The following recipe has been adapted from one that was used in the kitchens of George IV: The secret of their superiority consists in blending the mutton with the Italian sauce as directed.

Cut part of the filet from a loin or neck of mutton in dice, put two oz of butter in a stewpan with chopped curry onion. parsley, half, a dozen chopped mushrooms, salt "and pepper; let these simmer over the fire a few minutes; mix the mutton with this and set the whole to cool.

Then mix with some of the fol-" lowing Italian sauce. Line a dozen or more tartlet moulds with the trimmings of puff paste: fill them with the meat mixture when cold, cut out the cover from the centre of which cut a piece the size of a wafer: egg the pattles and bake then

Ingredients: 1 pints milk, two tablespoonfuls strong, coffee, 3 eggs, 2oz. caster sugar, pint thick. "cream, joz, gelatine.

Dissolve the gelatine in the hot coffee.

Ball the milk in a double cooker, let it go of the boll, then add the eggs and sugar. Cook very slowly until the mixture thickens, then remove and add the coffee and gelatinie.

Allow to cool partly, then stir in the whipped cream. "Pour into à wet mould and leave to set. Turn out and decorate with ground walnuts.
