covering, the collection of dried grass and firewood to feed the stove for the cooking, fetching water, washing crockery before and after, bringing tables and benches to the site, and",

Ellis, in Gutlaff's Three Voyages (1834) wrote, ‘A grave Chinese author, profoundly skilled in the literature of his own nation, congratulating himself that he was not born in our barbarous countries of the West observes, \"for then I must have lived in a cave under-ground, - eaten the bark and roots of trees, worn leaves and long grass for my covering, - and been really a beast though in the shape of a man.\"77\n\nWestern sojourners in China could not fail to observe the fact that, as the great missionary translator-scholar W. H. Medhurst wrote in 1838, 'The Chinese assume to be...the only civilised and powerful nation in the world ...,'78 an attitude that appears to have characterised official and peasant, merchant and coolie alike. As Parkinson commented in 1937, 'With such invincible ignorance it is difficult to cope.'+79\n\nAt the same time, trying to be objective about Chinese disdain, Lord Macartney, England's first ambassador to China, wrote in 1794 of his own countrymen: 'Is there any country on the globe that Englishmen visit where they do not display that pride of themselves and that contempt of others which conscious superiority is apt to inspire?'80\n\nThe Impending war\n\nBy 1839, the situation had not changed a whit. Each party to the impending hostilities was boxed in by its own ideas and limitations, in the case of the Westerners fanned by the many irritations accompanying their lives and mercantile dealings at Canton under the restrictions imposed by Chinese officials.\n\nThese prompted one of the historians of the military side of the War to opine that 'The opium question was to be regarded merely as a spark blown into a mine, and no more to be considered the primary cause of the war than the match which ignites the train...'81 But at least one of his brother officers had deplored going into a war in which the opium question was an unworthy element.82\n\nAnd at this point, on the verge of War, we must regretfully take leave of the China of the old China Trade,83",
