CONTRACTOR'S INDIGNANT REPLY TO COUNSEL
The definition of Ghee was again the subject of con siderable discussion at Central Magistracy yesterday when the case against a Chinese storekeeper, Leung Loy Han of the Yee Sang Loong provision store for selling food not of the nature, substance or quality demanded (the quality demanded being ghee) was resumed before Mr. E. W Hamilton.

Mr. T. S. Whyte Smith, assistant Crown Solicitor ap peared for the prosecution, and Mr. R. H. Cole of Mesars. Geo, K. Hall Brutton and Co.. defended. At the con. clusion of the case the defendant was fined $25.
WITNESS RECALLED
Acting Sergeant Major Banta Singh, who had given evidence at the previous hearing was recalled. In reply to his Worship he said that if he ordered a pound of ghee for 70 cents, he expected the shop to give him pure ghee clarißed butter.
His Worship: You expect to get clarified butter when you ask for
ghee? Yes.
But I think you have said there was no real ghee in Hongkong?- Not the best quality.
That is what I am trying to get

he could not get anything out of

Witness (indignantly): I never It is mix and I never intend to. a great sin. It is very bad.
But supposing you were selling the mixture, what would be the price?-About 53 cents.

Cow butter?-It is butalo or goat's milk The milk is stirred and then, beaten into butter, which is then bolled, and the ghee will come out,
Is it a well-known fact in the Colony that the ghee 19 mixed? No. The average person does not know that the ghee is mixed.
If you went into a shop and was offered ghee at 70 cents a pound, You what would you think it was being offered?I will never take it. Be- cause it is too cheap.

The Defence
After briefly outlining his case for the defence, Mr. Cole put, his cllent into the witness, box.

Why not?Because it is furious to health. Proper ghee, from a medical point of view is very digestible, but vegetable ghee is very indigestible.
Have you experience here; ease of indigestion as you thought
M.D.S. and half vegetable ghee. The reason why he made the mix- ture was that his Indian customers wanted cheaper ghee. When cus- to his shop and tomers came bought ghee, he usually asked what kind of ghee they them wanted. He had been in this line of business for 37 years, and he learnt that ghee was made from cow or buffalo milk.
Cross-examined by Mr. Whyte- that the Smith, witness said reason why Sanitary Inspector Lamprell was not asked what kind of ghee he wanted when he went into his shop, was that he was at- tended by the accountant.
After both solicitors had ad- dressed the Court, His Worship Imposed a fine of $25.

In Poona there were frequent examinations by the medical authorities, and the penalty imposed was so heavy, that the method of adulteration was practically non-existent.
Mr. Cole: If you paid 70, cents for a pound of ghee what would you expect to get? I wouldn't, ex- pect to get ghee at all.
Is ghee only eaten by the Indian community as far as this, colony 19 concerned?-No necessarily. People who have been to India may eat ghee..
Can you tell the diference of the pure ghee and the vegetable pro- duct by taste? Yes I can.
Mr. Abbas Khan, a Government contractor to the Prison Depart- ment, next gave evidence. In re- ply to Mr. Whyte-Smith, he said he dealt extensively in ghee.
He also dealt in vegetable ghee since 1926.
