        "content_text": "194\n\nThe newspaper does not identify the author, or give a Chinese version, stating only that he was \"a poet and scholar who formed part of the suite of the High Imperial Commissioner (Keying) during his late visit to Hong Kong, and was composed on board the steamer on the way back to Canton.\"\n\n**\n\nIn 1981 the journals of Edward H. Cree, Surgeon, RN, were published by Webb and Bower, of Exeter in England. In 1845 Cree was surgeon on the Vixen, a steam paddle sloop. In his entry for Tuesday, November 25, Cree records that the Vixen was taking Keying and his suite back to Canton:\n\n\"A salute was fired from the battery as we started through the Cap-Sing-mun passage. On our way we were also saluted by the Chinese forts and war junks. I almost got into the bad books of Low, the Lord Mayor of Canton,' by a practical joke that Willcox, the 1st Lieutenant, played on me: he came up to me on deck and said: 'Doctor, do you know that the gunroom is full of those confounded flunkeys, and one of them is snoring in your cabin,'\n\nI rushed down and saw, on my bed, a great body and a pair of legs encased in black satin boots on the pillow, the head at the other end snoring most lustily. I unceremoniously laid hold of him, and rolled him on to the floor. At the same time one of the servants rushed in and jabbered something, holding up a mandarin's cap with the peacock's feather: I immediately saw it was the great Lord Mayor I had treated so roughly. I apologised as well as I could. His Lordship, who was now wide awake, sat at the table and said something to his valet, who brought him writing materials, with which he set to work filling a large sheet of paper with neatly written Chinese characters. I thought, now I am in for a report to the Lord High Commissioner, and told Gutzlaff, the interpreter. Chaou, who was in the Purser's cabin next door, laughed immoderately. Soon the paper was handed in, and I got Gutzlaff to interpret it. I was pleased to see it was no report, but an ode Low had been composing on his departure from Hong Kong.\"\n\nI\n\nIt seems reasonable to speculate that this was the ode which the Friend of China published a translation of a few weeks later.",

        "content_text": "131\n\nThe Chinese have two words for chopsticks. The common one, found in Mandarin, the Wu dialects, Hakka and Cantonese, is kuaı-zi. The other word, appearing in Classical Chinese and the Min dialects, is Zhu.\n\nChinese etymological works relate that the classical term, zhu, rhymes with the word in the Wu dialects for \"becalmed\", and therefore superstitious sea-faring folk in that region adopted the word kuar to avoid a taboo word. If this seems far-fetched, it should be noted that such derivations of words in Chinese are commonplace.\n\nIt is therefore possible to establish that the concept of “speed\" and \"chop-stick\" are related in Chinese, but not because anyone ever found chopsticks quicker to eat with.\n\nWhile we do not wish to overturn the folk-etymology (indeed, we have no evidence for doing so), we should like to point out an alternative: seventeenth-century craftsmen used the word \"chops\" both for \"jaws\" and \"vice\" (like the ones you lick). See the OED for evidence on this.\n\nChopsticks were known to Western writers from c. 1540 (Portuguese), and the English word “chopsticks” appears in 1711 describing Chinese eating habits in an account of trade with India.\n\nChow\n\nThe word, meaning \"food\", is given in Tong Ting Shue as jaau-jaau. It may be related to the word “chow-chow\", meaning \"mixed”.\n\nDr Batalha defines a Macau Patoa word, chau-chau, as a Chinese fried food in a sauce, a mixture of different things, or a muddle. She gives as the origin the Cantonese word chaau, to stir-fry.\n\nIt seems clear that two different words existed, one of Indian origin, meaning \"mixed condiments\" or just “mixed”, and the other meaning \"food\".\n\nBut Tong Ting Shue uses jaau-jaau, employing the Chinese characters for “a cover\"; he was clearly not struck by any similarity.",

Nevertheless, in Cantonese slang, a corpse is sometimes described as 'salt fish' (hàm yú), one imagines because of the smell. In the context of not joking about death Mary Rafferty, the then new chief executive at the Matilda Hospital, on the Peak in Hong Kong, seems to have put her foot in it when she told one of the Chinese doctors: 'I'm checking up on you to see if your patients are still alive' (Cheng, 1998). It did not seem to dawn on the good lady that you do not make such remarks in Chinese society.\n\nA retired English, Hong Kong government servant was, as his son described it, showing off to a lady friend how he could swim under water. He suffered a heart attack and died. 'What a wonderful way to go,' was how his middle-aged son, with a grin, described it. When the author related this event to a number of Chinese they were unable to appreciate the 'joke' in quite the same light.\n\nThe English sometimes play with sentences and the meaning of words, as may be seen from the joke quoted earlier in this paper, about Lewinsky, Gore and Clinton junk bonds. Similarly the Cantonese, with the homophonous nature of their language, play with similar tones with which two or more characters are pronounced (Smith, 1988:149). They love puns and double entendre, which Westerners do not always appreciate, in which their rich and complex language abounds (Bolton 1997:299). Chinese have a great deal of fun playing with homonyms in their conversations around dining tables. For example two pairs of Chinese characters, both pronounced faat choi but with slightly different tones, mean either 'hair vegetable' (fà cài) (a blue-green algae) or, alternatively, 'become wealthy' (fā cái). There are countless examples. Similarly, a lecturer who taught in the ‘electrical' engineering department of a college varied the tone of the word 'deen' (meaning electrical) so that it sounded as if he taught in the 'crazy' engineering department.\n\n... \n\nThe word for 'fry', in Cantonese, is pronounced chaau. But the same sound is also slang for 'speculate.' People joke about a certain Mr Wong, in Hong Kong, who changed his profession from cook to stockbroker. The pun is that he used to chaau food but now he chaaus shares!",
