HAYES\n\nThe New Territory comprised an estimated 376 square miles of hill and plain situated on the mainland of China and a number of offshore islands, large and small, some of which were inhabited and some were not. For the purpose of this article it is sufficient to say here that in 1898 it was primarily an agricultural district consisting of a few broad valleys and many pockets of farm land among the hills or at their foot, both on the mainland and on some of the larger islands, with a few market towns here and there. The emphasis was on agriculture, though there were a few small industries in operation. Village life was bounded by the two rice crops in summer and autumn and the winter season, when most land lay fallow; and by the occasional visit to the market town, often two or three hours away and over the hills, always on foot, and frequently laden with produce and livestock to sell or exchange.\n\n3\n\nIt goes almost without saying that this small slice of territory, only half the size of San On District which was one of the smaller administrative districts of the Kwangtung Province, and 1,500 miles from Peking, was an insignificant part of the Chinese Empire. However, despite its minute size and remoteness from the central provinces and the seat of government it was fundamentally Chinese and essentially Confucian in its component parts, two features which are worth emphasising. One of its former District Magistrates made an observation covering both these points in a Confucian discourse which he contributed to mark the restoration of a school at Kam Tin in 1744 when he wrote \"In this era of prosperity culture has spread to even this remote place near the sea. Here the Book of Poetry is read as early as sunrise\".4\n\nThe integrated life in which everything under Heaven has its place and plan is a recognisable feature of the Confucian code which was evolved and formulated in an agricultural society ever 2,500 years ago. A study of the daily life and background of New Territory people in 1898, which was also placed in an agricultural setting, though one based on the cultivation of rice and not of wheat, leaves me with the impression that the high degree of mental and environmental integration attainable within a Confucian framework had certainly been attained here.         "content_text": "NOTES AND QUERIES \n\n191 \n\nThe caretaker, Mr. Liu Wai-tong deserves special mention. Born in the caretaker's quarter, he is the third generation of his family to fill this post, as he says his father and grandfather before him held it also. \n\nOld Tai Hang \n\nNot much to look at, but the object is to see the old houses. Tai Hang was one of the old villages of Hong Kong Island. There are about 15-20 houses of the former village still standing, mostly in one row with a few others scattered among new buildings, and all built more or less to the same pattern.* They are situated in New Village Street (*†††) although an old resident tells me that this is a misnomer because they represent the old village known as Tai Hang Lo Wai (★★) which has always stood on this spot. The population of Tai Hang at the 1911 Census was already 1,574 persons. Formerly situated not far from the shore, reclamation began there in the 1880s by which time the area was already known as Causeway Bay - and ended with the development of reclaimed land for Victoria Park in the early post-war period. \n\n▬▬ \n\nThe village was a multi-clan one settled by the Hakka families of Wong (*), Cheung (3), Lee (†), Chu (*) and Ip (#). The first three are said to be the oldest families. A Wong now aged 45 is in the fourth generation which means that these families probably arrived in the area about the time that the British took over Hong Kong in 1841. Old residents say that besides some farming and fishing, the inhabitants kept some of the first dairy farms on the Island, long before the Dairy Farm started in 1886, and also engaged in laundry work. The name of the main street of present day Tai Hang, Wun Sha Street (r), which means 'washing cloth', refers to this early line of business. \n\nOne of the most interesting aspects of Tai Hang is its fantastic sports record. For unknown reasons, the old Tai Hang families produced a great many star soccer players before the war. I have been told that on five occasions at the pre-war Far East games the China Football Team were the winners, and that 90% of the team came from Tai Hang: again, that nine out of the \n\n*See plates 23-24,",

Its proper name was \"Clanmore\".† It was not a healthy site, probably the reason why the Company decided to sell the property. Father Trivière writes:\n\nThe Fathers, upon arrival, had taken measures to improve sanitation. These included general hygiene, drainage, the felling of trees, the cutting back of bush, the planting of eucalyptus and camphor trees, thanks to which an improvement in the situation was expected, bringing with it the gradual disappearance of malaria. Unfortunately, things turned out otherwise. The French fathers were not successful in driving out malaria. It was, in fact, malaria which drove them out.\n\nThe original house is no longer to be seen, but we shall walk round the site.\n\nAt this point, I had hoped to show Members the fine waterfalls inside the Dairy Farm property opposite Tai Ku Lau, but the Company regrets that it is unable to grant entry because of restriction imposed as part of measures against animal disease.\n\nWe shall return to the buses for the Wah Fu Estate (Hong Kong Housing Authority; 56,000 persons) and the Hong Kong Waterfall. This is featured in G. R. Sayer's book, Hong Kong: Birth, Adolescence & Coming of Age, published by Oxford in 1937. Sayer was a Hong Kong Administrative Cadet Officer, who served here for many years pre-war.\n\nThe flow of water in the waterfall stream was affected by the construction of the Pokfulam Reservoir (1863 and enlarged in 1876 or thereabouts) and the waterfall may be seen in its former dimensions only after heavy rain. LACK \n\nAt the same meeting another unofficial member, Mr. Osborne,* mounted a quite blistering attack upon Government's past failure to provide adequately for the shelter of the boat people in Hong Kong. He referred to the typhoon of 1841 and to the storm of 1874 in which over 2,000 lives were lost within the space of 6 hours and 35 foreign vessels were wrecked or badly damaged. He claimed that the screaming of those in distress on the water could be heard in the mid levels of the town above the noise of the storm. He went on to refer to subsequent and more recent typhoons, one of which (1906) had exacted a toll of 10,000 lives in two hours. He demanded to know what it was that had been done with the lessons of previous years, and came to the reluctant conclusion that very little had been done. He castigated Government's lavish expenditure on various new public buildings, notably the Supreme Court, the Harbour Office, and the intended Post Office Building, as being quite beyond the bounds of what was required, and ended with these remarks,\n\nDuring a rather long residence in the Colony, I have had exceptional opportunities of coming into contact with the boat population. Though, like most humanity, their character is a blend of the good and the bad, there is one quality they possess in marked degree, which has always commanded my deep admiration, and that is their patience and philosophic bearing under circumstances of trial and suffering. In their name, Sir, and apart from the commercial aspect to which I have alluded, in the name of thousands who have already suffered in silence the misery wrought by these destructive storms, I appeal to your Excellency that there shall be no further delay in giving them the shelter which it is our clear and bounden duty to provide.\n\nThese words put the officials on their mettle. At the next meeting of the Council, the Director of Public Works and His Excellency the Governor were at pains to assure members that something was going to be done about the typhoon shelter: in fact, they had purchased a dredger on which to begin work on the foundations of the shelter. This provoked an unexpected row because some members considered that another dredger also for sale in the harbour at that\n\n* Edward Osborne, listed in Who's Who in the Far East as Secretary of the Hong Kong and Kowloon Wharf and Godown Co., b. 1861, with P & O Steam Navigation Co. in London and Hong Kong 1880-1889. BOWIE\n\npatient of ours told us that a substantial stock of serum had been stored in the Dairy Farm Storage Godown near the vehicular ferry at the beginning of hostilities. We at once asked the Japanese to get this stock for the treatment of prisoners. I never found out whether the supplies we were given came from that stock or not but Sergeant Seino told me that no serum had been found in the Dairy Farm cold store.\n\nSince serum was in such short supply Major Harrison, after anxious consultations in which I and others took part, gave transfusions of whole blood from patients who had recovered from diphtheria to four patients suffering from the disease in an acute form. Two of these recovered. Here again I want to record my personal admiration for the courage of doctors and R.A.M.C. and R.A.D.C. soldiers who nursed these diphtheria cases. Everyone knew of the shortage of serum and all knew the risks of infection. No one shirked the close contacts involved in the treatment of these patients and this to my mind was an outstanding example of cold and sustained courage in a situation where staff were at risk for at least five months. All this was done on an uninviting diet which was low in protein and vitamin content while there was nothing to provide any relief from day to day and little to provide even a diversion. The work of these men cannot be praised too highly and the story deserves to be cherished in the annals of the Corps.\n\nThe phase of the Infections had started a little before I assumed charge of the hospital and was drawing to a close by the end of 1942. During the five months 42 deaths occurred, all but five resulting from dysentery, diphtheria or deficiency diseases.\n\nBefore the infections came to an end the deficiencies had begun and already before the end of 1942 we were admitting members of the staff suffering from painful feet.\n\nTHE PERIOD OF THE DEFICIENCY DISEASES\n\nI make no attempt here to give a scientific account of these diseases. They result from sub-standard nutrition including vitamin deficiencies. When I took charge our doctors were already reporting that many patients were complaining bitterly about burning feet and that some were also showing other signs of neurological damage. To the north, there were ferries from Kei Ling Ha to Tai Po Market.21 Sai Kung was therefore conveniently located in the centre of local trade routes to Tai Po, Kowloon, Shatin and via Hang Hau, also Shaukiwan. It was an ideal location for a market in the region.\n\nMrs. Kong Lei San Kiu, who married into Lung Mei Village, used to farm, raise pigs, and cut firewood. When a pig had been fattened to a hundred catties, she carried it into Sai Kung with some assistance, and sold it to the butchers. Sometimes she carried firewood into Kowloon, and sometimes into Sai Kung. If she carried it to Sai Kung, she sold it to shops which in turn sold it to the boat people. She would buy oil, salt, and sundries to take back to the village.22 Many other villagers, like Mrs. Kong, also sold pigs and firewood in the markets in order to buy daily necessities.\n\nThe fishermen also came to Sai Kung, but many did not have to come personally for there was a wide collecting network working for the shops. Mr. Chan Kei Shang of Yim Tin Tsai, who used to work in the two teams of fishing boats known as the “ku-tsai” in the village, used to salt his fish and send them by the ferries to Sai Kung. These ferries were operated by Hakka people from Sai Kung Market, and they sold the salt fish for the fishermen. For some time, Mr. Chan Shau of Pak Tam Au worked on a Mr. Kong's boat selling rice, oil, salt, and biscuits to the boat people. Fish-mongers with their own boats also came from Tai Po and Kowloon, and collected fish directly from the fishermen.23\n\nVillagers obtained their supplies on credit. Nam Shan villagers, for instance, shopped regularly at Kwong Tak Lung in Sai Kung Market, and they were given credit for such daily necessities as rice and sugar. They paid for their supplies by selling grass to the shop, which was used as fuel. Piglets were also obtained from the shops on credit, and when fattened, the pigs were re-sold back to the shops. Fishermen also relied on credit for their supplies. Mr. Cheung Ming Shing from Leung Shuen Wan purchased his fishing equipment from Saam T'aai, and his food supply from Saam Shing, both of Sai Kung Market.",

We halted not, but sped on, and finally turned into the lower road at Repulse Bay. Here Mr. Brown had some business to transact with his Chinese foreman and workmen who were engaged in demolishing the bathing beach matsheds, lest they be an obstruction to defending troops, or a hiding place for invading forces. Another dash up the hills and around curves brought us breathless but happy to Stanley, and Father Downs was indeed glad to get back among his confreres.\n\nArrived at Stanley Father Downs found the situation rather tense, though not quite so \"hot\" as at Hong Kong. During his absence he was told that Stanley was fairly quiet, except for occasional planes passing overhead, when they dropped a few bombs on and near the Prison, one also hitting Dr. Hackett's, the Prison Doctor's house, demolishing one wing of it. Of course, \"Big Bertha\"—a 9.2 inch gun at the fort on the promontory to the south of us—kept up an intermittent booming day and night, shelling enemy positions on the mainland. When \"Big Bertha\" spoke, she shook our building and made our windows rattle twice, but we did not mind that.\n\nLong before the outbreak of hostilities British Government and Army officials had visited Maryknoll at Stanley with a view to taking it over in whole or in part if any emergency arose. At one time it was intended to be a hospital, but the Army seemed to have prior rights and they decided to take over a part of our building. Accordingly when Japanese planes began flying overhead and Japanese troops began attacking His Majesty's Crown Colony of Hong Kong, His Majesty's Royal Engineers came out to Stanley and occupied the western end of our building: that is, the servants' quarters downstairs, with the classroom and room adjoining, the recreation room upstairs together with two small private rooms close by. Our Ford V-8 was immobilized, our garage taken over by a number of coolies, and the Engineers prepared for eventualities. They brought out with them quite a supply of food, in the way of huge sacks of rice, soya beans and large tins of army biscuits or hard-tack. The five or six Engineers and Mr. Brown ate at our table with us, and we shared their food, so that we were quite a family.\n\nAs in Hong Kong the delivery to Stanley of daily food, such as meats, vegetables, bread and so forth by the Dairy Farm and Lane",

Doctor Talbot, British doctor, gives cholera and typhoid injections to the Americans.\n\n17—Shrove Tuesday. Mardi Gras at St. Stephen's Hall, with popular songs and specialties. The local Civil Authorities, in inaugurating their regime, give us a movie showing industrial Japan. Canteen opens again with a limited amount of ham, jam, oatmeal, milk, and syrup.\n\n18—Ash Wednesday. Blessing of Ashes at chapel in Maryknoll Sisters' apartments and at the Club Chapel. Bishop O'Gara gave the sermon. Father Grogan, S.J., from Hong Kong, appeared in camp for a few minutes today, having come out on the Red Cross truck which brought some milk for the babies. As the Dairy Farm is still functioning on a limited scale, the Camp officials have been endeavoring to secure milk for the babies, but with little success, and only a small amount is forthcoming. Up to the present, the Japanese authorities, acting through a Chinese comprador, have been supplying us with our daily rations and are trying to find means whereby we can pay for our food. Today at a meeting on \"The Hill,\" they asked that we pay $50.00 per month for our food. They have already frozen all accounts in the banks, and though some people in Camp do have some money, the majority are without funds. If we do not pay this amount, all we get will be eight ounces of rice, one ounce of sugar, and one-twelfth of an ounce of salt!\n\n19—American police duty changed to a four-hour stretch. Only those who are not otherwise engaged in manual labor do the patrol work. Rice and soup for tiffin today.\n\n20—Canteen opens from ten to twelve in the morning and two to four in the afternoon. Those who have funds queue up, starting at eight-thirty and stand in line for hours, and when their turn comes often there is nothing worthwhile buying.\n\n21—The police stage a songfest at St. Stephen's Hall. Rainy and misty. The new Hong Kong Governor arrives in the Colony to...",

        "content_text": "THE MARYKNOLL MISSION, HONG KONG 1941-46\n\n127\n\nhave been uniformly courteous to us, except under the eyes of their masters and I think they realize that their position is a precarious one. They are, however, pretty cruel at times to the Chinese.\n\nExcept army trucks, there is no transport in the city. On the Pokfulam Road, however, the Chinese have resurrected a few very small wooden carts with tiny iron wheels which they laboriously pull along up the grades of the winding Island Road. Only a few bus routes are in operation. The Aberdeen route is running; the University route via Caine Road is in operation, and the Stanley run, with a bus every two hours, completes the service. The trams, of course, are running and quite crowded. Ferry service has been resumed, but on a very limited scale. I speak only for Hong Kong, as I know little about conditions over in Kowloon. As for purely private cars, practically none are seen in the streets, all having been confiscated and shipped to Japan. A taxi service was attempted but the fares were prohibitive.\n\nThe Dairy Farm is functioning under, of course, Japanese management and control. However, over half the dairy herd has been shipped out of the Colony to Formosa and Japan. A few British overseers have been retained. The milk is being sold for thirty yen a small bottle, but it is of very watery consistency. No butter is available.\n\nAs for the once flourishing harbor, it is now bare of shipping, save for an occasional Japanese freighter. Occasionally, a destroyer or two or a small cruiser are seen in the harbor, but they come and go. As will be remembered, the regular east channel leading to the harbor has been blocked with scuttled and burned ships, so all vessels now enter Hong Kong by the west channel, which passes just beneath Bethany, so we have a splendid view of all incoming and outgoing ships. Now and then we will see a steamer limping into port, disabled and apparently sinking. Once a convoy of some seven or eight ships entered and left the harbor, and on two occasions we saw a very large trans-Pacific liner like the Asama or Chichibu Maru enter and leave. On another occasion, a small destroyer engaged in maneuvers ran aground just to the south of Bethany on a point near the Dairy Farm, but was later pulled off by tugs. Before the war, the British were assembling ten thousand ton fabricated ships in Kowloon, and apparently the Japanese found one of these under construction, as later on we saw it under-",

        "content_text": "shopkeeper, land speculator, auctioneer and entrepreneur; William Tarrant, Land Office clerk and later editor and proprietor of the newspaper Friend of China, Charles Markwick, auctioneer for the Government; Hugh Mackay, shopkeeper his lot No. 4 was resumed in 1859 for nonpayment of Crown Rent; and Wong Ah Hoy, one of the original So Kon Po cultivators.\n\nWong sold his lot in 1852 to Chang On Kee, a merchant trading at Hong Kong, who in turn sold it to George Duddell in 1857. Duddell had already bought in 1851 the lots of Markwick and Tarrant. Thus all the arable land of the valley was in his possession, except the lot of Mackay which reverted to the Government shortly after. Duddell added to his holdings by purchase from the Government in 1853 of Farm Lot 13. This was between his valley lots and So Kon Po village.\n\nIt was probably in the 1850's that Duddell experimented with growing coffee plants in the valley. Evidence of the project was still to be seen in 1878. The Hong Kong Daily Press in that year published a series of articles on places of interest around Hong Kong. The issue of 17 December 1878 gave directions for a walk to the \"Coffee Plantation\". The hiker was directed to proceed to the Race Course, passing the Obelisk and keeping straight on over a bridge to the gardener's cottage. There he was to turn to the right for one hundred yards, with the race course on his right and a densely wooded hill on the left, and follow the footpath up the hill through the trees. On descending the hill on the other side, he would find himself near some huts occupied by Chinese quarry-men or stone-masons and on the path leading to the coffee plantation. The writer noted, however, that \"the coffee shrubs are now neglected\".\n\nGeorge Duddell, having retired from Hong Kong some years previously, sold his So Kon Po land to William Keswick, of Jardines, in 1884. The lots, whose twenty-one lease had been extended to seventy-five years, were regranted to Keswick as Inland Lots 955, 1018, 1019, 1020 and 1021. Keswick transferred the present site of St. Paul's Convent and Hospital to a Jardine enterprise, the Hong Kong Cotton Spinning, Weaving and Dyeing Company. This was in 1898. It took Edith until 1905 to make herself understood in the northern Anhui dialect. “Last year I could not say much but this time I will have to do my share of the preaching,”20 Edith confided to Louese in her letter dated 5 January 1905. At the same time, another woman missionary, Mrs. Ferguson, “not having our pronunciation so that the women do not understand her very well,” was not very useful since she could not preach. \n\n9920 \n\nAt Taiho, the missionaries lived among the people to whom they were bringing the Gospel. These were poor people, judging by their daily fare and by their standards of hygiene. Edith described the scene in the back lane where the men of the neighbourhood ate their evening meal squatting outside their front doors. \n\nThe men do not eat with their wives, . . . The man of the house takes his bowl of rice, if he can afford it, or if not his bowl of dough strips and perhaps a bowl of salted garlic or some kind of greens. If it's the first or fifteenth of the month he will have another bowl with some stewed meat and onion etc.22 \n\nSeeing the population of the back lane thus gathered, the missionaries, Mr. and Mrs. Malcolm as well as Edith, would assault them with the words of the Lord. \n\nevery day about the time they are eating their food we three stand at the back gate, sing a hymn to draw the crowd, then Mr. Malcolm steps out to preach to them. A great many of them won't come here, so we go to them.\" \n\nTheir timing might not be the most propitious way to make friends and influence their neighbours, but the missionaries were only following Hudson Taylor's directions to reach the people wherever and whenever possible. The friend was a boatman who crewed and looked after a pleasure boat for a European firm. He lived in a squatter hut in Chai Wan Cottage Resettlement Area.\n\nThe old lady belonged to the indigenous boat population of Hong Kong Island. She had been born on a boat moored off the old Dairy Farm pier inside the present typhoon shelter. This was in 1890. Her father had also been born there in a boat, and she thought this had been so for several generations: at least, this was the family's received information. Her husband had also been born on a boat in the area, and his father before him, and with the same family tradition of local identity.\n\nThis evidence is not conclusive, being based only on word of mouth within these two families of boat people. The grandparents might have come into the area upon the opening of the port in the 1840s. This I doubt: whatever pickings there were to be had the Japanese wanted for themselves, and I think the true explanation is simply that they could not at first spare enough men for effective policing. The looters were dangerous, and a party of five Swedes who were foolhardy enough to remain on the Peak were murdered.\n\nIt was not long before the Japanese themselves entered into competition with the Chinese looters, but on an official basis. Foodstuffs were their first objective, followed by metals of all kinds and medical stores. Hongkong had been stocked with supplies for 6 months: it held out for only 18 days, so enormous stocks fell into Japanese hands and these were shipped off to Japan as fast as they could be loaded. Of the Hongkong Dairy Farm's herd of 1500 cattle, over 1000 had been shipped away by the end of March.\n\nAll the European members of the Police Force were interned at Stanley. The Sikhs and Chinese accepted service under the Japanese. The guards round the internment camp and the gaol warders were principally Sikhs. If drawn into conversation, they would say they must work for the Japanese or starve; but Pennyfeather-Evans, the Chief of Police, told me that the Sikhs had been practically in a state of mutiny during the last days of the fighting.\n\nAs regards the Chinese or semi-Chinese members of the Legislative Council, Sir Robert Hotung was, I think, in Macao when the war broke out. He subsequently returned to Hongkong, but I do not know what line he took or what became of him. Sir Shouson Chow, Mr. Kotewall, and Mr. M.K. Lo joined the \"Rehabilitation Committee\" set up by the Japanese and had to attend official ceremonies such as receptions for the Japanese Governor. Lo, who met A.J. Evans on the street one day shortly after the Japanese occupation, told him that he had at first refused, and that he had then been imprisoned without food till he gave way. I have no doubt similar measures were taken with the others.\n\nI have already referred to the eviction of the staff and patients from Queen Mary Hospital and the War Memorial Nursing Home. The Matilda Hospital was cleared at the same time. Jardine Matheson and Company, who, when the Home Government ceased to provide this small return for the heavy Military Contribution forwarded annually from this Colony, purchased a gun, etc. and had it fixed up at Messrs. Jardine's, where it is fired daily.\n\nAlthough their gun is still at East Point, not far from where Jardine's started trading in 1841, their head office moved to Central District as long ago as 1864. It has been said there is not one field of commerce in which it does not hold a prominent position and its 'tentacles' extend to interests in many other firms.\n\nHong Kong Land\n\nThe Colony's leading businessmen have usually had considerable interests in land, and it was thus fitting that two of them, Paul Chater (later Sir Paul) and James Johnstone Keswick, should be prime movers in the Hong Kong Land Investment and Agency Company which was incorporated in 1889. The latter, as Taipan of Jardine's, following in the footsteps of his great-uncle William Jardine, was also founding chairman of Hong Kong Land. James was the first of six Keswicks, spanning five generations, to hold the position.\n\nThe company soon began buying sites and erecting office buildings. Between June 1904 and December 1905 it erected Hong Kong's first 'skyscrapers', five major buildings each of five or six storeys, which dwarfed the two and three-storey structures surrounding them.\n\nHong Kong Land acquired Humphrey's Estate and Finance Company, which owns residential property in Mid-Levels, in 1972, and for 14 years 'Land' had a controlling interest in the Dairy Farm, Ice and Cold Storage Company. Today, the latter is once again an independent public company. In its centenary year Hong Kong Land owned some six-million square feet of commercial space of which five-million is in the so-called 'Core Central' area. The firm has been described as \"... perhaps the most valuable property company in the world and certainly in the region ....\" Whether this is true is not known.         "content_text": "The Hong Kong and Kowloon Wharf and Godown Company\n\n735\n\nAnother important associate company of Jardine's until the mid-1980s was 'Wharf, which was a pioneer in the development of Kowloon. The firm was established in 1886 by Paul Chater and Kerfoot Hughes. About the same time Jardine's started a wharf at West Point, but largely because of labour difficulties with Chinese lightermen Kowloon Wharf and Jardine's Wharf amalgamated. In 1887, they acquired the P&O (Peninsular and Oriental Steam Navigation Company) wharf at West Point although this was later sold,\n\nSir Paul Chater\n\nIt is appropriate here to say something about Anglophile Catchick Paul Chater, born of Armenian parents in 1846, who came to Hong Kong from Calcutta at the age of 18. He started work as a clerk in the Bank of Hindustan, China and Japan, but soon branched out on his own as an exchange and bullion broker. Chater later became a business associate of the Sassoons, who were Jewish merchants. Chater's interests were many and varied. In addition to Hong Kong Land and Kowloon Wharf they included substantial real estate holdings. Hong Kong Bank, Dairy Farm, Star Ferry, Hong Kong Tramways, and Hong Kong and Shanghai Hotels. Chater was also a pioneer in the 57 acre Praya reclamation scheme, in Central District, which included Des Voeux and Connaught Roads, and is now one of the most valuable areas of land on earth.\n\nAlthough he was sometimes accused of showing indecent regard for Royalty and all things British, including cricket, others believed, \"Where Chater goes today Jardine's follow tomorrow\". Venturesome in business, few men have contributed so much to Hong Kong as he did, and he worked closely with the British for several decades. One of the busiest roads in Central, as well as Chater Garden and Catchick Street, is named after him. As a self-made man with considerable foresight he was generous, and he became a public benefactor and patron of the arts. Unfortunately, the Chater collection of paintings was lost during World War II. Sir Paul, who served on both the Legislative and Executive Councils, died in 1926 an honoured and respected man.\n\nButterfield and Swire\n\nAnother of the great Hongs, Swire's, is Jardine's competitor, even",

        "content_text": "236\n\nThe Dairy Farm Ice and Cold Storage Company Limited\n\nThe supply of ice for the preservation of food is obviously important in the tropics. George Wingrove Cooke, correspondent for The Times, in 1857 provided a vivid picture:\n\nIn Hong Kong and Shanghai, a dinner table in the summer season is a melancholy spectacle of spoiled food. The creatures to be eaten were necessarily killed the same day, and the tough tissues are as hard as death stiffened them.”\n\nIn the 1850s, large expatriate households often owned at least one cow, and a block of ice bought from George Duddell prevented the milk from going sour. The selling of ice was one of the earliest trades in Hong Kong, and the first consignment of ice was imported by Jardine's in 1843. The Ice House Company was established in 1845. The price fluctuated depending upon the season and the demand and varied, in 1849, from three to six cents a pound. The ice was stored in a specially constructed building at the corner of Ice House Street at the southern side of Queen's Road. Importers often lost money. Although the Tudor Company imported ice from North America in the early days, by the 1870s ice manufacturing apparatus was shipped into Hong Kong, and, in 1874, the Hong Kong Times reported the ice making establishment at East Point was completed. In 1881, the Hong Kong Ice Company was founded with its headquarters at East Point.\n\nLater the Hong Kong Ice Company was taken over by Jardine's, although Butterfield and Swire was the first company to diversify into selling Australian butter, and, later still, frozen foods including poultry, pigs, and the provisioning of ships. B&S was also the first to sign a contract to supply the armed forces. The frozen food business was taken over from Butterfield and Swire, by Dairy Farm, in 1904.\n\nDairy produce\n\nIn those early days milk was obtained from native buffaloes and a few sickly cows. Then, John Kennedy, a veterinary surgeon who died in 1902, imported cows from Britain, and, in 1880, the dairy (established 1856) stood next to the Horse Repository close to where the Peak Tram is now situated in Garden Road.         "content_text": "237\n\nwould not usually condescend to undertake manual work the dairy created quite a stir by employing milkmaids from England. However when the Scottish parasitologist, Dr. (later Sir) Patrick Manson, arrived in Hong Kong he was appalled by the unsanitary living conditions and took a special interest in the local milk supply. This led to the founding of the Dairy Farm (well known today for its chain of 'Wellcome' supermarkets), in 1886, in spite of the fact that the Chinese had no place for dairy produce in their cuisine and many found the taste offensive.\n\nIn addition to Dr. Manson, W.H. Ray, J.B. Coughtrie, Granville Sharp, Phineas Ryrie and Sir Paul Chater were directors. The aim was to provide a hygienic supply of milk from cows kept on about 300 acres of good land in the neighbourhood of where the Wah Fu housing estate now stands, on Hong Kong Island. Although the site is exposed to the south-westerly breezes in the hot summer, which helped to keep the cows in better condition, all food-stuffs and building materials had, in those times, to be shouldered from the sea shore to the top of the hill by coolies. The subtropical climate affected the imported animals and the bulls were not keen to perform their duties during hot weather. After a disappointing first year of trading, nonetheless, in spite of disease among cattle and plague among citizens, a profit was recorded.\n\nMeanwhile Dr Manson returned to England, in 1889, to help found the London School of Hygiene and Tropical Medicine.\n\nA bad outbreak of plague struck the Colony in 1894 when Dairy Farm was brought to a standstill. This was followed by a rinderpest epidemic which affected most of its herd. Cheuk Yau, a cowman, had the initiative to drive 30 animals away from the infected area, and he brought them back later when the danger had passed. Ah Cheuk died soon afterwards but his widow received a special allowance from the company, and his two sons were given jobs with the firm.\n\nThe herd was later replenished with Frisians from Scotland, and a farmer, James Walker (also Scottish), was sent out by Dr. Manson in 1890 to be the first manager of the farm.         "content_text": "238\n\nCompany joined Dairy Farm and became known as the Dairy Farm, Ice and Cold Storage Company Limited, following the merging of the food sections of Lane Crawford and Dairy Farm.\n\nBecause records were lost little is known of the company's history between 1920 and 1942. The directors who were not killed fighting the Japanese in 1941, however, did manage to hold a minuted board meeting, on June 1st, 1942, in Stanley prison camp. They later held a joint meeting with the directors of Lane Crawford's when it was suggested the two firms should co-operate after hostilities ceased.\n\nThis idea materialised in 1960 with limited success. In 1972, Hong Kong Land acquired Dairy Farm in the first contested takeover bid in Hong Kong. The old building on Lower Albert Road, used by the Dairy Farm Ice and Cold Storage Company Limited until 1978, now houses the Foreign Correspondents' Club and the Fringe Club. In the late 20th century milk is tankered into Hong Kong mainly from China.\n\nWatson's\n\nAnother of the few firms that is as old as Hong Kong itself is A.S. Watson's. It is connected with the Canton Dispensary which operated from 1828 to 1858. The Hong Kong Dispensary was opened in a matshed at Possession Point by Doctors (Peter) F.H. Young, a naval surgeon, and Alexander Anderson. The latter became the first Colonial Surgeon of Hong Kong. Doctor John Morrison, son of Doctor Robert Morrison who founded the Canton Dispensary with Doctor Livingstone, was also involved. In July 1841, a bad typhoon destroyed the Dispensary's matshed at Possession Point as well as other structures in Hong Kong.\n\nThe main purpose of Di Yeuk Fong (†) (big medicine shop as it was then called) was as a dispensary for soldiers and sailors. On 1st January 1843 it moved to Captain Morgan's Bazaar, and the same year a Doctor Samuel Marjoribanks, a surgeon, joined as a partner. In 1845 the dispensary moved to permanent premises, in Queen's Road, and Doctor James Hume Young (a relative of F.H.         "content_text": "249\n\nand at six o'clock on December 1st, 1890, 50 electric lights were switched on in Queen's Road Central, Battery Path, and Upper Albert Road. All testing had been done in secret so nothing would mar the excitement of that first night. On the second night a fault put the electric lights out and sceptics were saying, 'I told you so!' A week later, during rain, the lights went out again, and they were not restored for two days. There were no more breakdowns from then on for 26 years.\n\nLater, all streets west as far as Bonham Strand and Caine Road at Mid-Levels, and, later still, along Queen's Road East and Wanchai Road to Mission Hospital Hill (the present site of Ruttonjee Sanitorium) were lit. Hong Kong and Shanghai were the first two Asian cities to have a public electricity supply, and Hong Kong Electric is the only surviving company of the many that pioneered electric power throughout the Far East. It is one of the oldest suppliers of electricity in the world.\n\nOf the three chief men who pioneered the Hong Kong Electric venture, Bendyshe Layton is credited with providing the momentum, and Sir Paul Chater, who was a director for 37 years, was responsible for finance. Capital amounted to $300,000, divided into 30,000 shares of which half were offered to the public. The third person was William Wickham the electrical engineer. He designed and supervised the building of the first power station and remained as manager of the company until 1910.\n\nInterest in electricity soon developed, and, in the 1890s, the first private homes were wired up and electric fans began to replace punkas. Also, by 1898, the first substation was constructed to service the new tall buildings, which had electric lifts (elevators), along the newly reclaimed waterfront. By 1905 the company was supplying power for 15 lifts, hundreds of fans, the equivalent of 34,500 lamps and street lighting. The Royal Naval Dockyard, near where Queensway now runs, was a blaze of light.\n\nPower was later extended, underground, to West Point, then the centre of the colony's busy night life. Subsequently electricity reached the Peak and Shau Kei Wan, and, by 1916, Aberdeen and Ap Lei Chau were supplied. Some believe that Swire's, with their ruthless trading tactics, helped to destroy Dent's although it is not known how much truth there is in this. Another firm that failed about the same time was the Agra and Masterman Bank.\n\nThere are many other once successful organisations that fell by the wayside. Names like Burd; Holliday and Wise; Humphreys; Lyall and Still; Murrow; and Turner; are no longer with us.         "content_text": "152\n\nirregular schedules between Tung Chung and Kap Shui Mun, Castle Peak, and West Point. Geographical inaccessibility and backward transportation made the Tung Chung valley an isolated place, and the community there remained secluded and localized. As observed, the slumbering rural character of the area remained almost untouched for 150 years after it was leased to Britain in 1898. Little development was undertaken until the 1960s when reclamation and resettlement were planned. Remoteness from developed districts allowed the place to retain most of the traditional ways of living.\n\n1\n\nSuffering from geographical isolation and poor transportation, Tung Chung's villagers subsisted on agriculture. Native produce included rice, sweet potatoes, taro, peanuts, and red onions. In the old days, rent-in-kind absorbed part of their yield. Red onions and a small portion of rice were transported by boat to the West Point market in Hong Kong for sale. To meet their daily needs, farmers also engaged in subsidiary work such as the raising of chickens and the collection of firewood. The wood was sometimes carried to the Tai O market for sale. Throughout the century, Tung Chung failed to develop into a market town on account of its inaccessibility. To supplement the meagre income from subsistence agriculture, many males sought employment outside the area, and became seamen in their late teens. People of the older generation have pointed out that in their community, men normally went sailing while women stayed home tending the farm and cutting firewood.\n\nThe influence of Hakka culture may account for the tradition of women acting as capable farmers. It is speculated that many Hakka people settled in Tung Chung after 1689, when the Ch'ing court repealed the decree of \"Coastal Evacuation\", which had ordered settlers in the coastal area of southeast China to move inland in order to prevent them from trading with Taiwan and aiding the anti-Manchu forces there. In the early years of the dynasty. According to Stewart Lockhart's survey (1898), all Tung Chung's villages, except for Ling Pei, were Hakka communities. Even in the 1950s, the Hong Kong Gazetteer still maintained that 97% of Tung Chung's population were Hakkas. Today some elderly folks can still remember a number of Hakka folksongs which, according to their custom, used to be sung in the field during or after work. The troops have got hold of quantities of beer and are singing to relieve their shattered nerves.\n\nI am too stunned to describe my own feelings but decide to try and escape. The Japs are reputed never to take prisoners. With Junior and three of my men we grab an Austin Seven and decide to make a dash for Aberdeen to try to get a boat. The engine won't start but it's all downhill. By now it's dark and the road is very narrow and tricky. We throw away our arms and get aboard. What a ride, crashing through barbed wire and road blocks in the dark but the old Austin showed her worth and we finally coasted into Aberdeen without seeing any Japs. We go straight to the AIS and get hold of a Chinese boy who says he will try to get us a boat with food and water. Then, to our horror, we discovered that the building had been locked and we could not get out as the Japs were outside. What a disappointment and we had nothing to do except find somewhere to sleep not having had a real one for ten days. My old room was a complete shambles so slept on the floor.\n\nFriday twenty sixth. Woke to a beautiful morning being unnaturally quiet and peaceful so that the last few weeks seemed as a nightmare. We were all under orders for the dockyard. Spent most of the morning smashing up thousands of bottles of beer and spirits for fear the Japs would get drunk and run amok. Got a car and set off for the dockyard passing hundreds of Chinese laden down with loot. On arrival at the dockyard we're told to go to the detention barracks, the men being locked up in the cells and we went to China Command. Had a real wash and shaved off my fortnight's growth of beard. The Colonel was in hospital having received a bullet through the neck, eight of our men were dead, and several missing. We had no kit so I decided to try and get back to the AIS. The only transport I could find was an old dairy farm lorry. Whimpey and Frank came with me. Soon we ran into several thousand Japs marching along the road looking tired and ragged. An officer signalled us to stop made me turn the lorry while troops climbed in the back. He indicated by signs that I was to drive them to HK. The troops seemed baffled by our blue uniforms but were quite friendly. Dropped our load and once more set off for the AIS. Passed hundreds more Japs but after some nasty moments finally reached our destination. Found most of our kit and got safely back.",

        "content_text": "10\n\nPak Lap is a single (Lau) surname Hakka village in which 17 houses built in two rows. In the past, Pak Lap's villagers depended on both farming and fishing; however, beginning in the early 1980s, farmland was taken out of agricultural production and most villagers moved away either working overseas or in the city. In 1993, a total amount of 300,000 square feet farm land belonged to Pak Lap villagers was all sold to a local developer; however, house land was still kept by the villagers. In addition, I was told that a condition of the transaction required by the villagers was that the developer had to rebuild the two rows of village houses (which they called Hakka pai house), even though the developer could have the rights of using them on a long-term basis to rent out for outsiders/visitors.\n\nUntil 1999, Hong Kong's economy was still on the downside, the developer was no more able to fulfil the previous contract made in 1993. With the mutual understanding between Pak Lap villagers and developer, restoration instead of rebuilding was agreed; moreover, the rights of using were passed on to the constructor, Mr. Wong, because of the incomplete payment owed by the developer. Starting from that moment, the Wong family was in charge of managing the 17 houses in Pak Lap; two for their own use and 15 for renting out. When I visited them in early 2002, I found the rebuilding of the Lau Ancestral Hall was complete and some abandoned farmland was cultivated to grow different kinds of vegetables for the meals provided to visitors and customers staying overnight in the Hakka houses.\n\nChek Keng\n\nThe third village that I would like to introduce is Chek Keng. Unlike Tai Long Wan and Pak Lap, most buildings in Chek Keng can still be seen as they used to be, even though some of the houses had collapsed. Chek Keng is a traditional settlement consisting of five different lineage groups living together, and it was probably founded more than 200 years ago. Regarding the history of lineages in this Hakka village, I was told that there were five different lineages with surnames Fan, Chiu, Lee, Wong and Cheng living in the village. I got a chance to contact the village representative, Mr. Fan, who spent most of his time between UK and Hong Kong.
