Add cocoa for melted chocolate), Add salt to egg whites; heat, very stiff; add well beaten yolka Stir in the sugar then add chocolate mixture well-beaten. Beat all thoroughly. Add vanilla. Mushroom: powder is excellent for winter use, and a good store should certainly be made now:---
Four quarts mushrooms, two onions, ten cloves, foz powders ed mate, two teaspoonfuls of pepper.

Peel the mushrooms and pur them in a saucepan with the other ingredients. Shake over until all the liquid is dried up. and then put in a moderate oven in shallow tins. Leave until quite dry and brittle, and then pound" "to a fine powder and put in an airtight bottle. This is excellent for stews and gravies, etc.
Mushroom fritters are made by simmering some mushrooms, with a little lemon juice, thyme, garlic," and bayleaf, and then draining.
Have ready a batter and some lard for frying. Mix the mush- rooms with a suitable quantity of batter and drop into boiling, fat a spoonful at a time.
Mushroom turnovers. Fry in butter one pound of peeled mush- rooms, and thicken the liquid with two eggs and a tablespoonful of cream.
Roll out some puff pastry, cut into oblongs, moisten the edges, put in a good layer of mushrooms and cream Bauce on one half, and fold over. Bake in
a hot oven for Afteen minutes. These are very good hot or cold, and handy for the picnic hamper or a budet supper.

Bott all together till soft. Cool slightly, then spread on one plece, of pastry cover with, the other. press down edges. Put on to fat tin, mark in fingers.
Bake In moderate oven thirty- Ave mmutes, cool and break. Will Keep some time. In airtight tin
Add a good glassful of 'Kirsch,' replace the piece which was cut out, and keep on ice or in the re frigerator for two hours at least before serving.
Tomato Savoury
Here is a good summer savoury. Scoop out half a dozen tomatoes and put the pulp into a saucepan with a piece of butter the size of a walnut, a suspicion of, minced onion, salt, pepper, a pinch of su- gar and a clove. Cook together for a little and then pass through a aleve.
Add enough, gelatine to set it not too stimly, and then beat int it two tablespoonfuls of lightly whipped cream. Keep this cream mixture on ice, with the tomatoes, and when you are ready, fill them with it and send them quickly to the table, sprinkled with a little chopped tarragon.
