        "content_text": "12\n\nW. C. HUNTER\n\nThe Hunter Journal was presented to the Boston Athenaeum by Dr. Robert W. Hooper on March 27, 1858. Hooper was born in Marblehead, Massachusetts in 1810, graduated from Harvard College in 1830, received a medical degree from the same institution six years later, and thereafter became a prominent surgeon in Boston. Hooper was also a bibliophile and a trustee of the Boston Athenaeum who added substantially to its holdings by gifts. It is impossible to establish definitely how he obtained the Hunter Journal, but it seems probable that it came from his wife's family. In 1837 he married Ellen Sturgis, daughter of William Sturgis who was active in the Orient trade. Many Massachusetts men engaged in the China trade were related. In 1788 Thomas Handasyd Perkins went to China on the Astraea and launched a commercial venture with the aid of his elder brother James. 1803 their nephew J. P. Cushing also travelled there and managed the business until 1828. Other nephews of T. H. Perkins, James Sturgis, and Charles Bennet Forbes also prospered in the China trade. In 1833 the third generation of the family left Boston for the Orient and for the next decade divided his time between Manila and Canton. William Hunter was a business associate of both R. B. Forbes and Russell Sturgis and mentioned the latter in his Journal, Julian Sturgis, son of Russell had vivid memories of Hunter.\n\nIn\n\nI remember Mr. Hunter visiting my parents at Walton (England) when I was a boy, a handsome, courteous man with a brown face and white moustache, like a fine type of Anglo-Indian, and speaking Chinese for our amusement with so soft a voice that I have often wondered how much of that soft musical quality was due to him and how much inherent in that unknown tongue.2\n\nHunter finally left Canton and closed Russell and Company in May 1841. This move was recorded in the letters of William Henry Low, a young man in his twenties who arrived in Canton in September 1839 and joined his brother A. A. Low in Russell and Company.\n\n1 Russell Sturgis joined Baring Brothers and Co. of London after he ended his commercial ventures in China about 1849. The second, Fa Chu Kung, was in all probability a historical being, the actuality of his origins lost in time, who now appears as a legendary being. The third, Cheng Ho, is a comparatively recent and well-documented historical being, deified by popular appeal, with little myth or legend added to his story.\n\nTwo of the three are popular Taoist spirits or gods (†‡) and believed to be beneficent whereas the third, T'ai Sui, is a feared Taoist god.\n\nThe detail of the development of each cult, the recognition features of each deity, the frequency of sightings and the identities of other deities co-located with the main deity described below are based on sightings and conversations in some two and a half thousand temples, and six god-carvers' shops located in Hong Kong and Macau, Taiwan, the Philippines and in most parts of South East Asia; and also from notes culled from many books, mostly written by Christian missionaries who so often vented their spleen on the subject of heathen idols.\n\nOne final prefatory note is necessary at this point, a short description of a novel which is one of the main sources of myth and legend about the gods.\n\nThe novel, the Feng Shen Yen I (#Ħ✯A), The Deification of the Gods*, written in about the fifteenth century about the supernatural, describes the historical struggle between the last king of the Shang Dynasty, King Chou (*†£) and the victor, the first king of the subsequent Chou Dynasty, King Wu (1). The capital of the Shang Dynasty was the ancient city of Anyang, where King Chou, infamous for his tyranny, cruelty and excesses is said to have reigned for thirty-three years, 1154-1121 B.C. King Chou was destroyed with the Shang Dynasty in the flames of his palace at the Deer Terrace after a crushing defeat by a rebellious army under Hsi P'o (‡) on the banks of the Yellow River. Hsi P'o founded the Chou Dynasty and is remembered as King Wu (1).         "content_text": "BRUNEI A HISTORICAL RELIC\n\n25\n\nacquisition of Limbang cut right across the middle of Brunei territory. It was only later discovered after the Foreign Office was able to obtain accurate maps of the region. Hence Brunei is bifurcated and each part almost surrounded by Sarawak territory.\n\nThat Brunei was not completely annihilated is perhaps due to the late and strenuous objections of the rajas themselves, as well as to some feeling of conscience on the part of officials in the colonial and foreign offices. Some in Whitehall thought it a good thing and a great convenience for the future to allow Sarawak and North Borneo to divide up the carcass. Lord Salisbury, the foreign secretary in 1888, noted that Sarawak and North Borneo were \"rapidly crushing out\" Brunei between them. He noted,16\n\nI think we had better let them finish it, and make no agreement with the Sultan of Brunei which would stand in the way of a consummation which is inevitable, and, on the whole, desirable.\n\nNevertheless a protectorate was agreed to in 1888. Sarawak and North Borneo also became protected states. But very little change occurred in Brunei. Except for being saved from extinction the new status merely formalised a situation that had prevailed since 1847—the sultan and rajas continued their misrule while Britain retained control of foreign relations.\n\nIV\n\nTwo further events contributed to the salvation of Brunei and its resuscitation. In 1906 Britain finally agreed to appoint a resident advisor to help the sultan manage his affairs.17 And in 1929 oil was discovered in commercial quantities in the southern part of the state at Seria in the Belait district.\n\nModern Brunei is oil rich and not unlike in that respect some of those other Muslim sultanates, in the Persian Gulf. Its 2,226 square miles is inhabited by 144,000 people, with two largish urban concentrations at Bandar Seri Begawan, the new name for Brunei Town, still on the sluggish Brunei River in its old location, and Kuala Belait-Seria some 80 miles to the south, surrounding the oil fields. The urbanites are largely Malay and Chinese with numbers of Ibans working the oil fields. The remainder of the indigenous peoples are Kedayan, Dusun and Murut, mostly living along small streams in the interior. If the family consisted of only five members, all five had to be mobilized: first of all, to grind the beans and then boil the paste. After the paste was hot enough, one member had still to keep heating it to produce the layers of bean skim. Another member carried the products prepared the day before to Kowloon where he sold them to the shops and bought more beans. The remaining members, after finishing their breakfast, had to climb the hills to look for dry grass which they fetched home for fuel. This was the hard way by which our ancestors managed to make a hand-to-mouth living and rear us.\n\nNowadays, we have electricity, motor and transport facilities and the manufacturing process has mostly been mechanized. The kind of hard life that our ancestors once led will never be repeated.\n\nADDENDUM\n\nThe brief account that follows is taken from Peng-chun Chang's China at the Crossroads (London, Evans Brothers, 1936) p.145.\n\nAn example of a type of manufacturing common in the villages is the preparation of tofu, or bean curd. A tofu shop may be seen in nearly every village. In this shop is the mill used for crushing the beans. This mill is run by human or animal power. The beans are ground in the mill and then mixed with water. The liquid, called bean milk, is squeezed from the mass and boiled in a boiler which is part of the shop's equipment. This boiled milk is frequently eaten. If, however, certain chemicals are added to the boiled liquid, it solidifies and is known as bean curd, or tofu. The tofu manufacture represents a rough, everyday type of manufacture common in the villages. It exhibits the skill of accumulated experience, for this food has been common in the diet of the Chinese people for centuries.\n\nTofu is high in protein and takes the place of dairy products and meat in the diet of the people. Recent scientific experimentation in China is endeavouring to find a commercially profitable way of reducing the bean milk to a powder to take the place of imported powdered milk.\n\nChang was a native of Tientsin and presumably is referring mainly to North China. For a recent detailed account from Hong Kong based on field work in 1961 and 1963 see Vol. One, Part III, 27, \"The Bean Curd Maker\" of Cornelius Osgood's The Chinese. But salaried employment is a blind alley,'\n\nThere was a strong implication that the life of a subordinate was stifling and humiliating. Thus A18 said,\n\n'It depends on your personality. Many people are content with their lot, so they become employees. But if you have high expectations for yourself, you want to do things on your own. You have to take risks.'\n\nGiven the dislike for subjugating oneself, why then did a handful of the owner-directors express a wish to be executives? When I pressed for the reasons, I discovered that it was not because they valued this role for its own sake. Rather, they regarded it either as a stepping stone providing the necessary preparation for later ownership, or else as an escape route offering relief from the crushing responsibilities of handling an unwieldy work force.",

Hawkers doing business in front of the Po Lin Monastery on Ngong Ping Plateau are also \"cashing in\" on the trade by bottling the drink for sale to visitors. Because of the thirst-quenching properties and good \"cooling effect\", the drinks are particularly welcomed by hikers. However, most of the dried leaves for sale there nowadays are in fact imported from Ting Wu and Lo Fu Mountains (#LI, #) in Guangdong Province. The price ranges from $5 to $12 per packet according to weight.\n\nThe popularity of the drink seems to be declining in recent years, particularly among young people who prefer ready-made soft drinks.         "content_text": "52\n\nBARBARA E. WARD\n\nSai, where the rise and fall of spring tides could be as much as 25 feet, was that it had such a place. It lay on the east side of the temple and was in fairly constant use during spring tides. Legs to support the junks were kept in the temple, as a rule, and freely used by all. The purpose of careening was, of course, to examine the boat's bottom, and remove the accumulation of marine growth. This was done by burning, with bundles of dried grass held on pitch forks, and scraping by hand. Any cracks in the hull were caulked, and the whole bottom then treated with tung oil. One of the innovations of the late 'fifties was the use of anti-fouling paint instead of tung oil. This, though more expensive, gave better protection and cut down the frequency of careening to about once in every two months.\n\nAnother regular task, performed at least once a month in the days of sail and before the introduction of nylon, was the dyeing of sails, sail cloth and nets. This process, intended as a preservative measure, involved a whole day's work for an entire crew, preceded by several days' preparation on the part of one or two members. The dye-stuff used was prepared by crushing and soaking a root known as shue-leung. This was then transferred to the dyeing tanks on the second island where nets and sailcloth were dipped, dried and dipped again two or three times before being steamed for several hours and finally spread out to dry. Dyeing had to start early in the morning. It required good weather and the payment of $4 dollars a day to the Hakka 'headman' who owned the tanks and steaming vat. With mechanisation and the nylon revolution regular dyeing sessions were no longer necessary, but sail cloth (used for awnings) and some pieces of netting still had to be dyed from time to time.\n\nSeasonal rhythms\n\nSeasonal rhythms naturally varied with the type of fishing. The long-liners' main season was during the first four months of the lunar calendar, the purse-seiners' in the sixth, seventh and eighth months. The main seasons were looked to for the extra profit that would go into boat building or repairs, buying new gear, marrying a son or daughter, or installing a new engine. The courses, for which no charge is made, have been running ever since.43\n\nThe Boats: Seasonal and Individual Differences\n\nLying as it does just within the Tropic of Cancer, Hong Kong experiences quite marked seasonal variations in temperature and rainfall. The months of January, February and March can be chilly indeed and very damp. The boat covers are seldom removed, padded clothes are piled on, and those who can afford them are glad to sleep rolled up in thick padded cotton quilts. April begins to warm up, but is usually still cool and wet until at the end of the month there is a dramatic change (often heralded by a week or two of dull, very humid weather) to the strong sunlight and high humidity of summer. The covers are rolled up, padded clothes and quilts stored away, and out come the canvas awnings which are rigged to provide shade at stern and bows. The warmth of the engine, which is a comfort in the winter, is much disliked in summer, but a moving boat is always cool and even at anchor the heat and humidity seem less on board than on land. One of the attractions of Kau Sai in the summer is the constant cool breeze that is guaranteed by its position at the edge of the narrow strait, and the clear, clean water where the children splash and swim. In the old days one of the most important functions of the village shop was to provide storage for winter clothes and quilts during the summer months; now these are kept in the fishermen's own new houses, but as the shopkeeper made no charge for this service no one is either better or worse off.\n\nApart from such seasonal changes as these it might be thought that there could be little scope for individual variations from junk to junk. After using the latrine, users would take a spadeful of ashes and tip it through the gap. This kept the smell of the latrine from becoming too offensive.\n\nThe aim was to produce a mixture of ash and excrement which was both an excellent fertiliser, and capable of being stored against need. To store this fertiliser, the mixture had to be dry. The latrine therefore was designed so that liquids would drain out of it into a urine pit let into the floor, and lined with heavily plastered bricks. The latrine owner would dip out the urine as necessary, and remove it to a storage jar outside, to mature it for fertiliser.\n\nThe main contents of the latrine would be cleared out once every few weeks, when the latrine was full. A section of the wall round the latrine proper was made of planks slid into a groove. These were removed, and the contents of the latrine scraped out through this gap. The contents were then taken to a drying ground, and spread out to dry in the sun. Every latrine owner had access to a manure drying ground for this purpose: the villagers usually forbade the use of the rice drying grounds for drying manure. When dried, the fertiliser was rock hard. It was then crushed to a powder under a heavy stone roller pulled by an ox; in some villages the crushing was done by the ox pulling a heavy plank, made heavier by having a child stand on it. The dried and powdered fertiliser could be stored almost indefinitely so long as it was not allowed to get damp.\n\nThe third division of the structure was used as a pig-pen. This division could have been used as a second latrine compartment, had the usage of the latrine increased to the point where this was necessary.\n\nThis latrine structure at Wo Hang is entirely typical of the thousands which, even only twenty years ago, were to be found throughout the New Territories. Wo Hang is a Hakka village, but Punti villagers have told me that latrines in their villages were identical. Some latrines were smaller, consisting only of the latrine proper and the ash-dump with a narrow corridor in front on to which the door opened; these latrines were sometimes only about 6 feet square. Others were busier, with two or even three latrine compartments. Probably most were very similar.",

It allowed people to communicate quite effectively in a situation where to learn or teach standard English would have been totally impractical. I believe that Pidgin had, in addition to the advantage of overcoming superficial communication problems, the subtle advantage of bringing together people from totally different socio-linguistic backgrounds to speak in a language that was native to neither—that was not a minefield of cultural conventions which could make normal communication break down.\n\nSources of Pidgin\n\nSome readers will, I am sure, have had personal experience of China Coast Pidgin. I am indebted to a number of old people who have told me anecdotes of Pidgin from before the Pacific War. Unfortunately, this anecdotal evidence is very limited. I have only been able to obtain it from Europeans: we have not yet come across a Chinese who still has a working knowledge of the language. What we have taken down from native English speakers has often been \"normalized\" towards standard English. We shall now take some time to cover some of the more important written sources available to us.\n\nThe most frequently cited sources for Pidgin are by native English speakers. W.C. Hunter's books, mentioned earlier on, quote extensively from conversations in Pidgin.\n\nHunter's quotations cover an early period (1806-1854) and are generally consistent in style. Cotton ginning factories, sugar cane crushing mills, fibre decorticating plants, tobacco grading and packing factories, saw mills and tin smelters had been constructed to reduce the bulk of primary products and make them more convenient for export. Other industries were started for the purpose of import substitution. In almost all the sugar producing colonies sugar refineries had been set up. Edible oil, lard and soap factories were established using local produce in Nigeria, Ceylon, Nyasaland, Trinidad, Jamaica, British Guiana, British Honduras and Fiji. Breweries had been established in the Gold Coast, Kenya, Cyprus, Malta, Jamaica and the Straits Settlements; match factories in British Guiana, Jamaica and Trinidad; a canned pineapple factory in Malaya. This is by no means an exhaustive list of industrial enterprises in the colonial empire in 1932. All these factories had been set up to serve the local market and had taken advantage of tariffs which had originally been imposed by colonial governments for revenue purposes. In some cases this level of protection was sufficient to make the factory viable. In other cases the company contemplating investment asked the governor for the tariff to be increased so as to exclude competitive imports or asked for a guarantee that no excise duty would be imposed or that any excise duty would be levied at a reduced rate.\n\nColonial governors showed no reluctance to grant these concessions in order to encourage the establishment of local industries in spite of the loss of customs revenue and the increased prices paid by the consumer for goods previously imported. Often governors neglected to seek specific permission from the Colonial Office to make such changes to the schedules of their customs ordinances. In a number of cases the Colonial Office heard of the new protective duties only when British manufacturers complained that they were being excluded from the colonial market. When an industrial project was referred to London governors used various arguments to support the protection of infant industries in their colonies: that the proposal was a legitimate development of local resources; that it would relieve unemployment; that a pledge of protection had already been given by government to the promoters; or that the proposals had the support of the unofficial members of the executive and legislative councils.\n\nNormally the Colonial Office did not refuse to sanction the grant of assistance to the new local enterprise. For example, in 1927 the legislative council of Jamaica passed an ordinance to increase the tariff on biscuits, soap, edible oils, cordage and matches and to remove the excise duty on soap, edible oils and matches in order to protect local industries. The Colonial Office sanctioned this ordinance without any adverse comment. Once an ordinance had been passed by a colony's legislature and had received the governor's assent it",

        "content_text": "40\n\nand this was on a good weather day. An alternative was to utilize the sole railroad in the territory - the Kowloon-Canton Railway (KCR). However, the KCR was primarily a passenger railway, so rolling stock for transporting freight was in short supply,12\n\nA third option was to transport the supplies by water via the Pearl River and its tributaries, which lead up to Canton and points beyond. This method, if fully operational, would greatly increase the amount of supplies headed inland. It too was dependent on various factors, like Allied control of both banks of the Pearl, the availability of suitable river craft (Canton could still handle large vessels, but as the river branches out and tapers off, smaller vessels would be needed), and the weather.13 Without modifications, the mediocre communications inland from Hong Kong would not do justice to its generous port capacity.\n\nAs for ground operations, the Allies enjoyed a crushing supremacy over the Japanese in the quantity and quality of their armour, but Hong Kong's mountainous terrain would have ensured that armour could see only limited duty there.\n\nOn a bad day, mechanised transport would become bogged down on Hong Kong's muddy roads. The Allies would have felt Hong Kong eerily similar to Italy, a place that was also mountainous and experienced high rainfall. There, the Allies had armour superiority, but it was of limited value, and their advance was slow. Their advances along the coast were a bit faster because it was relatively flat, just like Hong Kong's. However, during bad weather days, a lack of natural ground in many of the coastal areas (due to urbanisation) to absorb rainfall could cause flooding. In addition, there was human-induced flooding. Southern China was still mainly an agrarian region, where farmers would deliberately flood their fields in April of each year to fertilize their crops.14 That added at least a month to the flood season.\n\nInfantry would also find the combination of rainfall and challenging terrain as harsh for them as they would be for their vehicles, if not more. A keen glider pilot, he was eager to taste the eastern thermal currents. When he set off in a Chinese glider, towed by a military plane, it was to be for a flight of more than four hours and set an Asian record. After the attack on Pearl Harbor, he managed to flee Hong Kong as the bombs fell, and to reach South Africa. There he joined the RAF and passed his examinations as an aeroplane pilot. Lieutenant de San then went to Congo, where he was based until the end of hostilities and undertook various missions and operations in Oxford and SV4 planes. This is his account of how he set the record in China:\n\nIt was 1940. For a year I had been in Chungking, wartime capital of the Chinese government. There was bombing day and night, crushing heat of more than 40 degrees, tension, loneliness... There were few distractions: one was being a spectator in the virtually hopeless struggle of the Chinese people, at war for two years. I travelled the country and spent hours watching the clouds, birds, weather conditions; I rapidly concluded that the good thermals had to be as numerous as fish in the Yangtse.\n\nI knew every corner of the area around Chungking.
