SELF-RAISING FLOUR.

LAMB CHOPS WITH RICE

4 lamb chops (shoulder)

4 tbsp. rice

1 onion.

Salt, pepper, sugar

Brown the chops on both sides In a hot frying pan. Season with salt and pepper and arrange in a casserole. On each chop place a tablespoon of uncooked rice and a slice or two onion, and a few strips of green pepper, Season the tomatoes with salt, pepper and a little sugar and pour care- fully over the chops. Add water if necessary to make enough liq- uid to cook the chops. Cover the casserole and make in a moder- ate over for about an hour or un- til the chop are tender and the " rice done.

Put 2 cups of cold cooked-lamb through the meat chopper. Put a layer of minced lamb. Into a casserole, then a layer of cooked spaghetti, add another layer of lamb and top with spaghetti. And

There are savoury custards as well as sweet ones. Here are two or three novel recipes to try out, successfully I am sure, on the family.

Cheese custard is light, but very nourishing. To make it, well beat two eggs in half a pint of milk, add a pinch of salt and pepper, a heaped tablespoonful of grated cheese, and, if you have any, a tablespoonful of cream.

Pour the mixture into a butter- ed basin or jar, and"stand this in a pan of boiling water. Heat gently, stirring continually until the custard thickens. Serve hot or cold.

Vegetable Cream
