Here is an Apricot Charlotte, which

will enjoy as it is highly flavoured but not too rich:

2 tablespoons plain gelatin

1 cup cold water

2 cups, apricot puree "

1 cup sugar

Julce of one lemon

cup boiling orange juice. egg whites, stiffly beaten Lady fingers

Soak the gelatine in cold water for five minutes and then dissol- ve it in the boiling orange juice. Add the balance of the ingre- dients with the "exception of the egg whites and the lady fingers. Set in the refrigerator to chill and become syrupy. When mix- ture has thickened, add the stitily beaten egg whites and blend thoroughly. Pour into a large, or individual mould which you have lined with halved lady fingers, allowing the rounded side of the cake to line the side of the mold. Chill until Arm and serve with sweetened, flavored whipped cream or a thin, cold custard.

Sieve the flour and salt into a basin. make a well in the centre, put in the yolks of eggs, and beat in the milk gradually, beating. constantly to make & smooth batter. And just a little Warm

BRANDY FOR FLAVOURING Melt the butter and add with the sugar, and also the flavouring and brandy if you mean to in- clude them, and stir in the stiffly beaten whites of eggs just before you are going to cook the waffles.

The waffle frons, which any good ironmonger will supply you with, must be very clean; they must also be very hot and be fore you pour in the batter brush them over with a little melted

butter on both sides.,

"Fill them about two-thirds full with the batter and cook them over fairly sharp heat for two or three minutes on each side.

SOUPS

Celery Soups

Celery soup may be made with write stock. Cut down the white

of half a dozen heads of celery into Little pieces and boil it in two quarts of white stock, with a quarter of a pound of lean' bam and two tablespoonfuls of butter. Simmer gently for a full hour, then strain through a sleve, re- turn the liquor to the pan, and stir in three or four spoonful of cream with great care. If liked, thicken with a little four. Sea- Serve with toasted son to taste. bread,

Stuffed Eggs

Cut four hard-cooked eggs in halves lengthwise and remove the yolks Mash these to & paste and add four small flaked sar- dines, four minced ripe olives, one tablespoon lemon juice, sält and "paprika to suit the indivi- dual taste. Add sufficient boiled dressing to hold the filling toget- her and refill the egg whites. Cut each egg section in haif lengthwise again and serve three of the quarters to each person. Garnish the plates with water- cress and ripe olives.

Tomato Aspic Canapes

2 cups canned tomatoes 1 cup water

i stalk celery

small green pepper

1 tablespoons gelatin

4 hard-cooked eggs. Put tomatoes, and a half cup of the water in a saucepan, add chopped celery, carrots, salon, and the seeded green pepper and spice. Bring to boiling point and simmer for fifteen minutes. Boak gelatin in remaining quarter cup of water Strain the tomato liquid and add lemon juice and gelatin. Stir "until gelatin is melted. Bet gelatin in littlè try dividual molds, making each about one inch deep.. When half congealed make design of nowers or other design from sliced hard- cooked egg whites; then set away to chill thoroughly. Serve, with cheese crackers.

BRAWN FOR BREAKFAST

A silce of brawn lightly smear- ed with mustard and eaten with brown bread and butter "brings variety into the breakfast menu. It is an economiscal dish and not nearly so diffeült to make as many people inggite. Here is an. easy way to prepare it with a pigʻz head and two feet.
