EGGS A LA BENEDICT

8 eggs

3 English muffins Thin sliced ham

Hollandaise sauce

Split muns and toast them. til well browned. Spread lightly with butter and place slice of thin boiled ham on each mumn. Poach egg to medium bard stage and put one on each müfni. Top with Follandaise sauce and serve at once.

SHIRRED EGGS ON SPINACH

1 lb. spinach, chopped fine 1 cupe dry bread crumbs

+ tsp. salt

cup grated sharp cheese Heat the spinach, stir and cool- for about 2 minutes. Add the salt, 1 cup of the bread crumbs and pepper, Spread the spinach in a 1-inch layer in a gress« shallow baking dish. Break the eggs on top and cover with the remaining crumbs that have been mixed with the cheese. Bake for about 15 minutes. Serve at once.

Put 1 can condensed tomato soup In a shallow frying pan, let it come to the boiling point. Drop eggs into rings placed in the hot soup and cook, basting tops
