Cut off stalk and remove outer branches from a firm, white cauli- flower. Drop it into quarts of boiling water. with a tablespoon- ful of salt, and boil 35 minutes, Drain. Divide, cauliflower in smal bouquets. Season with half a tea- spoonful of salt and 2 saltspoon- fuls of pepper. Lightly rollin flour, dip in beaten egg and then lightly roll in grated Parmesan cheese. Place in a frying basket and fry in boiling fat 8 minutes or until a golden colour. Drain

on a cloth and serve.

HAMBURG LOAF

Prepare the meat as for Ham- burg steak. Turn into 3 "square pan which has been oiled and thickly sprinkled with bread- crumbs, Lay slices of bacon on top so that the fat will run through.
