2 cups Simpson's flour, 4 table- spoons sugar 4 tablespoons but- ter, 2 eggs cup milk. Mix and sift dry ingredients, cut in short- well beaten „ eggs. ening, add Mix well and place in a greased and 'foured baking pan. Cream the butter all soft. add the yolks, cheese, Worcester sauce and Js- tard. Work into the butter 1.11 smooth, add pepper and salt to taste. Lay a slice of tomato on each sandwich. Put one teaspoon of the egg mixture into each of whites or force it through 2. for- cing-bag. Place the cggs on the sandwiches and garnish with a Jittle cress. Sumcient or & per- sons.

2 tablespoons butter
2 cups gingerbread crumbs
1 cup sugar
teaspoon cinnamon
teaspoon nutmeg
1 teaspoon lemon rind Juice of one lemon
1 cup water
Sliced apples
Melt the butter and add the crumbs. Mix the sugar, spice and lemon rind. Alternate layers of crumbs and apples, sprinkling each layer with the sugar and spice mixture until the dish is full. Sprinkle with lemon juice and water. Cover and bake in a moderate oven 40 minutes. Uncover and let brown quickly Serve with cream.
