Soup is such a satisfying dish -particularly if it has an in- dividual and unique favour. The Soups suggested here are un- usual and hence furnish a partic- ular appeal to the appetite.

SAUERKRAUT—TOMATO DOULLION

Combine equal parts of tomato and sauerkraut juice. Place in a saucepan and bring to a boil. Add additional salt to taste if desired. Serve in hot boullion cups. Small

crackers which

contain caraway or poppy seeds or 'cheese are es- pecially delicious with this boul- tion.

ASPARAGUE SOUP "..

Make a puree of cooked aspara- gus. reserving tips and combine

with an equal amount of thin white sauce made of 1 cup of evaporated milk and 1 cup canned chicken broth. Use tips in the soup.

VEAL BROTH

Knuckle of veal 4 carrots 2 onions

1 white turnip 3 qts, cold water Salt and pepper

Fut veal in water. Let stand for half an hour. Bring slowly to a boil. Skim carefully, add salt and pepper, onlons and carrots and turnip. Simmer 3 hours or

EGG-DROP Sour

Have well-seasoned meat broth either beef or chicken, bolling slowly, Beat 4 eggs fairly stiff with a little salt and pepper. Drop the eggs into the broth, a teaspoon at · a time. Serve at once.

STUFFED TOMATOES Cut a small slice from the top of six medium size tomatoes. Scoop out the centers and fill the tomatoes with a mixture of 1 cup grated cheese; 1 cups fresh bread crumbs, salt, pepper and celery salt. Top with a generous sprink- ling of grated cheese and bake in a moderate oven until the cheese 'is melted."

Add strained, tomatoes, tomato paste, salt, sugar and water. Still all in- gredients well together and cook very slowly for at least 1 to 2 hours. The sauce may be made the day before and kept in the refrigera- tor. Just before serving boll spag hetti until tender and serve it with plenty of sauce-be sure you do not boll the spaghetti long enough for it to reach the "mushy" stage. Serve with lots of grated Italian

cheese.

HOT POTATO SALAD WITH FRANKFURTERS

Wash and cook in bolling salted water 6 to 8 medium size potatoes, Cool, remove skins and slice thin.

Saute 4 slices chopped bacon with 2 small chopped onions. Add to hot fat 3 tablespoons cider vine- gar.

Pour this over the potatoes, mix well, cover and heat about 15 minutes in a slow dven." Line 1 bowl with lettuce leaves, arrange the salad and sprinkle with chop- ped parsley.

Cut the round steak into long narrow strips and brown in 1 tablespoon of fat together with chopped anton. Make a sauce of | tablespoon of the fat, the four, the mustard and the stock. Place the meat in a deep sauce

Divide the hamburg into six in- dividual servings. Form each ser- ving into 2 flat round cakes. Tap each cake criss cross with a sharp

SWEDISH EGGS

Hard cook half a dozen eggs. Remember that the best way to cook them is to put the eggs In boiling water, reduce the heat so that the eggs cook, but the water no longer bubbles. After 15 or 20 minutes plunge the eggs into cold water. When cool shell, split and remove yolks. Mash the latter and blend with 2/3 cup of mayou natse, cup finely minced cooked beets. 2 tablespoons capers, salt and pepper to taste, Stuff the mix- ture in the egg whites and sprinkle the tops with finely minced pars- ley. Top the center of each hair with 2 or 3 spears of beet and a bic of pickle.

CROWN ROAST OF LAMB From 2 or 3 rib sections of spring lamb have your butcher fashion a crown roast. Have him all the center with the chopped trimmings and to put small cubes of pork on the ends of bones. Sprinkle ment with salt and pepper and place in roasting pan containing cup water. Star in hot oven, after 15 minutes, reduce to moder- ate-cook about 14 hours, basting, occasionally. When done remove Alling, place "crown" on platter and refill center with potato balls or tiny new potatoes cooked in. salted water. Remove bits of park from bone ends and replace with pape frills.
