These two sweets both and taste delicious, and while not too elaborate to appear on the everyday menu are attractive enough for party fare. For the first stew sufficient apples to a pulp. 4 small crabs; 2 uz. butter: juice of 1 lemon; 2 oz. breadcrumbs; pepper and salt; cayenne to taste: Boll' the 1 tablespoon parsley. crab. Pick the meat out the shell, cut it into small pieces and mix all well together with the bread-" crumbs, parsley and small pieces of the butter. Season, with pep- per, salt and cayenne to taste. Pack into the sheli and squeeze over it the juice of a lemon or add a spoonful of vinegar, cover the top with a layer of breadcrumbs. Put small pieces of butter over it and bake in a moderate oven for 20 minutes.

NOVEL SALAD....

A salad which makes a com- plete dish in itself is as follows Place in a bowl a head of celery amali which has been cut into pieces, then some watercress and roughly cropped skinned-to- matoes. Boll hard as many eggs required, and rub them through a coarse grater so that" they are in flakes. Heap them in the centre of the dish. Stand the the heart of the celery in egg: sprinkle over the latter a tablespoonful of chopped capers, and garnish with strips of boiled beetroot.

An easily prepared and cheap salad dressing can be made by mixing a teaspoonful of made mustard with a teaspoon- ful of castor sugar and a gene- rous pinch of pepper and salt.. add slowly, beating well between each addition, two tablespoons of salad oil, four tablespoons of milk and two of vinegar.

CURRIED EGGS WITH

SPAGHETTI

Curried eggs are always popular, and spaghetti makes a pleasing change from the more ordinary boiled rice,

Six hard-boiled eggs, one ounce of butter, one small onion, one tablespoonful of flour, one pint of milk or stock, salt and three qunces of spaghetti,

Peel and slice, the onion. Melt the butter in a pan, put in the onion, and fry it pale brown. Sprinkle in the curry-powder and flour, and fry for a minute or two, Add the stock or milk, with the seasonings, and stir the sauce over the fire until it boils and thickens, Put in the eggs, either whole or cut in 'halves and let them sim- mer very gently for ten to fifteen minutes.

To cook the spaghetti. ready a pan of fast-boiling salted water, sprinkle in the spaghetti, and let it cook until quite tender. If must not be over-boiled, or it Will become a mash. Drain 1 thoroughly. Place the eggs in the centre of a hot dish, pour the curry sauce over them, and ar- range the spaghetti as a neat bor. der.

Haricot Mutton.

8 Mutton cutlets: 1 pine stock

or gravy: 1 carrot: 1 turnip; 1 onion 3 sticks celery; 1 oz. flour: pepper and salt; 2 oz. dripping. Fry the cutlets to a good brown in dripping. Mix the four smoothly with the stock and boil it for 2 or 3 minutes.Then put in the cut- lets and the vegetables cut in neat pieces. Stew gentiy for hour. Dish the cutlets in a circle with the vegetable round them and strain the gravy over.

Summer Pudding

8 oz. Bread without crust cut in thin slices; 11 lb, fresh stewed frült: 4 to 6 oz. sugar; a little wa- ter. Pour in the hot fruit, Alling the basin quite full Cover the top with one round or slices of bread. Put a weighted plate on top. Turnover carefully when cold. Can be served with custard. Strained Chicken Okra › Frappe Chopped onions; celery; okra tomatoes; chicken broth. Braise some chopped onions, celery and fresh okra in butter, then add to- " matoes and chicken broth and let the mixture boil for an hour and a half. Strain the contents into a stone jar and let it jelly. Serve cold.

b. Cold tongue; 1 oz, buster; 1 oz. flour; pint milk; 1 teaspoon onion juice 1 level dessertspoon- ful chopped parsley; green peas; seasoning. Melt the butter in a saucepan, add the flour and when well blended, stir in the milk and bring to the boll. Boil the sauce gently for a few minutes then add the onion juice and seasoning to taste. Cut the tongue into small slices and add to the sauce. Make It hot and stir in the parsley. Ser- ve the creamed tongue. in a dish surrounded with a border of hot green peas. Sufficient for 4 per-

STUFFED DATES

Various stuffings may be insert- ed in the dates in place of the stone. Fondant, either cooked or uncooked may be used, or marzi- pan, a toasted or devilled almond, a small chocolate, a plece of pre- served ginger, or any other sweet, or even Bavoury filing, according to individual taste. To prepare the dates, split them open leng- thways along one side, and re- move the stone. If the filling to be used is soft roll it between the hands to form an oval shape, and insert this in the cavity of the date. Roll in" eastor sugar, änd place on a tray to dry.

Uncooked Fondant, Sieve into a basin 4 table-spoons icing sugar, add a few drops favouring (gin- ger, cinnamon, peppermint, or le- mon) and enough beaten white of. egg to form a stiff mixture.. Col- our pink, green, or violet, and use as directed. If liked a little strong coffee may be used, which acts both as favouring and co- louring...

Marzipan.--Steve into a basin 1 tablespoon castor, and I table- spoon icing sugar. Add 2 table- spoons ground almonds, and mix all well together. Make a hole in the centre of the dry ingredients and add a few drops almond és- sen, a tes-spoon of orange or lime juice, and enough beaten egg to make all into a atlu mixture. This quantity of marzipan and fond- ant is sufficient for a dozen dates.
