Nourishing for a

Hot " Lunch

Oatmeal and Potato Soup

9 cups water

2 cups rolled oats

5 potatoes, diced

2 ontors, chopped

2 teaspoons fat

1 cup tomatoes

34 teaspoons salt

teaspoons pepper

Heat the water to boiling and sprinkle the oatmeal slowly into the water and boil for 5 minutes. Add the diced potatoes and cools In a double boller for about 1 hour. Brown the onions in the fat and add with the sait. pepper and tomatoes to the soup. Cook for about 10 minutes and

serve.

Wheat Chowder

2 cups diced carrots

1. bint bolling water

cup diced salt pork

4 tablespoons chopped onion.

1 tablespoon flour

1 pint milk

2 cups cooked wheat" Pepper

and salt

1 teaspoon chopped parsley. Cook the carrots in the boiling water until tender. Fry the calt pork until crisp, remove it from the fat, and cook the onions in the fat. Stir in the flour and cook a few minutes longer. Mix all the ingredients in the upper part of a double boller, stir until well blended, and cook for about 10 minute.

Creamed Fish With Vegetables

1 b. fish-cod, hallbug or

salmon.

1 quart milk

2 cups diced potatoes

1 cup diced carrots

1 finely chopped onion

3 tablespoons butter

2 cup our

21 teaspoons salt

1 tablespoon chopped parsley Simmer the fish in a

small quantity of water about лve minutes. Drain and remove the. skin and bones and fake the fish. Cook the potatoes and carrota until tender and drain. Mix the flour with a small quan- tity of of cold. milk, and stir Into the heated milk to which the onions, salt and butter: have been added. Cook until thicken- ed. Add the vegetables and 'the Ash, cook for a few minutes longer, sprinkle a little parsley over the top and serve.

Pineapple Punch

Ingredients.1 small pineappl

tea-cups cold water, 1 tea- cup granulated sugar, 2 large yellow limes, I sweet orange, Iced, or soda water.

Method.-Peel the and grate the pulp. avoiding the core. Grate it on to a plate, SL as to save the Juice, Measure into a Jug. 2 breakfastrups of grated pineapple, also the juice which has gathered on the plate. Measure sugar and water into a small aluminium pan, and dis- solve slowly over gentle heat. Add orange and lime juice. Mix .and strain. Dilute with fced, ar soda water, and float pieces of pineapple on top.

AF Aylesbury Sherbet Ingredients. oz. citric acid, 25 drops oll of lemon, 2 lbs. gra- nulated sugar, 4 tea-cups boiling Water.

Method-Mix well together the

citric acid and oll of lémon (essence of lemon"would do, but double the quantity is necessary). Dissolve the sugar in the boiling water. boll briskly for five minutes, then add the acid, mix- ture. Stir well, bottle and ccrk, Two table-spoons to, a tumbler af water, a level tea-spoon car- bonate of soda. If poured into clean, ary, warm bottles. then

tightly corked and stored in a cool place, this sherbet will keep good for months even in the Low- country.

Savory Chicken Stew One good sized fowl weighing about 4 pounds, 2 slices bacon, 2 cup canned "tomatoes, 1-2 cup canned or fresh mushrooms, 1 cup canned corn, 1 cup canned lima beans, 1-2 cup stoped and minced ripe olives, 1 cup water. 1 tablespoon vinegar. 1-2 tea- spoon sugar, 2 teaspoons salt, 1-4 teaspoon pepper, 2 whole- cloves, pepppercorns.

Disjoint /fowl and cut, larger pieces in two. Cut bacon. In small pieces and try out fat in saucepan. Add pieces of fowl and brown quickly.. Tle cloves and peppercorns in a small piece of cheesecloth and crush slightly. Add with tomatoes, water, vine- gar, salt, pepper and sugar to chicken in saucepan, Cover closely and simmer over a low fire for three. hours. Add vegetable- and mushrooms half an hour before serving.. Remove bag of spices and serve on a hot platter.

Iced Tea

Make an infusion of tea in a warmed pot, using a pint of boil- ing water to a dessertspoonful of tea. Leave for three or four minutes and then strain into. a jug, stirring in milk and sugar to taste. Place the jug in a basin, pack ice round it, and leave for an hour or more before using. A quicker way, though not such a good one, is to place a large piece of ice in a jug, pour the cooled tea over this, and add milk and sugar to taste before using.

Iced Tea With Lemon

Make an infusion of Chiria ten and strain it into a jug, adding thin sugar to taste and some slices of lemon. Pack ice round, the Jug, and strain the tea into tumbiers as

Five good sized carrots" or ten new carrots, 2 medium sized on- lons. 2 tablespoons minced par- sley. 1 cup chopped celery, 1 to 2 cups dried bread crumbs, 2 eggs, 2 tablespoons butter, 1 teaspoon salt. 14 teaspoon. pepper,

Scrape carrots and peel onions. Put through the coarse knife of food chopper. The parsley and celery can be chopped in the food chopper, too, Fit vegetables inta sauce pan and stew with as little water as possible until tender. The water should cook away so there isn't more than one or two the vegetables tablespoons over when done. Add bread crumbs. butter "and eggs unbeaten. Mix well and season with salt and pepper, Form into a ioat, roll in crumbs and dot with bits of but- ter. Bake on a well buttered baking sheet for 20 minutes in' a hot oven. Serve with a rich,

DINNER

Mutton Cutlets a la Sefton Chop some button mushrooms, a little parsley and shallot, and season with cayenne paper, and salt. Simmer gently in a little. butter without allowing it to brown. Then add a good brown sauce, mix all together and let it get cold.

Trim the cullets rather thin....... split each through to the bone, put in a layer of the mixture and press the cutlets fat. Egg and breadcrumb them and fry In butter. Serve with a timato and horseradish sauce.

Cream.

.TEA Cherry Calice.

5ozs. butter, and add 5özs, sugar by degrees. Beat well. Beat up two eggs and add them to the batter and sugar, putting a little flour in first. Then put in Bozs, cherries and 2ozs. sult- anas, Add 9oza, flour mixed with a teaspoonful of baking powder and a pinch of salt. Mix to the right consistency with milk, turn It out into a double-lined tin and bake. When the top is brown enough cover it with a piece of paper to prevent burning.
