Christmas is, without doubt, a hospitable season. Frlands call to -exchange greetings, and often ex- "pect to stay for a meal, and good to feel that you can 'welcome them whole-heartedly because you know there's a ham or some other delect- able meat, to set down later in the evening.
A savoury galantine, for 10- stance, served with tomatoes and cold sliced potatoes sprinkled with salad cream and chopped parsley. makes a delightful supper dish.
To make this galantine, remove the skin and gristle from 21b. lean beef, then mince the meat. Add: 4lb. seasoned sausage meat, a lea- spoonful of powdered suge, salt, pepper, two cupluls of bread. crumbs. and bind with beaten egg.
Shape into a long roll, tie in a; scalded, floured cloth, then put in- Lo balling water, and boil gentle for two hours.
Remove the cloth, leave until cold, then glaze. If you want to press your galantine, place it be- tween two plates before glazing.
The glaze is made by reducing brown stock until it is very thick, or a quicker way is to dissolve a meat cube, in half a cup of water. add a leaf of gelatine. then brush the thickened liquor over the meat. COOKING AN OX TONGUE

You should first soak it in cold water for twelve hours. Put the tongue Into a pan, cover with cold water. bring gently to the boll Remove the scum, then simmer for three to four hour.

"When cooked. leave the tongue in the liquor until cold. then re- move the skin and bones. curl the tongue tightly round in a large cake tin, and pour over the glaze. Leave over-night. turn out and garnish with sprigs of parsley."
Now for the ham An important point is to make sure of its gxact weight. Next. soak the ham in. cold water over-night, then place it in a boiler, or deep, saucepan, and cover with cold water.
If an enamel plate is placed at the bottom of the container, there will be no fear of the meat burn- ing or sticking to the bottom.
Bring slowly to the boll, and once it is belling allow for cooking time

Warm the butter and syrup, and leave to stand for a minute or two. Then add the flour, sugar, and ground ginger and beat vigorously with a wooden spoon.

Drop in teaspoonfuls on a greud- then bake in a moderate oven, all- owing half an hour to each pounded tin, then bake in a moderate oven until crisp and brown. Lift in cooking time. If liked, it can be boiled for an hour, before covering with the paste, then less time is required for the baking.

And now for the liquid refresh- ment. Punch has a Christmas party air. It need not be alcoholic unless you wish. but it must have lemons.
Reckon the juice of three Juicy lemons and lb. sugar to every bottle of water. Put the juice and sugar in a large bowl and pour on the boiling water. Add some sprigs of mint and some slices of lemon. Taste and add more sugar as desir- ed. Cinnamon or nutmeg is some- times added to give extra flavour- ing. The addition of whisky or rum must be left to the discretion of the host. Originally punch was always drunk steaming hot, being ladelled out into the glasses. But in this country it is more often served icy cold-unless your party should happen to be in the hills!
