THREE SOUPS COLD FAVOURITES ORIGINAL SALADS

SAVOURY GALANTINE This galantine can be made the day before. A slice or two with salad and cold new potatoes makes an appetising meal.

Potato Soup-Peel and dice a pound of potatoes, a large onion, and one or two outside pieces of celery: Melt a little butter, add the vegetables, cover and cook for a few minutes, shaking the pan often. Add a quart of white stock, six pepper-corns, a blade of mace. salt and pepper, and simmer slow-meat. ly for an hour. Rub through a steve. Add a breakfastcuptul of milk and a little cream, and re- heat.

Oxtail Soup-Have an oxtati cut into small joints, dip in seasoned flour, and brown all over in drip ping. Remove the pleces,, then fry' a sliced carret.-turnip, onion, and a sick of celery. Add to the meat, together with two cloves.. a bay leaf, a blade of mace, pepper, salt, and three pints of water. Simmer gently for not less than three hours, then strain off the stock. Thicken it with one or two table- spoonfuls of cornflour, and boll for another five minutes. Remove some of the pieces of meat from the bones and add to the soup. The rest of the bones and meat can be put into the stockpot.

MAKING. THE GLAZE
